- Preheat oven to 400 degrees F (205 C). Saute onions for about 5-7 minutes in a small spray of non-stick spray. Add garlic, cook for 1 minute. In a large bowl, combine tomato sauce, chili powder, cumin, oregano, allspice, salt, pepper, hot sauce, agave nectar, garlic, onion, and beans and stir to mix well.
- Lightly oil an 8x12-inch baking dish. Pour half of mixture into baking dish and tip back and forth to distribute evenly. Place half of tortillas on top of mixture (use 2 whole tortillas and cut a third to cover spots, or cut them all into strips). Place avocado slices on top of tortillas and season with a pinch of salt. Distribute corn kernels over avocado, then drizzle with lime juice. Top this layer with remaining tortillas, spread with remaining sauce, and sprinkle with crushed tortilla chips, then cheese.
- Cover with foil and bake for 20 minutes, then uncover and bake another 7-10 minutes, until the cheese is melted and the casserole is bubbling at edges. Remove from over and sprinkle with cilantro.

BLACK BEAN AND CORN SALAD WITH HOMEMADE TORTILLA CHIPS
This recipe is MUCH simpler than it sounds! It's very tasty and light. Originally, I came across this recipe on the WCHS NEWS web site, on which they said it was from a book by Bridgett Swinney (Copyright 1993 by Fall Rivers Press) called Eating Expectantly: The Essential Eating Guide and Cookbook For Pregnancy. It also doubles as a low-fat and generally healthy-eating recipe. I made some adjustments to the recipe myself, but I will post the original recipe and add my own personal suggestions here. I added 1/3 c. minced bell pepper, and 1/2 small jalapeño pepper, minced. I'd also recommend reducing the cooking time for the tortillas to 8 minutes per side, mine over-baked at 20 minutes. Also, I wouldn't personally recommend using the yogurt sauce as a dip for the tortillas, it's too spicy because of the cumin. It is VERY good as a dressing on the salad, though. I also served each with 4 eighths tomato instead of 2 quarters. The jalapeño won't add much (if any) heat, but it seems to eliminate or at least reduce the gastric distress suffered during the digestion of beans. Might as well stop a problem before it starts :)

- Mix corn, beans and dressing in container with lid.
- Marinate in refrigerator for at least 30 minutes.
- Preheat oven to 350ºF.
- Cut each corn tortilla into 6 triangular pieces and bake on cookie sheet for 20 to 30 minutes, turning once (I recommend 8 minutes per side).
- Spoon bean and corn mixture over lettuce.
- Sprinkle 1 ounce of shredded cheese on each serving.
- Garnish with 2 quarters (4 eighths) tomato.
- Mix yogurt, cumin and garlic powder.
- Serve with yogurt sauce and warm tortilla chips.
- (Tabasco and crushed red pepper flakes also make nice condiments for this dish). Enjoy.

- COUSCOUS: Prepare the couscous according to package directions. (Bring 1 cup water or stock/broth to a boil and once it boils, remove it from the heat, stir in couscous, and place the lid on. Let stand for 2-4 minutes.) Fluff the couscous with a fork. (Don't let the couscous stand covered too long before fluffing, as it gets harder to fluff the longer it sits). Place in the fridge while preparing everything else.
- LETTUCE: Coarsely chop the lettuce. Wash and thoroughly dry the lettuce. (A salad spinner is great here.) Chop into bite-sized pieces. For faster prep, use a bag of pre-washed and chopped romaine lettuce. Add lettuce to a large salad bowl.
- SALAD: Add the drained and rinsed black beans, drained corn, and thinly sliced bell peppers on top of the lettuce. Add the cooked, fluffed, and cooled couscous right on top and toss with two salad spoons until everything is combined. If eating all at one time, toss the salad with dressing in the large bowl. (See next step for making the dressing.) Separate dressed salad onto plates and add cheese and tortilla strips in even amounts on plates. If you aren't eating this salad all at once, toss individual plates with dressing.
- DRESSING: In a small bowl, whisk together the jalapeno ranch and honey BBQ sauce. Drizzle over salads to taste. (You may not use all of it depending on how much dressing you like.)
