Dukes BBQ Style Hash image

An authentic SC BBQ hash recipe at its best, Dukes Barbecue style. Potatoes, onions, and pork are about all you need!

5 lbs Boston butt, roasted or cooked in a crockpot until tender and falling off the bone
2 lbs potatoes, chopped
2 lbs onions, chopped
1 cup mustard-based BBQ sauce
1 cup ketchup
1/2 cup apple cider vinegar
2 tablespoons black pepper, ground
1 tsp hot sauce, Texas Pete or to taste
8 tbsp butter, (one stick)

Steps:

  • Sauté onions with potatoes in a little oil until onions are tender.
  • Stir in black pepper.
  • Pull pork and add to potatoes and onions.
  • Fill with water until covered.
  • Cook until potatoes are done.
  • Blend mixture slightly in a blender and return to pot.
  • Add BBQ sauce, ketchup, hot sauce to taste and vinegar.
  • Simmer until it's the consistency of thick soup.
  • Turn off heat and add butter.
  • Serve over white rice.

2 -3 lbs lean pork roast
2 -3 lbs lean beef roast or 2 -3 lbs chuck
1 lb white meat chicken (optional)
1 large onion
1 (28 ounce) can tomatoes
1 can white corn
1 can creamed corn
1 cup cider vinegar
2 tablespoons black pepper
1 tablespoon ground red pepper
1/2 tablespoon crushed red pepper flakes
1 tablespoon salt

Steps:

  • Cut meat into large chunks.
  • Place in a heavy pot and add water to barely cover.
  • Simmer more than an hour.
  • When the meat is very tender, drain and reserve any broth.
  • Grind the meat with a coarse hand grinder or chop finely.
  • (Using a food processor destroys the texture.) Grind one large onion.
  • Place onion and the meat back into the pot and add one large can of tomatoes-juice and all.
  • Add corn, vinegar and seasonings.
  • Simmer a few minutes.
  • Add the reserved broth to the meat until it reaches the consistency of stew.
  • Serve it over white rice or bread with dill pickles on the side as a condiment.

  • Season pork well with salt and pepper.Heat oil in a large Dutch oven over medium-high heat. Add pork and sear well on all sides. (You may have to do this in more than 1 batch.)
  • Place Dutch oven uncovered in a 300 degree oven for 2 1/2 hours. Remove and let cool.Shred pork with 2 forks and set aside.Pour the liquid through a fine-meshed strainer into a large measuring cup. Discard any oil on top.
  • Wipe the Dutch oven clean and add 1 tablespoon of oil to it. Heat over medium-high heat. Add onion and potatoes and cook until onion is soft. Add the pork on top of the potato mixture. Pour in 1 cup of the cooking liquid and simmer until the potatoes are soft.

  • The Prep Cook. Rub both roasts with salt and garlic powder, and place in a 5 quart crock pot on high. Add the chicken stock and cover. Let it cook 6 to 7 hours until the meat falls apart.
  • The Grind, Part One. Remove the meat from the pot and let cool. Once cool, remove any fat and connective tissue. Cube the meat to a. size that is convenient for your grinder.
  • The Rest of the Stuff... Add remaining ingredients, except butter. Stir to mix well and taste as you go. Still on high, let it cook another 4 hours.
  • This Is a Lot of Hash... Close to the end of hour three of the second cook, prepare a pot of rice by putting 4-1/2 cups of water in a large pot, add 1 tsp of salt, and 1/4 stick of butter, and bring to a boil.
  • Now for the Fun Part. Eating! To serve: Spoon a serving of rice (about 1/2 cup) on to the plate. Spoon an equal amount of hash (more or less) over the rice, and if you like, add some hot sauce like Texas Pete or Tabasco to your taste.
