VEGAN POTATO SAUERKRAUT CASSEROLE
This is a warm, cozy and filling dish that you will love to feed your family and friends. It was originally a recipe handed down from my Grandma that we altered by omitting the meat that she typically used.

Steps:
- Dice potatoes to 1/2" cubes. Place in a bowl of cold water and set aside.
- Dice onions to 1/4" pieces. Set aside.
- Dice apples to 1/2" cubes and place in a bowl of cold water.
- If using cabbage, shred coarsely. Measure out 1/2 cup of broth and set aside.
- Sauté onions, using a splash of vegetable broth or water to loosen stuck bits of onion, scraping the pan as you splash the liquid in. Sauté until onions are soft. If using cabbage instead of sauerkraut, add the 1/2 cup of broth to the onions and remove from heat and set aside.
SLOVENIAN BEAN AND SAUERKRAUT HOTPOT (JOTA)
Steps:
- Drain the soaked beans and place them in a large saucepan filled with cold water to cover by several inches. Bring to a boil and continue boiling briskly for 10 minutes. Reduce heat and simmer for 45 minutes or until beans are tender but not mushy. Drain, rinse with cold water to stop the cooking process, and set aside.
- In a large saucepan, sauté the spareribs or bacon until the fat begins to render out. Add the onion and garlic, and sauté until onion is golden, but not browned. Stir in stock, tomato paste, potatoes and sauerkraut. Bring to a boil, reduce heat and simmer, uncovered and stirring occasionally, for at least 20 minutes or until potatoes and sauerkraut are very tender and the mixture is thick.
- Remove pork, cut into bite-sized pieces and return to the saucepan along with the cooked beans and warm through, about 10 minutes. Adjust the seasonings. Some cooks thicken their jota with a roux if it is too soupy. But this is a subjective matter and one person's idea of the proper thickness of a jota is definitely not another's. Serve it the way you like it.

BAKED BEANS AND SAUERKRAUT
An easy way to jazz up some baked beans for the sauerkraut lovers. Make it with or without the sausage.

- Preheat oven to 325°.
- Combine all ingredients well.
- Pour in a 2 1/2 to 3 quart casserole.
- Bake at 325° for about 2 hours.
- Can make in crockpot on low for about 4-6 hours.
BBQ SAUERKRAUT CASSEROLE
My mom used to bring this to our church potlucks 20 years ago. The sour taste from the sauerkraut bakes out of the dish, to give it a more sweet BBQ flavor. Serve over smashed boiled potatoes.

- Heat a large skillet over medium-high heat, and stir in the ground beef and onion. Cook until the beef is crumbly, evenly browned, and no longer pink. Drain, and discard any excess grease.
- Pour the beef mixture into a 3-quart casserole dish. Layer the sauerkraut over the ground beef, pour the tomato juice over the sauerkraut, then sprinkle with brown sugar. Bake in the preheated oven until the sauce is bubbly, about 60 minutes.

- Preheat oven to 350 degrees.
- Oil a 9 x 11 inch baking dish
- Chop the apple into small pieces, mince the onion and slice the sausage into 1/2 inch rounds
- Lay the apples, onion, and sauerkraut in the bottom of the baking dish and mix them together
- Smooth into a level layer
- Place the sausage chunks on the sauerkraut layer in even rows, tightly spaced
- Bake about 30 minutes until the sausages are browned and the sauerkraut layer is slightly bubbly

MOTHER MOOMEY'S SAUSAGE WITH SAUERKRAUT & GREEN BEANS
This is one of my mother-in-law's dishes, modified to be a little healthier. It is quick and easy, and my husband loves it.

- Slice sausage into roughly 1/2" pieces. Brown in skillet over medium heat.
- Drain sauerkraut. Add to sausage in pan. Add green beans. (I include the juice, but that is optional.) Stir and heat to warm through.
- I like to add 1 tsp. caraway seeds, but my husband prefers this without them.
- I like this served over brown rice. My husband prefers it as is.
