Homemade Baked Beans with Bacon (Southern) image

(Recipe video above) Southern baked beans in a thick savoury sauce with a touch of sweet and hint of tang. Loaded with BACON! Serve as a side, or have it for breakfast with bacon and eggs. It even makes a hearty meal itself - great for slopping up with bread!

1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

2/3 cup finely chopped celery
1/2 cup finely chopped green pepper

2 cans (14-1/2 ounces each) diced tomatoes, undrained
8 cups frozen lima beans (about 42 ounces), thawed

Steps:

  • Preheat oven to 325°. In a 6-qt. stockpot, cook bacon, onion, celery and green pepper over medium heat until bacon is crisp and vegetables are tender. Add garlic; cook 1 minute longer. Stir in flour, sugar, salt and pepper. Add tomatoes. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. 8 slices bacon, chopped
1 medium onion, chopped
3/4 cup ketchup
3/4 cup tomato puree
1/2 cup firmly packed dark brown sugar
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce
Salt and pepper to taste
1/4 teaspoon cayenne pepper
2 twenty-eight ounce cans red beans, drained and rinsed

Steps:

  • Preheat the oven to 325 degrees F.
  • Put a heavy-bottomed pot (with a lid) over medium-high heat. Add the bacon and cook, stirring often, until the fat renders and bacon begins to crisp, about 6-8 minutes. Add the onion and cook until softened, about 5 minutes more. Stir in the ketchup, tomato puree, brown sugar, vinegar, Worcestershire, salt, pepper, and cayenne and mix well. Bring to a simmer and cook for 5 minutes. Stir in the beans until well coated, cover, and bake in the oven for 1 hour. Remove the lid and continue baking until sauce thickens and the beans begin to brown, about 15 minutes more. Remove from the oven and allow to cool at least 15 minutes before serving.
  • Serve warm or at room temperature.

4 stick of thick cut bacon, cut into 1-inch pieces
4 large bone-in, skin-on chicken thighs (can use up to 6 smaller thighs)
2 medium onions, chopped (about 1 1/2 cups)
1 tbsp finely chopped fresh rosemary (optional)
1 14.5 oz can stewed tomatoes
2 15.5 oz cans of small white beans, drained and rinsed

Steps:

  • Preheat oven to 350º F.
  • Cook bacon in a large, heavy ovenproof skillet over medium heat until crisp. Transfer to paper towels to drain. Keep fat in the skillet.
  • Pat chicken thighs dry and season with salt and pepper. Brown chicken, skin side down, in bacon drippings over med-high heat, turning once, about 4 minutes a side. Transfer to paper towels to drain.
  • Reserve 3 tablespoons of fat in the skillet and reduce heat to moderate. Add onions, season with salt and cook, stirring to scrape up any brown bits. Deglaze with a bit of white wine to get up all the bits. Cook until golden brown, about 8-10 minutes. Add the chopped rosemary and stir to combine.
  • Stir in the tomatoes and juice to the onions and simmer for a few minutes, breaking up the tomatoes with the spoon. Stir in the bacon and beans and bring back to a simmer. Season with salt and pepper.
  • Nestle the chicken, skin side up, into the beans. Bake, uncovered, until chicken is cooked through, about 30-40 minutes. Let rest 5-10 minutes before serving.

1 cup low-sodium chicken broth
2 16 ounce - 32 ounces total cans cannellini beans, drained and rinsed
2 tablespoons minced fresh parsley leaves

Steps:

  • Heat olive oil in a medium skillet over medium heat.
  • Add the sage and sliced garlic. Shake the pan so the garlic doesn't stick, but don't stir it because the garlic might clump.
  • Reduce the heat to medium-low and cook 3-4 minutes or until the garlic turns very light gold and the sage darkens a bit.
  • Add the tomatoes and salt. Simmer, stirring often, until the tomatoes are shiny and their juices have evaporated; 8-10 minutes.
  • Add the pepper, sugar and chicken broth, stirring often, and bring the broth to a boil.
  • Reduce heat to low, add the beans, simmer (stirring often) until the liquid has evaporated, 18-20 minutes.

Steps:

Steps:

  • Preheat the oven to 350 degrees F. Coat a 2 quart baking dish with cooking spray.
