- Preheat your oven to 350°F.
- Use 1 tablespoon of the melted butter to brush the inside of 4 9 1/2 oz ramekins. If you're making a family-style version, use a 9x13" baking dish instead of the ramekins and grease it the same way.
- Fill each ramekin with 1 cup of blackberries. For the family-stye version, dump all of the berries into your greased baking dish. Place the baking dish(es) on a quarter sheet pan.

- Pour the melted butter into the bottom of an 8x8-inch square baking pan. Mix the sugar, self-rising flour, and milk together until moistened, and pour the mixture over the butter. Do not stir. Spread blackberries evenly over the batter.
- Bake in the preheated oven until the top is browned and the cobbler is bubbling, about 45 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Once oven temperature is reached melt butter in a 9x13 inch baking pan.
- In a medium bowl stir together the flour, sugar and milk; batter will be slightly lumpy. Pour mixture on top of melted butter in baking pan. Do not mix butter and mixture together.

- 1. For the berry mixture: Place the berries, sugar, lemon zest, lemon juice, cinnamon, and cornstarch in a 9x9" baking dish. Stir to coat the berries evenly with the sugar; taste for sweetness and adjust. Set aside for 30 minutes.
- 2. For the topping: In a medium size bowl, whisk together 3 Tbsp. sugar, flour, baking powder, and salt.
- 3. Cut the butter in with a pastry blender or fork until the mixture resembles coarse crumbs.
- 4. With a wooden spoon, stir in the egg and milk until the batter is just moistened.
- 5. In large spoonfuls, drop the batter mixture over the berries. Bake in a preheated 350º for 30 minutes or until the berries are bubbly and the topping is nicely browned.
- 6. Serve warm with your choice of vanilla ice cream or whipped cream.

- In a large saucepan, combine sugar and blackberries. Bring to a boil.
- In a small bowl, mix cornstarch and 2 Tbsp water. Add to saucepan. Simmer for 5 minutes or until thick. Add orange zest and almond extract, stir in, and remove from heat.
- Pour blackberry filling into your baking dish.
- Preheat oven to 425 degrees.
- Dust surface with flour and roll out pie crusts until about 10 x 14 inches. Cut one of your pie crusts lengthwise into 4 strips, 1 3/4 inches wide. Cut second pie crust widthwise into 6 strips, 1 3/4 inches wide.
- Place 4 long pie crust strips on sheet pan lengthwise, about 1/2 inch apart.
- Fold the first and third strip back, and place a short strip across. Fold first and third strips back into place. Repeat with the second and fourth long strip, and continue until you've made a lattice.
- Put sheet pan in freezer for 10 minutes until crust hardens slightly.
- Place lattice on blackberry filling. In a small bowl, beat egg and 1 Tbsp water together. Use your basting brush to apply egg wash to crust.
- Bake cobbler at 425 degrees for about 30 minutes, until crust is golden brown. Keep an eye on your cobbler, some crusts may brown quicker than others.

- In a medium pot, combine blackberries, 1 cup sugar, and water. Bring to a boil, reduce heat to a simmer, and cook for 5 to 10 minutes until reduced and thickened, stirring occasionally. Remove from heat.
