Awesome green beans! Once you take a bite, it will be the only thing you want to eat off the whole plate! Thank you Lord for a great recipe.

1 tablespoon olive oil
2 small shallots, chopped
2 small garlic cloves, chopped
½ cup chopped kale
2 tablespoons condensed cream of chicken soup
1 tablespoon sriracha sauce
1 tablespoon cream cheese
1 tablespoon sour cream
1 (15 ounce) can cut green beans, drained
ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Fry shallot and garlic in hot oil until golden brown, 2 to 3 minutes; add kale, cream of chicken soup, sriracha sauce, cream cheese, and sour cream to the skillet. Cook and stir the mixture until the cream cheese melts and the liquid is even in color, about 5 minutes.
  • Stir green beans into the mixture to coat, season with black pepper, reduce heat to medium-low, and simmer until the sauce thickens slightly, 5 to 7 minutes.

A spicy recipe based on a variety of beans. Somewhat Mexican in style. Note: 1 day preparation only if you need to soak dried beans overnight.

50 g dried borlotti beans or 150 g pre-cooked borlotti beans
50 g dried cannellini beans or 150 g pre-cooked cannellini beans
150 g sweet corn (kernels)
250 g tomato sauce (salsa pronta)
1 teaspoon cajun spices
100 g chorizo sausage
2 tablespoons Amaretto

Steps:

  • If using dried beans, follow the instructions for cooking (generally: rinse well, soak overnight then boil for 40 minutes). I like to leave them slightly undercooked so that there's some bite.
  • Chop the chorizo sausage into small chunks.
  • Mix the cooked beans, sweet corn, tomato sauce, cajun spices and chorizo, and cook in a pan for 5 minutes to heat it thoroughly and mix in the spices.
  • Remove from the flame and add the amaretto, and mix together.
  • You can serve in tortilla pancakes, as a side dish, as a dip or in sandwiches. Keeps well in fridge and can be frozen. You can try other bean varieties - I used black beans, black-eye beans, kidney beans as well as lentils.

  • Heat a Dutch oven over medium-low heat add the salt pork, saute stirring often until the fat begins to render. Add the onion to the pot and saute for a few minutes or until soft, then add the pork, cook until the pork is no longer pink.
  • Step 2If using the oven method, (see cooking methods in making of) heat the oven to 325°F. Drain the beans from the soaking liquid and add to the pot along with enough water to cover by 2 inches. Stir in the spices; cover and place in the oven for 3 hours; uncover; add additional water if needed, and cook another hour or until thick and the beans are tender. Taste and adjust for salt and pepper. Add cayenne if you want additional heat.

  • After picking over and rinsing the black beans, add them to the pot of your pressure cooker. (You can also soak them overnight or 6-8 hours earlier in the day. See step 4)
  • Add 7 cups water (to about 2 " over the beans) or a combination of water and vegetable stock, chopped onion, the crushed garlic, and bay leaves.
  • Cover and set your pressure cooker on high for 25-30 minutes. Let the beans sit after the timer goes off for about 10-15 minutes and then release the rest of the pressure. (Note: if you soak them, cook for 20 minutes)
  • If you prefer an even quicker method, soak your beans overnight, 6-8 hours, or quick soak and then add to your pressure cooker. They will cook in about 20 minutes if you do this. (See step 5 for the quick soak method.)
