GRILLED VENISON STEAKS

Grilled Venison Steaks image

I've gone through much of the detail on how to properly grill a backstrap of venison (or elk, antelope, bison, moose etc.) above, but remember that this is done over high heat with the grill top open, and that it takes a good 15 to 20 minutes. Be patient and you will be rewarded.

Provided by Hank Shaw

Categories     Main Course

Time 50m

Number Of Ingredients 4

1 to 2 pounds venison loin, ideally in one piece
Olive oil
Salt and pepper
Your favorite sauce

Steps:

  • Coat the venison backstrap in oil and salt well. Set aside for 30 minutes to 1 hour at room temperature.
  • Get your grill hot, clean the grates and lay the venison on the grill. Keep the grill cover open. Let this cook 5 to 7 minutes without moving, depending on how hot your grill is and how thick your venison loin is. You want a good sear, with good grill marks, on that side of the meat. Flip and repeat on the other side.
  • Do the finger test to check for doneness. If the venison needs some more time, turn it to sides that have not had direct exposure to the grill and cook for 2 to 3 more minutes, checking all the way. If you are using a barbecue sauce, paint the meat with it and let it caramelize on the meat for a minute or three.
  • When the meat has been cooked to your liking, take it off the fire and let it rest for 5 to 10 minutes. If you are using a spice rub now is the time to roll the meat in it.

GRILLED VENISON BACKSTRAP

Grilled Venison Backstrap image

Tender chunks of venison are marinated twice, and wrapped in thick bacon before being grilled until crispy on the outside. A venison version of Filet Mignon. This is a heavenly use of the best part of a deer. For the BBQ sauce, I prefer hickory flavored.

Provided by TIKCUF99

Categories     Meat and Poultry Recipes     Game Meats     Venison

Time 5h15m

Yield 4

Number Of Ingredients 4

2 pounds venison backstrap, cut into 2-inch chunks
1 quart apple cider
1 ½ pounds thick sliced bacon
2 (12 ounce) bottles barbecue sauce, your choice

Steps:

  • Place chunks of venison into a shallow baking dish, and pour enough apple cider in to cover them. Cover, and refrigerate for 2 hours. Remove, and pat dry. Discard apple cider, and return venison to the dish. Pour barbeque sauce over the chunks, cover, and refrigerate for 2 to 3 more hours.
  • Preheat an outdoor grill for high heat. Charcoal is best, but if you must, use gas. Remove meat from the refrigerator, and let stand for 30 minutes, or until no longer chilled. Wrap each chunk of venison in a slice of bacon, and secure with toothpicks.
  • Brush the grill grate with olive oil when hot, and place venison pieces on the grill so they are not touching. The bacon will kick up some flames, so be ready. Grill, turning occasionally, until the bacon becomes slightly burnt, 15 to 20 minutes. The slower, the better. Dig in, and prepare to want more!

BBQ VENISON SANDWICH | SLOW COOKER VENISON BARBECUE

BBQ Venison Sandwich | Slow Cooker Venison Barbecue image

These BBQ Venison Sandwiches are so easy to make. You need a venison roast, some barbecue sauce, a few pantry ingredients, and your slow cooker!

Provided by Miss AK

Categories     Main Dish

Number Of Ingredients 12

1 (2-4lb) venison roast
1 Tbsp. olive oil
1 yellow onion, sliced
4 garlic cloves, minced
1 cup of your favorite barbecue sauce
1/2 cup beer or beef/venison stock
1 Tbsp. apple cider vinegar
1 tsp. Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper
buns of choice, for serving
pickles, for serving

Steps:

  • Start by letting the roast come to room temperature for 30 minutes before you sear it (if you can). This helps create a nice crust on the sear you'll perform by ensuring the meat heats evenly. Then, pat it dry with a paper towel.
  • Next, heat a skillet over medium-high heat with olive oil. Once hot, sear the roast on all sides until a nice, brown crust has formed. Take your time - this could take 15-20 minutes.
  • Then, place your seared roast into the bottom of a slow cooker. Cover it with the onions, garlic, barbecue sauce, beer or stock, vinegar, mustard, salt and pepper.
  • Cook for 8 hours on low or until the meat is literally falling apart. If it is too tough to pull apart, it needs more time. Shred the meat with forks.
  • To serve, pull some out, place it on a bun, add more barbecue sauce, and top with pickles. Enjoy!

Categories     grilled wild meat     main dish     Meat     venison

Time 5h18m

Number Of Ingredients 8

1 1/2 lbs. venison steak an 1 inch thick
3 Tablespoons olive oil
1 Tablespoon fresh lemon juice
1 Tablespoon Worcestershire sauce
1 Tablespoon soy sauce
2 teaspoons minced garlic
1/2 teaspoon ground pepper
1/4 cup dry red wine - we used Pinot Noir

Steps:

  • Mix all the marinade ingredients together in a measuring cup.
  • Place venison in a large zip lock bag.
  • Pour marinade over steak and seal the bag.
  • Place bag in a flat casserole dish so that the steak lies flat.
  • Refrigerate and marinate at least 5 hours, turning every half hour to marinate each side.
  • Drain the marinade at let the steak come to room temperature at least 1 hour.
  • Spray grill grate with spray oil and heat the grill to 500 F.
  • Pat the steak dry with paper towels and then rub both sides of steak with olive oil.
  • Lay the steak on the grill. Do not disturb for 2 minutes. With tongs pick up the steak and move it 90 degrees on the grill -- this will give you the cross-hatch grill marks. Grill another 2 minutes on the same side.
  • Flip the steak and grill until medium rare, using the same method as the first side. Do the Finger test for doneness about 4 minutes.
  • Move the steak to a platter and let it rest for at least 5 minutes.
  • Slice the meat and serve.

GRILLED VENISON STEAKS

Grilled Venison Steaks image

If you're a big game hunter, you should know how to grill a venison steak. First off, it's important to know that wild red meat can cook faster than beef because it's leaner. In order to get consistently juicy and tender steaks, you should try using a meat thermometer until you develop a knack for...

Yield 4

Number Of Ingredients 35

Salt and Pepper Seasoning
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly ground black pepper
Vegetable oil for brushing
Cajun Rub
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly cracked black pepper
1 recipe Cajun Dry Rub (see below)
Vegetable oil for brushing
Mix in a small bowl
5 tbsp. paprika
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. kosher salt
2 tbsp. freshly ground black pepper
2 tsp. cayenne pepper
1 tsp. red pepper flakes
Spicy Orange Marinade
4 sirloin steaks, cut 3/4-1 inch thick
1 recipe Spicy Orange Steak Marinade (see below)
Vegetable oil for brushing
Kosher salt
Freshly ground black pepper
Combine in a Blender
1 tsp. orange zest
1/2 cup orange juice
4 tbsp. olive oil
6 cloves garlic
2 tbsp. red pepper flakes
2 tbsp. fresh oregano leaves (or 1 tsp dried oregano)
2 tsp. kosher salt
2 tsp. freshly ground black pepper
Blend until smooth

Steps:

  • Salt and Pepper Preparation
  • Season the steaks liberally on both sides with salt and pepper.
  • Cajun Rub Preparation
  • Season the steaks with salt and pepper. Rub the steaks liberally with the Cajun Dry Rub. You can let them sit in the fridge up to an hour like this or cook them right away.
  • Marinade Preparation
  • Place the steaks in a baking dish or a resealable bag. Add the marinade. Marinate in the refrigerator for at least 1 hour and up to 12 hours. Remove the steaks from the marinade, letting the excess drip off. Season the steaks lightly with salt and pepper.
  • To Grill
  • With a basting brush, brush both sides of the steaks lightly with the vegetable oil and then place the steaks on the grill.
  • As with all grilling, let the grill do the work. Don't move the steaks at all until they release easily from the grill, about 4 minutes. Flip the steaks and grill on the second side for 3-4 minutes.
  • Use an instant-read thermometer to tell you when they're done: insert the thermometer horizontally into the steaks from the shorter side.
  • Remove the steaks from the grill at 125° for medium rare and 130° for medium.
  • Set aside to rest for 10 minutes before serving.

  • Start with one deer neck. make a cut on the bottom of the neck and keep cutting around the esophagus to remove it. Then continue cutting as much meat as you can off of the bone (it doesn't matter if it's small pieces of meat or large).
  • Add the meat to a pressure cooker, add 4 cups of water, close the cooker and set on the stovetop on high heat. Once the weight on the cooker starts to rock, cook the meat for 40 minutes.
  • When the time is up, take the pressure cooker to the sink and run cold water over it to cool it quickly. Open the cooker and remove the meat pulling it a bit in the process. Keep the liquid in the pressure cooker and set it aside, we will use it later.
  • In a shallow pan, heat 3 tablespoons of oil. When the oil is hot, add the diced onion and lower the heat to medium. Saute the onion until it starts to brown, stirring frequently.
