1 package (16 ounces) penne pasta
1 cup chopped sweet red pepper
3/4 cup chopped onion
1 tablespoon butter
1 tablespoon olive oil
3 garlic cloves, minced
1 carton (16 ounces) refrigerated fully cooked barbecued shredded pork
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1/2 cup beef broth
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
1-1/4 cups shredded cheddar cheese
1/4 cup chopped green onions

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute red pepper and onion in butter and oil until tender. Add garlic; saute 1 minute longer. Stir in the pork, tomatoes, broth, cumin, pepper and salt; heat through., Drain pasta. Add pasta and cheese to pork mixture; stir until blended. Sprinkle with green onions. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Place in a shallow microwave-safe dish. Cover and microwave on high until heated through.

2 lb pork shoulder
¼ cup brown sugar
1 tablespoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1 teaspoon kosher salt
1 teaspoon black pepper
1 medium red onion, quartered
¼ cup ketchup
¼ cup mustard
tortilla chip
red onion
BBQ sauce
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
diced tomato
sour cream
salsa
fresh cilantro

Steps:

  • Place pork, onion, and seasonings into a 6-quart slow cooker. Mix to coat meat in seasonings.
  • Add ketchup and mustard, spreading evenly over the outside of the meat.
  • Set slow cooker to High and cook for 4 hours, until the meat pulls apart easily. Alternatively, the meat can be cooked on the Low setting for 8 hours.
  • Remove meat from slow cooker and transfer it to a bowl or cutting board. Using two forks, shred the meat into bite-sized pieces.
  • Preheat oven to 400˚F (200˚C).
  • Using a cast-iron pan or other oven-safe dish, assemble the nachos layer by layer. Chips, then pork, onion, BBQ sauce, and cheese. Repeat as desired for additional layers.
  • Bake for 8-10 minutes until cheese is melted and bubbling.
  • Top with sour cream, salsa, and cilantro.

2 medium onions, finely chopped
1 tablespoon canola oil
6 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup packed brown sugar
1/4 cup cider vinegar
2 tablespoons hot pepper sauce
1 tablespoon Worcestershire sauce
1 teaspoon ground cumin
1 boneless pork shoulder butt roast (3 to 4 pounds)
8 kaiser rolls, split

Steps:

  • In a large skillet, saute onions in oil until tender. Add the garlic, pepper flakes and pepper; cook 1 minute longer. Stir in the tomatoes, brown sugar, vinegar, hot pepper sauce, Worcestershire and cumin. Cook over medium heat until heated through and sugar is dissolved., Cut roast in half. Place in a 5-qt. slow cooker; pour sauce over the top. Cover and cook on low for 10-12 hours or until meat is tender. Remove roast; cool slightly. Skim fat from cooking juices. Shred meat with 2 forks and return to the slow cooker. Heat through. With a slotted spoon, place 3/4 cup meat mixture on each roll.

Pulled pork sandwich is my favorite way to use up leftover pulled pork. It's so delicious and incredibly easy to make.

2 lbs leftover pulled pork
1 medium onion (sliced thin)
3 tablespoons minced garlic
1 cup BBQ sauce
1/2 cup chicken broth
6-8 Hamburger buns
coleslaw

Steps:

  • In a skillet over medium heat, add onion, garlic, BBQ sauce and chicken broth. Cook until the onions are soft.
  • Add leftover pulled pork to the pan and toss with the sauce. Cook until it's heated through.
  • Toasted the buns. Then spoon shredded pork onto one half of the toasted bun.
  • Drizzle with BBQ sauce, top with coleslaw and cover with the bun tops. Serve and enjoy!

1 cup Mexican Shredded Cheese
1 egg white (lightly whipped)

Steps:

  • Pre-heat oven to 375*. Cover a cookie sheet with foil and lightly spray with cooking oil.
  • On a cutting board or lightly floured surface, add 1 puff pastry sheet and cut it into 9 squares.
  • Fill diagonally with BBQ Pulled Pork and sprinkle with some cheese. Pinch the opposite corners and seal it. (Tip - Add some egg whites or water to your fingertips to help the dough stick together.)
  • Place them on a cookie sheet and brush the pastry puff with an egg white.
