BLACK BEAN BURGERS WITH SWEET POTATO
Kids love help making this by mashing the mixture and forming patties. Serve the burgers on buns with guacamole or condiments of your choosing. Can be frozen for up to 6 months.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Prepare a baking sheet with cooking spray.
- Bake sweet potato in the preheated oven until cooked through and soft in the center, 40 to 45 minutes. Let potato cool completely.
- Peel the potato and mash flesh in a large bowl with black beans. Mix egg, green onions, and garlic into the potato mixture. Add bread crumbs and mix until the mixture sticks together; season with jalapeno pepper, salt, and black pepper. Roll the mixture into 24 small balls and flatten into 2 1/2-inch patties.
- Arrange patties onto prepared baking sheet. Brush each patty with olive oil.
- Bake patties in preheated oven until browned on top, 10 to 12 minutes. Turn patties with a thin spatula, brush again with olive oil, and continue baking until slightly crisp along the edges, 2 to 3 minutes more. Serve on buns.

BEAN-KALE BURGERS WITH SWEET POTATO WEDGES
These burgers are a serious source of fiber and protein, compliments of the English muffins and beans.

Steps:
- Place a baking sheet on the bottom rack of the oven and preheat to 425 degrees F.
- Combine the kale and beans in a medium bowl and mash until the beans almost form a paste. Add the cheese, peanuts, 2 tablespoons of the cornmeal, 1/2 teaspoon salt, some pepper and the egg white. Form into four patties about 1/2-inch thick. Refrigerate for at least 20 minutes. (Can be made ahead and refrigerated overnight.)
- Toss the sweet potatoes with 1 tablespoon of the oil and the curry powder. Arrange in a single layer on the preheated baking sheet and bake until soft and golden in some spots, tossing about halfway through, 18 to 20 minutes.
- Meanwhile, heat the remaining 1 1/2 tablespoons oil in a large ovenproof nonstick skillet over medium heat. Put the remaining 3 tablespoons cornmeal onto a plate. Dredge both sides of the burgers in the cornmeal. Cook until golden brown, 3 to 4 minutes per side. Transfer the skillet to the oven and bake until the burgers reach an internal temperature of 165 degrees F, about 5 minutes.
- Spread each burger with 1/2 tablespoon of the mayonnaise. Build the burgers on the English muffins with lettuce, tomatoes and onions if desired. Divide among four dinner plates along with the sweet potatoes. Divide the yogurt and peaches among four small bowls and serve on the side.

- Preheat oven to 400 degrees F (204 C) and cut sweet potatoes in half. Rub with olive oil and place face down on a foil-lined baking sheet. Bake sweet potatoes until soft and tender to the touch - about 30 minutes - set aside. Reduce oven heat to 375 degrees F (190 C).
- Add black beans to a mixing bowl and mash half of them for texture. Then add sweet potato and lightly mash, then 1 cup rice (amount as original recipe is written // if altering batch size, start with lesser end of range), green onion, nut meal and spices. Mix to combine. Taste and adjust seasonings as needed. Add more rice or nut meal if the mixture feels too wet. It should be very moist but moldable.
