1 tablespoon salt
1 tablespoon bay leaf powder
2 tablespoons white pepper
2 tablespoons black pepper
1 teaspoon nutmeg
1 teaspoon cinnamon
1 tablespoon allspice
1 tablespoon mace
1 tablespoon clove
1 tablespoon clove
1 1/4 teaspoons cinnamon
1 tablespoon salt
1 tablespoon bay leaf powder
1 tablespoon allspice
2 tablespoons ground black pepper
1 teaspoon nutmeg
1 teaspoon mace
1 teaspoon celery seed
2 tablespoons white pepper

Steps:

  • Directions for two recipe mixes: In a small bowl mix together all spices from either recipe 1 or recipe 2.
  • Store in a glass container, covered tightly in a cool place.
  • (I store all my spices in the fridge, as the flavor seems to last longer).

The Beau Monde Seasoning that I've used has a very basic yet tasty flavor. The substitution recipes I've seen so far online and here have called for cinnamon, cloves and other things that I know I don't taste from the Spice Islands jar. As I kept looking I came upon this one that sounded like it might be the one. I haven't tried it yet but thought someone else might get some use out of it. It calls for sea salt AND seasoned salt. I probably would adjust those so it wouldn't turn out too salty. Also I might try using celery salt instead of the combination of seeds and salt. This recipe only makes 1 tsp. worth of mix but it's a good starting point.

PLAN/PURCHASE
2 large bay leaves, finely ground
1 Tbsp salt, kosher variety, fine grind
2 tsp black pepper, freshly ground
2 tsp dehydrated onions, finely ground, or 1 teaspoon onion powder
1 tsp white pepper, freshly ground
1 tsp celery seed, finely ground
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cloves
1 tsp ground mace

Steps:

  • 1. PREP/PREPARE
  • 2. If you have a spice, or coffee grinder, it will help you finely grind the spices.
  • 3. Gather your ingredients (mise en place).
  • 4. Combine all the ingredients, in a spice blender, and mix until completely ground, then place into a airtight container until needed.
  • 5. PLATE/PRESENT
  • 6. In addition to what I previously mentioned, I use this spice to kick up potato salads, crab dips; as well as my killer yogurt dill veggie dip. Or, maybe some nice baked chicken thighs in a creamy mushroom sauce. Enjoy

  • Sieve the bay leaf and celery seed in to a bowl.

  • Will keep for some time especially if not exposed to air.

There are so many strange concoctions out there for Beau Monde Seasoning that I was just baffled when I needed it and couldn't buy it (or make it from those weird recipes). After some research - this is the recipe I came up with. It *IS* the closest recipe to Beau Monde Seasoning I can find anywhere on the net (primarily because there IS no close recipe anywhere on the net)?!?!? This is so simple I don't know why everyone is getting it wrong. Beau Monde Seasoning contains: Salt, dextrose, onion, celery seed, and silicon dioxide. Salt is self explanatory - dextrose is the The dextrorotatory form of glucose which is derived from starch. (Effectively, it's a type of sugar..slightly heavier than meat which can be absorbed in to the meat tissue. Onion and celery seed are the primary flavors we are trying to accomplish here... the silicon dioxide is used as a flow agent and/or moisture absorbent...so toss a few grains of rice in your bottle! For the Dextrose (unless you wish to purchase powdered dextrose, which is available in some health food/sports stores) we will use either powdered sugar or caster sugar. The amount I'll list is simply to my taste -- certainly feel free to start with less and adjust it to suit your own tastes. We'll use Onion powder and Celery salt to accomplish 3 of the 4 major ingredients.

This is my Great-Grandmother's recipe. She always served it on wheat crackers with tomato juice cocktail. Beau Monde seasoning can be hard to find in certain grocery stores but there are some recipes on this site to make your own. The cheese is best if allowed to sit in refrigerator overnight,hence the 24 hour cooking time.

1 tablespoon water
2 1/2 teaspoons spice island beau monde seasoning
1/4 teaspoon thyme
1/4 teaspoon marjoram
1/4 teaspoon savory
1 teaspoon parsley

Steps:

  • In medium mixing bowl, blend together cheese, water and Beau monde.
  • In seperate small bowl, crush herbs together with your hands.
  • Mix herbs into cheese, making sure mixture is well combined.
  • Refrigerte overnight.
  • Serve with wheat crackers or celery.
