2 cups shredded sharp Cheddar cheese (8 oz)
1 package (8 oz) cream cheese, softened
1 container (8 oz) sour cream
2 tablespoons ranch dip mix (from 1-oz package)
1 cup chopped cooked chicken
1/2 cup barbecue sauce
3 green onions, thinly sliced, green and white parts separated
1/2 cup chopped cooked bacon
Crackers, as desired

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In medium bowl, mix 1 1/2 cups of the Cheddar cheese, the cream cheese, sour cream and ranch dip mix. Spread evenly in baking dish.
  • In medium bowl, mix chicken, barbecue sauce and green onion whites. Spoon evenly over cheese mixture in baking dish. Top with remaining 1/2 cup Cheddar cheese, then top with cooked bacon. Bake 20 to 25 minutes or until hot and bubbling at edges.
  • Top dip with green onion greens; serve with crackers.

½ 8-oz. package cream cheese
5 tablespoons KC Masterpiece® Original Barbecue Sauce
2 tablespoons Hidden Valley® Original Ranch® Dressing
2 tablespoons red onions
1 cup sharp Cheddar cheese
1 12.5-oz. can chicken breast

Steps:

  • Preheat oven to 425°F.
  • In microwave-safe bowl, combine cream cheese, 2 tablespoons barbecue sauce, Ranch dressing (and onions, optional). Microwave on high for 1 minute. Stir to combine. Gently fold in ½ cup cheddar cheese and drained chicken meat.
  • In a baking dish (at least 4 cups), layer the cream cheese mixture, smoothing the top. Pour the remaining 3 tablespoons barbecue sauce, smoothing the top and sprinkle the remaining cheddar cheese on top. Bake for 15 minutes until bubbly. Serve with crackers, tortilla chips or raw veggie sticks.

12 ounces (1 1/2 packages) cream cheese (at room temperature)
2 cups cooked chopped chicken
8 ounces bacon (cooked until crispy, drained, and chopped)
1 1/2 cups shredded mozzarella cheese (DIVIDED)
1/2 cup barbecue sauce
1/2 cup chopped fresh cilantro leaves
1/4 cup finely diced red onion (optional)
1 teaspoon garlic salt
Freshly ground black pepper
Tortilla chips
Extra barbecue sauce, bacon, onion, and/or cilantro (for garnish)

Steps:

  • In a small (3-quart) slow cooker, combine the cream cheese, chicken, bacon, 1 cup shredded cheese, barbecue sauce, cilantro, onion (if using), garlic salt, and pepper. Cover and cook on LOW for 1 1/2 to 2 hours until the ingredients are warmed through. Stir well to combine, covering and cooking for a bit longer if necessary. Sprinkle the top of the dip with the remaining 1/2 cup shredded cheese, cover, and cook for a few more minutes until melted. Reduce heat to WARM, drizzle with barbecue sauce, sprinkle with optional garnishes, and serve with tortilla chips.
  • In a large pot set over medium heat, combine the cream cheese, chicken, bacon, 1 cup shredded cheese, barbecue sauce, cilantro, onion (if using), garlic salt, and pepper. Stir occasionally until melted and well-combined. Reduce heat to low. Sprinkle the top of the dip with the remaining 1/2 cup shredded cheese, cover, and cook for a few more minutes until melted. Drizzle with barbecue sauce, sprinkle with optional garnishes, and serve with tortilla chips.
  • Preheat oven to 350°F.
  • In a large bowl, use an electric mixer to beat cream cheese until smooth. Mix in the chicken, bacon, 1 cup shredded cheese, barbecue sauce, cilantro, onion (if using), garlic salt, and pepper. Beat until well blended. Spread into a shallow baking dish or large (10-inch) glass/ceramic pie plate. Sprinkle the top of the dip with the remaining 1/2 cup shredded cheese.
  • Bake for 30 minutes or until lightly browned and bubbly. Check after 20 minutes and, if top is browning too quickly, cover with foil for the last 10 minutes of baking time.
  • Drizzle with barbecue sauce, sprinkle with optional garnishes, and serve with tortilla chips.

4 boneless skinless chicken breasts
2 tablespoons dry Ranch dressing mix
1 garlic clove (, finely minced or grated)
2 tablespoons lemon juice
1/2 cup water
1/2 cup vegetable oil

Steps:

  • Pound chicken breasts out to a uniform 1/2 inch thickness.
  • Combine dry Ranch mix with fresh garlic, lemon juice, water and vegetable oil in a large plastic bag. Chill and marinate for 10-30 minutes.
  • Before heating of the grill, allow to sit at room temperature for 10 minutes.
  • Heat grill to medium-high heat. Spray with grill approved cooking spray and place chicken directly over heat. Cook for 5-7 minutes on each side, or until done. Since the sizes of chicken varies greatly, so will the cooking times.
  • Remove and allow to rest for 5 minutes before serving.

This is the dip I get asked to make for every occasion. The secret is you have to use Sweet Baby Rays BBQ sauce. I have given the recipe to people and they think I changed something because they used a different sauce This may seem a little rich to some..it even does to me depending on my mood.

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble the cooled bacon into a bowl and set aside.
  • Stir together the cream cheese and ranch dressing mix in a bowl until smooth. Spread the mixture on the bottom of a pie dish. Evenly spread the barbecue sauce on top of the cream cheese mixture.
