Take your yellow, ripe, sweet plantains outside for the best addition to your next BBQ. Plantains are easy to grill and our unique glaze takes it over the top.

Steps:
- 1. Brush grill with vegetable oil. 2. Place plantain, sliced side down on the grill. Cover grill and cook on medium-high heat for 15 minutes. 3. While the plantain is grilling, combine the honey, oil and zest and juice of the lime. Uncover grill, flip plantains over and brush honey-lime mixture over grilled plantain. 4. MELT IN YOUR MOUTH MARINADE
A wonderful marinade that makes even the toughest cuts of beef so tender you could cut them with a butter knife. Tastes great on pork chops and chicken, too. Play with the amounts of garlic and ginger to suit your taste. I tend to use more rather than less. Makes enough for four servings.

MELT IN YOUR MOUTH OVEN-ROASTED BBQ RIBS

- Preheat the oven to 300 F. In a small bowl, mix the rub ingredients together. Rub both sides of the ribs with the mixture, covering them completely. You may have a little extra rub-just save that for next time.
- Prepare a foil packet by laying down two strips of foil in a longer length than the ribs. Set the rack of ribs on the foil and make a "pan" of sorts by folding up the edges. Make another two layers of foil and put that over top, folding the edges together to seal tightly. Set the foil packet on a baking sheet and put in the preheated oven. Bake at 300 F. for 2 - 2 1/2 hours.
- Remove the ribs from the oven and let sit for 15 - 30 minutes before opening the packet.
- Open the packet, spread barbecue sauce on both sides of the rack of ribs. Set the oven on broil.
- Broil the ribs very briefly for just a couple minutes to caramelize the sauce onto the ribs.

- Peel the plantains and cut them crossways into slices 2.5cm thick.
- Lay each plantain on a large sheet of foil, keeping the slices together so they stay in their original shape.
- Smear each plaintain with the butter (or dot it over if it's hard) and sprinkle with the sugar.
- Make a gondola shape round each plantain with the foil, then pour over the orange juice and grind salt and pepper on top if using.
- Wrap the foil completely round the plantains so they're securely sealed inside. (You can prepare to this stage up to 24 hours ahead.).
- Put the foil parcels on the barbecue rack and cook for 30 minutes until the plantains are softened (to check if they're ready, open a parcel and test with the point of a knife).
- Sprikle with salt, pepper and cinnamon.

MELT-IN-YOUR-MOUTH BRAISED AND BARBECUED CHICKEN
Steps:
- Heat oil in a large skillet over medium-high heat. Add chicken, and saute 6 minutes, turning once.
- Combine fruit juices in a large bowl. Stir together cornstarch and 1 tablespoon juice mixture until smooth; set aside.
- Stir soy sauce and next 6 ingredients into remaining juice mixture; pour over chicken. Bring to a boil; cover, reduce heat, and simmer 35 minutes, turning chicken after 20 minutes.
- Prepare rice according to package directions. Keep warm.
- Uncover chicken, and stir in cornstarch mixture. Cook, stirring constantly, 5 minutes or until sauce thickens.
- Spoon rice onto a serving platter; top with chicken and sauce. Sprinkle with green onions.

Steps:
- Mix together Rib Rub ingredients.
- Remove the white membrane from the back side of the ribs (the side with less meat). It should pull off easily. Rinse ribs under cold water and blot dry with paper towels
- Massage Rib Rub into ribs. Place ribs on a foil lined tray and cover with sliced onion and garlic.
- Cover & seal with another piece of foil.
- Bake ribs at 275 for 2 hours.
- Open the corner and make sure they are tender. If not, bake another 20 minutes and check again.
- Meanwhile, combine Rib BBQ Sauce ingredients together.
- Remove ribs and discard juices, onions & garlic. Brush ribs with olive oil and sprinkle with salt & pepper OR brush generously with BBQ sauce.
- Grill 5-10 minutes or until lightly charred.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
- Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
- Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
- Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.
