8 ounces sour cream
1/2 packet taco seasoning mix

Steps:

  • Heat all ingredients together over medium heat till cheese is melted.
  • Serve warm with Frito corn chips for dipping.
  • YUM!

5 slices fully cooked bacon
1 can (16 oz each) Rosarita® Traditional Refried Beans
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
2 tablespoons cream cheese spread
1/2 cup crumbled queso fresco cheese
Sliced green onions and tortilla chips, optional

Steps:

  • Heat large skillet over medium heat. Add bacon; heat 3 to 5 minutes or until crisp, turning occasionally. Drain bacon on paper towels and crumble; set aside.
  • Add beans, drained tomatoes and cream cheese to skillet; heat 5 minutes or until beans are hot, stirring occasionally.
  • Spread bean mixture in shallow serving dish. Top with queso fresco cheese and crumbled bacon. Sprinkle with green onions and serve with tortilla chips, if desired.

2 cups sour cream
1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies or jalapenos
1 envelope fiesta ranch dip mix
2 cups shredded Mexican cheese blend, divided
Sliced ripe olives, chopped, tomatoes, sliced green onions and shredded lettuce, optional
Tortilla chips

Steps:

  • In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. Top with the olives, tomatoes, onions and lettuce if desired. Serve with tortilla chips.

  • Mix all ingredients; chill.
  • Especially tasty with bacon wafers.
  • If smoother dip is desired, beat in electric mixer of blender.
  • May also be used as a sandwich spread, served on toast.

1 can(s) (16 oz) refried beans
1 can(s) (4.5 oz) chopped green chiles, drained
1 c frozen corn
1 can(s) (15 oz) black beans, drained and rinsed
1 jar(s) (16 oz) thick and chunky salsa
1 1/2 c mexican blend shredded cheese
sour cream, if desired
tortilla chips

Steps:

  • 1. Cook bacon until crisp; drain on paper towel. Set 2 slices of bacon aside; crumble remaining 6 slices.
  • 2. Spray 8 inch square (2 quart) microwavable dish with cooking spray. In medium bowl, mix refried beans, green chilies, and crumbled bacon. Spread mixture evenly in sprayed dish. Sprinkle frozen corn and black beans evenly over refried bean mixture. Pour salsa over top. Sprinkle cheese over salsa. Crumble remaining 2 slices of bacon and sprinkle over the cheese. Microwave on High for 10-15 minutes or until cheese is bubbly and mixture is thoroughly heated. Garnish with spoonfuls of sour cream, if desired. Serve warm with tortilla chips.

This is a great dip for game day, potlucks, or get-togethers. We serve it with air-fried tortilla chips. Leftovers are great (but you probably won't have any) in a flour tortilla for a bean and cheese burrito, or roll it in a corn tortilla for a quick taco.

avocado oil cooking spray
½ pound bacon
½ cup chopped onion
1 (4 ounce) can chopped green chiles (such as Ortega®)
2 cloves garlic, minced
1 (29 ounce) can pinto beans, undrained
½ cup chicken broth
1 teaspoon chili powder
2 tablespoons cream cheese
salt and ground black pepper to taste
1 cup shredded sharp Cheddar cheese
1 cup shredded pepper Jack cheese
12 (6 inch) corn tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray an 8x8-inch baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble once cooled.
  • Saute onion in the same skillet until translucent, 4 to 5 minutes. Add green chiles and garlic and cook for 2 more minutes. Add pinto beans; bring to a boil. Stir in chicken broth and chili powder. Reduce heat to low and mash beans. Let simmer until slightly thickened, 5 to 6 minutes. Add cream cheese and stir until melted. Simmer until slightly thickened, 5 to 6 minutes. Add bacon and stir until well combined. Season with salt and pepper.
  • Layer 1/2 of the bean mixture, 1/2 cup pepper Jack, and 1/2 cup Cheddar cheese into the prepared baking dish. Repeat layers.
  • Bake, covered, in the preheated oven for 15 minutes. Uncover and continue baking until cheese is melted or lightly browned, 5 to 7 minutes more.
  • Meanwhile, preheat an air fryer to 350 degrees F (175 degrees C) according to manufacturer's instructions.
  • Cut each tortilla into fourths. Spray both sides of each tortilla with avocado oil. Place in air fryer basket in a single layer. Air fry for 4 to 6 minutes. Flip and continue cooking until crisp, 2 to 3 minutes more. Check your basket constantly because they can burn quickly. Sprinkle with salt and serve with hot dip.

1 cup julienned applewood-smoked bacon
One 14-ounce can white beans, drained and rinsed well
1 tablespoon red wine vinegar
1 teaspoon minced shallots
2 pinches nutmeg
3 anchovies
Grated zest and juice of 1 lemon
1 clove garlic
Kosher salt and freshly cracked black pepper
2/3 cup extra-virgin olive oil
1/2 cup fresh parsley, finely minced

Steps:

  • Render the bacon in a small pan over medium-low heat, stirring regularly to prevent burning. Drain on paper towels, reserving the fat.
  • Add the bacon, white beans, vinegar, shallots, nutmeg, anchovies, lemon zest and juice and garlic to a food processor and pulse until mostly smooth. Season with salt and pepper. With the processor running, drizzle in the olive oil and about 1 tablespoon of the reserved bacon fat to emulsify.
  • Transfer the mixture to a serving bowl and fold in the parsley.
