NORTH AFRICAN BEAN STEW WITH BARLEY AND WINTER SQUASH
This warming, highly spiced stew is rich in beans, grains and chunks of sweet winter squash. Feel free to substitute other grains for the barley. Farro works particularly well. If you'd prefer something soupier, thin it with a little broth or water before serving.

BEEF, BEAN AND BARLEY STEW
My husband loves this quicker, hearty version of an old-time favorite! Lower-salt ingredients also work well. Use the simmer time to call a friend, start the wash, or help the kids with homework! Makes great leftovers too! Serve with crusty French bread, or hearty whole wheat slices! Enjoy!

BARLEY AND CANNELLINI BEAN STEW
This is a great stew for cold winter nights! Serve with warm whole grain rolls or grilled cheese sandwiches. Caution: it does make a lot, but freezes well. It can be reheated directly from the freezer in the microwave. Just heat for 2 minutes at a time, stirring between each until it is as hot as you'd like it.

- We start with finely chopping the onions and saute them in oil when the onion becomes translucent, add the diced carrots, which should also be fried for a short time. Add the washed barley porridge to the pot, cover with water and simmer over low heat for around one and a half hours
- Season with salt and pepper and add the bay leaf. I like to add quite a big amount of pepper as it goes really well with this dish
- At the very end, add the drained beans and the dried meat, sausage, bacon (or whatever meat you have on hand or prefer). I have used my favorite sausages that I have cut in slices before putting inside the pot
- Finally make a light roux of flour, oil and red sweet ground paprika with which you will thicken the barley stew. Pour the roux inside and mix it so it incorporates in the stew
