Mom's Favorite Baked Mac and Cheese image

This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

2 tablespoons butter
¼ cup finely chopped onion
2 tablespoons all-purpose flour
2 cups milk
¾ teaspoon salt
½ teaspoon dry mustard
¼ teaspoon ground black pepper
1 (8 ounce) package elbow macaroni
2 cups shredded sharp Cheddar cheese
1 (8 ounce) package processed American cheese, cut into strips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
  • Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
  • Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

My kids say this is better than 'the blues' and gobble it up, even when I toss in a handful of cooked veggies like broccoli, peas, carrots, etc.... Make it a one dish meal with some tuna, cooked ham, etc... It is just as easy as the 'blue box' at least I think so and it is much healthier!

2 tablespoons butter
2 tablespoons flour
1/4 teaspoon salt
1 dash pepper
1/2 teaspoon mustard powder
1 cup milk
1 cup cheddar cheese, shredded
2 cups macaroni, cooked
1 pinch cayenne (optional)

Steps:

  • Make a roux by melting butter in pan and adding flour. Stir constantly and cook until it is the color of caramel candy. It burns easily so stir stir stir!
  • Slowly and carefully add milk while stirring.
  • When milk starts to steam add cheese and seasonings and stir until melted and well combined.
  • Pour over cooked macaroni noodles and serve.

This is my Dad's recipe and is always a hit at parties. It is a great accompaniment to stuffed green peppers. Use the plain stewed tomatoes for the best taste.

1 pound macaroni
1 (11 ounce) can condensed cream of Cheddar cheese soup
1 ½ cups milk
14 ounces extra sharp white Cheddar cheese, shredded, divided
1 (14.5 ounce) can stewed tomatoes
¼ cup dry bread crumbs

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
  • In a large saucepan over low heat, warm soup and add milk; stir. Add 1/4 of cheese to soup and remove mixture from heat when cheese is melted.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Add macaroni and tomatoes to soup; stir and pour into a 9x13 inch baking dish. Cover with bread crumbs and remaining cheese.
  • Bake in preheated oven for 25 to 40 minutes or until the cheese is a golden brown; serve.

2 cups premade mac and cheese, cooled in the refrigerator for at least an hour, until it is easy to handle.
1 cup flour
2 large eggs, lightly beaten
1 cup or more Panko bread crumbs
Salt and Pepper to taste
Oil for deep frying (Canola or vegetable)

Steps:

  • Using a small ice cream scoop, scoop out portions of the mac and cheese from the casserole you made earlier. Roll them into bite-sized balls, about 1-1/2 inches in diameter, no larger than a golf ball. Dredge the balls in flour seasoned with salt and pepper. Shake or tap the excess flour off the balls. Dip the balls into the egg then into the Panko. Place balls on parchment-lined sheet pan and refrigerate while making your dipping sauce. Refrigeration will set the crust. About 20 minutes before serving, heat the oil in a sauce pan or deep fryer until it reaches 375 degrees F. CAREFULLY drop the balls into the hot oil and fry until golden brown. Do not crowd the pan/fryer or balls will brown unevenly. Drain on paper towels. Serve immediately with dipping sauce.

I like using fusilli for this recipe as it holds so much of the sauce in the noodle, but, you can use other pasta types if you like. I have also used green onions in lieu of regular onions with great results.

1/2 lb fusilli
6 tablespoons butter
3 tablespoons all-purpose flour
1 tablespoon mustard powder
3 cups milk
1/2 cup onion, finely diced
1 bay leaf
1/2 teaspoon sweet paprika
1 large egg
12 ounces old cheddar cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon salt
pepper
1 cup panko breadcrumbs

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook pasta al dente.
  • While the pasta cooks, in a separate pot melt 3 tbsp butter.
  • Whisk in flour and mustard, keep it moving for 5 minutes, ensuring there are no lumps.
  • Stir in milk, onion, bay leaf and paprika. Simmer for 10 minutes and remove bay leaf.
  • Temper in the egg (adding some hot liquid to it before mixing it in).
  • Stir in ¾ of the cheese. Season with salt, pepper and garlic powder.
  • Fold in pasta and pour into a buttered 2 quart casserole dish. Top with remaining cheese.
  • Melt remaining butter in a sauté pan and toss in bread crumbs.
  • Top macaroni with bread crumbs and bake for 30 minutes.
  • Remove from oven and let rest 5 minutes before serving.

  • Bring a large stockpot of salted water to a boil. Add cauliflower and boil for 5 minutes or until easily pierced with a knife. Use a slotted spoon to remove the cauliflower and transfer to a medium bowl. Add the dried pasta to the same boiling salted water and boil according to the package direction (should be around 10ish minutes). Drain and transfer the pasta to a large mixing bowl.
  • Meanwhile, heat olive oil in a large skillet over medium. Add roughly chopped poblano peppers, onions, and garlic and saute for 5 minutes or until starting to soften. Add a dash of salt, smoked paprika, and cumin and saute for another 30 seconds. Remove from heat and transfer to a high speed blender. Set aside and let cool for at least 10 minutes.
  • Once cooled, add the boiled cauliflower, cilantro and 1 cup of milk and blend on high speed until smooth.
  • Wipe clean the large skillet used for the poblano mixture and melt 2 Tbsp butter in it over medium heat. Add flour and whisk until a thick paste has formed. Slowly pour 1/4 cup milk into the skillet to create a thick sauce. Slowly pour the poblano blender mixture and remaining 1/4 cup milk into the sauce. Turn the heat up to medium-high and, stirring contantly, mix until bubbles start to form. Pour in the cheddar cheese and stir until completely melted. Remove from heat.
