I love this when the fresh asparagus is in season. Sometimes I throw in some onion wedges or a red capsicum for colour with the asparagus. Prep time includes marinating time.

Steps:
- Trim the meat, and slice across the grain evenly into long, thin strips.
- Combine the soy, sherry, ginger, sesame oil, garlic and chilli; add the meat stirring to coat and leave to marinate for 30 minutes.
- Drain the meat, reserving the marinade.
- Heat 20ml of oil in a wok or heavy-based frying pan, add the asparagus and stir-fry for 2 minutes.
- Remove from the wok.
- Heat the remaining oil in the wok, cook the meat quickly in small batches over high heat until browned but not cooked through.
- Remove and drain on absorbent paper.
- Blend the cornstarch with the reserved marinade until smooth.
- Return asparagus and meat to wok with marinade mixture.
- Stir-fry over high heat until meat is cooked through and sauce has thickened.
- Serve at once.
SLOW-COOKER BEEF CURRY

- Toss the beef and potatoes with the curry powder, 1 teaspoon cumin, 1 tablespoon ginger, the garlic, 1 teaspoon salt and a few grinds of pepper in a 6-quart slow cooker. Crumble 1/2 slice of naan into small pieces over the beef and potatoes, then pour in the tomatoes. Cover and cook on low, 7 hours.
- Uncover and skim off any fat from the top of the mixture. Stir well to combine, then let stand 10 minutes. Meanwhile, combine the cilantro, pickled jalapenos and brine, 1/4 cup water and the remaining 1/4 teaspoon cumin and 1 tablespoon ginger in a food processor. Pulse until combined; season with salt and pepper.
- Stir 3 tablespoons of the cilantro puree into the slow cooker; season with salt and pepper. Reserve 2 cups beef curry for Beef and Vegetable Handpies. Serve the remaining curry with the naan; top with the remaining cilantro puree.

- In a large wok or skillet, heat 1/2 cup coconut milk over medium-high, stirring, until shiny and thick, 2 minutes. Add curry paste and cook, stirring, until fragrant, 1 minute. Add remaining coconut milk, broth, fish sauce, and brown sugar and bring to a simmer. Add bell pepper and cook until softened, 2 minutes. Add asparagus and cook until crisp-tender, 3 minutes. Add steak and cook, stirring, until just cooked through, 2 minutes. Serve over noodles with lime wedges and cilantro.

- Chop asparagus, carrots and potato into 1/2 inch pieces.
- Take a non-stick pan and put it on medium flame.
- Add oil and other seasonings like mustard seeds and jeera and curry leaves.
- Now add carrots and potatoes first.
- Add turmeric and mix them all properly and close the lid.
- After few minutes stir by adding salt and put the lid on again for a minute.
- Add chopped asparagus and stir them all and close the lid to allow them cook.
- After a few minutes check if all ingredients are cooked.
- Then reduce stove to low and add roasted chana dal powder and dry coconut powder and chili powder.
- Stir them all and close lid for a few minutes and switch off the stove.
- Garnish with chopped coriander.
- Goes well with rice, Chapathi, Dosa.
- Also can use this in sandwiches and is very healthy.

- Stir the beef with the fish sauce, lime zest, peppercorns and garlic, then set aside. Heat half the oil in a large non-stick wok and pile in the shallot, asparagus, sugar snaps and broccoli. Stir-fry over a high heat for 5 mins. (There are a lot of vegetables, so you can speed up the process by adding a dash of water to the wok every now and then to steam them at the same time.)
