BARBECUE CHICKEN BACON RANCH CHEESE DIP
Bacon, barbecue chicken and creamy, cheesy ranch dip team up in this hot appetizer that's perfect for holidays, game time or anytime.

Steps:
- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, mix 1 1/2 cups of the Cheddar cheese, the cream cheese, sour cream and ranch dip mix. Spread evenly in baking dish.
- In medium bowl, mix chicken, barbecue sauce and green onion whites. Spoon evenly over cheese mixture in baking dish. Top with remaining 1/2 cup Cheddar cheese, then top with cooked bacon. Bake 20 to 25 minutes or until hot and bubbling at edges.
- Top dip with green onion greens; serve with crackers.

- Preheat oven to 425°F.
- In microwave-safe bowl, combine cream cheese, 2 tablespoons barbecue sauce, Ranch dressing (and onions, optional). Microwave on high for 1 minute. Stir to combine. Gently fold in ½ cup cheddar cheese and drained chicken meat.
- In a baking dish (at least 4 cups), layer the cream cheese mixture, smoothing the top. Pour the remaining 3 tablespoons barbecue sauce, smoothing the top and sprinkle the remaining cheddar cheese on top. Bake for 15 minutes until bubbly. Serve with crackers, tortilla chips or raw veggie sticks.

BBQ CHICKEN DIP
Steps:
- Preheat oven to 425 degrees F. Rub chicken breasts with softened butter then season with salt and pepper. Place on a baking sheet and roast for 30-40 minutes. Let cool completely then pull chicken off the bone into bite-size pieces. While the chicken is roasting, heat a skillet oven medium-low heat. Add olive oil and onions, cooking until soft, about 5 minutes. Add in brown sugar and cook, stirring occasionally, until caramely. Remove from heat.
- In a large bowl, mix together softened cream cheese, ranch dressing, 1/3 cup of the BBQ sauce, onions and half of the cheddar cheese. Fold in chicken.
- In a casserole or baking dish (mine was 8-inch round, 4-inch deep), layer the cream cheese mixture, smoothing the top off. Cover it with the remaining BBQ sauce, then the remaining cheese. Bake for 20-25 minutes, until bubbly and hot. Serve with crackers or chips.
BBQ CHICKEN RANCH DIP
They make this as an appetizer at a local restaurant and my daughter would buy it for a meal, I worked with the ingredients until I got them just right. This is the dip I get asked to make for every occasion. The secret is you have to use Sweet Baby Rays BBQ sauce. I have given the recipe to people and they think I changed something because they used a different sauce This may seem a little rich to some..it even does to me depending on my mood.

- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the cooled bacon into a bowl and set aside.
- Stir together the cream cheese and ranch dressing mix in a bowl until smooth. Spread the mixture on the bottom of a pie dish. Evenly spread the barbecue sauce on top of the cream cheese mixture.
