⅓ pound trimmed fresh green beans
5 tablespoons smooth peanut butter
1 teaspoon brown sugar
½ teaspoon soy sauce
⅓ cup chopped peanuts
1 teaspoon miso paste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the green beans and cook uncovered until tender, about 3 minutes. Drain in a colander and immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the green beans are cold, drain well and cut into 2-inch pieces.
  • While the green beans are cooking, stir together the peanut butter, sugar, soy sauce, peanuts, and miso paste in a mixing bowl. Once the green beans have been cut, stir into the peanut sauce and serve.

Healthy Peanut Butter Bars for a treat anytime! Made with peanut butter, almond flour, chocolate chips, a hint of salt, vanilla and sweetened with maple syrup, this healthy no bake peanut butter snack is a treat to have on hand when cravings strike! This easy to make recipe is vegetarian, vegan and gluten free. This recipe is loosely adapted from Rachel Conner's Book Bakerita; 100+ No-Fuss Gluten-Free, Dairy-Free, and Refined Sugar-Free Recipes for the Modern Baker.

1 C (255g) Natural Peanut Butter (crunchy or creamy)
1/4 C (85g) Pure Maple Syrup
1 tsp Vanilla Extract
1 1/4 C (125g) Almond Flour (blanched, I use Bob's Red Mill. See note*)
1/4 C (25g) Mini Chocolate Chips (plus more for sprinkling)
1/4 tsp Fine Sea Salt
4 oz (120g) Bittersweet Chocolate (chopped small, I like 70% chocoalte, or use chocolate chips)
2 Tbs Natural Peanut Butter (creamy)
1/2 tsp Flakey Sea Salt (optional)

Steps:

  • Line a 9x5 inch loaf pan with parchment paper and grease the paper lightly with coconut oil. Set aside.In a medium bowl, mix the nut butter, maple syrup and vanilla until smooth. Stir in the almond flour, chocolate chips and sea salt and mix until the ingredients come together. Using your hands, press the dough into the prepared pan in an even layer.
  • In a microwave safe bowl, microwave the chocolate and peanut butter for 30 seconds. Stir. Microwave again for 30 seconds and stir until the chocolate is completely melted. The chocolate should be soft, smooth and shiny. Melt for a few more seconds in the microwave if needed. Pour and spread the chocolate over the dough into an even layer. Sprinkle with mini chocolate chips if desired.
  • Rest in the refrigerator for at least two hours, or until firm. Slice into 18 pieces or as desired. Sprinkle with flakey sea salt if desired.
  • Refrigerate in a lidded container for up to two weeks or in the freezer snugly wrapped in parchment and stored in a lidded container or freezer bag for up to three months.

½ cup organic soybeans (unsoaked)
2 tablespoons grapeseed oil or canola oil
1/8 teaspoon salt or more to taste
1/4 cup water or more to adjust to your preferred texture

Steps:

  • Preheat oven to 350 ℉. Place soybeans in a colander and rinse them under cold water. Transfer the rinsed soybeans onto paper towel and pat dry briefly.
  • Place the soybeans onto a baking sheet. Add 1 teaspoon of oil and mix with soybeans. Let the soybeans get coated evenly. Roast in oven on the middle rack for 20 minutes until the soybeans are golden brown.
  • Remove the baking sheet from oven and let the soybeans cool at room temperature for 5 minutes.
  • Food Processor Method: Transfer the roasted soybeans into a food processor and briefly chop them to break the soybeans into smaller pieces. Transfer the soybeans into a container and add water. Let it stand at room temperature for at least 30 minutes. Transfer the mixture back into the food processor and add the remaining ingredients. Blend until smooth.
  • High-Speed Blender Method: transfer the roasted soybeans and the remaining ingredients into the blender. Blend until smooth.

1/4 cup + 2 tbsp cocoa powder
1 cup softened almond butter OR allergy-friendly sub
1/2 cup + 3 tbsp pure maple syrup,
loosely packed 1/2 cup rolled oats, (or 1/3 cup almond flour or flour of choice)
1 1/2 tsp baking soda
1/8 tsp salt

Steps:

  • Preheat oven to 325 F. Line an 8-inch pan with parchment paper or grease well, and set aside. Process the oats in a food processor or blender until very fine, then stir all ingredients together until smooth. (If you use a very dry almond butter, you may need to add 2 tbsp milk of choice for a thinner batter.) Transfer the batter to the prepared pan and smooth out with a spatula or another sheet of parchment. It will look thin, but the batter will rise in the oven. If desired, press some chocolate chips into the top. Bake 15 minutes on the center rack - they should look underdone when you take them out. Let them sit at least a 1/2 hour if you want them extra gooey, or overnight for the perfect firm-yet-soft brownies.   • Preheat the oven to 350F (180C). Toast the cashews for 8-10 minutes until golden and toasty. Pop in the freezer for about 10 minutes to cool. There's no need to toast Baruka nuts as they are already toasted.
  • In a large (I use a 12 C) food processor fitted with an S blade, add the Baru and cashew nuts. Turn the processor on and carefully monitor the progress of the nuts, stopping to scrape the bowl as needed and/or stop to allow the machine and/or nuts to cool while processing. Here is the progression and times it took me to process the nuts:Minutes 1-9 with no Maple or Honey or Oil Added: 1.5 Minutes - nuts are crumbly and will stick to the inside of the bowl. 4.5 Minutes - nuts are changing, becoming chunky, yet still crumbly. 6 Minutes - ball of nut "butter" forms yet it's crumbly.7 Minutes - nuts are still grainy and crumbly.8-9 Minutes - Creamy smooth nut butter forms. Add salt if desired, process a few seconds, and It's ready to use. If you like a little sweetness and a whipped texture, press on!
  • Adding honey or maple syrup seizes the fats in the nuts, making the once creamy butter crumbly and chunky again. But processing them for an extended period of time creates a whipped, smooth and creamy butter. Lots of patience, and scraping the bowl down is needed here. You'll notice steam coming from the processor out of the shoot. This is from the nuts heating up (friction) while processing. This is fine, but keep an eye on your food processor so it doesn't over heat. If needed, stop and give it a rest if concerned. Minutes 9-26: add the maple or honey, oil and salt (if not already added) and begin processing again. Continue processing up to 26 minutes, stopping to scrape down the bowl as needed until smooth, whipped and creamy.
  • Transfer the nut butter to a lidded storage container. It can be left out at room temperature if using it up soonish (I'm thinking within a week), but I store mine in the refrigerator to get a little more time out of it. To Refrigerate: I've refrigerated homemade nut butter for up to one month with good results. I'm thinking it could last longer, but haven't tested it. If any off odors, mold emerges, or the nut butter tastes bitter (rancid), toss it out. To soften nut butter, you can allow it to set at room temperature, or microwave it for about 30 seconds at a time, stirring in between, until desired softness.To Freeze: Store nut butter for up to four months in the freezer. Thaw in the fridge overnight.
