CHEDDAR MEATLOAF AND TANGY SAUCE



Cheddar Meatloaf and Tangy Sauce image

This cheddar meatloaf is the ultimate comfort food. The loaf is made with the addition of shredded cheese and a simple barbecue sauce topping.

1 cup ketchup
1/3 cup brown sugar (packed, light or dark)
2 teaspoons Dijon mustard (or Creole mustard)
2 teaspoons Worcestershire sauce
2 teaspoons chili powder (divided)
1 pound ground beef
1/2 pound ground pork
1/2 cup finely chopped onion
3/4 cup soft bread crumbs (2 to 3 slices of bread, finely ground)
1 1/2 cups/6 ounces shredded sharp cheddar cheese
1 large egg
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 F.
  • Lightly grease a 9-by-13-by-2-inch baking pan or spray it with nonstick cooking spray.
  • In a large cup or small bowl, combine the ketchup, brown sugar, mustard, Worcestershire sauce, and 1/2 teaspoon of the chili powder. Mix until well blended.
  • In a large bowl, combine the ground beef and pork, chopped onion, bread crumbs , cheese, egg, salt, pepper, the remaining 1 1/2 teaspoons of chili powder , and 1/3 cup of the ketchup mixture.
  • Shape the meat mixture into a large loaf in the baking pan and make a long indentation down the center. Spoon about 1/4 cup of the ketchup mixture into the indentation.
  • Bake the meatloaf for 1 hour and 10 minutes.
  • Brush the loaf generously with the remaining ketchup mixture and bake for 10 to 15 minutes longer.
  • The minimum safe temperature for ground meat is 160 F/71.1 C. For ground poultry, the minimum safe temperature is 165 F/73.9 C.

500 g ground beef
500 g ground pork
1 onion, chopped fine
1 slice bread, torn up
1 egg, beaten
1/4 teaspoon black pepper, freshly ground
1/4 cup barbecue sauce
3 garlic cloves, pressed (or very finely chopped)
1 onion, cut in half and sliced (so you end up with semi-circles of onion)
1/4 cup barbecue sauce
2 tablespoons brown sugar

Steps:

  • For the meat loaf, combine bread, egg, barbecue sauce, garlic, pepper and chopped onion. Crumble pork and beef over top and mix well with hands or wooden spoon.
  • Place in a loaf pan and bake at 350F, 175C for an hour or until fully cooked. Let rest or sit for 5 minutes and drain off any fat.
  • Meanwhile, cook the sliced onion in a little water on medium heat until lightly golden. Add more water if necessary to prevent sticking.
  • Add barbecue sauce and sugar and mix well. Simmer on low heat until thick.
  • Pour topping over cooked meatloaf or serve along side meatloaf.

¾ pound mild sage-flavored breakfast sausage
1 onion, chopped
2 carrots, shredded
5 tablespoons dry onion soup mix
2 tablespoons brown sugar
3 eggs
1 ½ cups barbeque sauce
1 cup rolled oats, or more if desired
6 slices bacon, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix the ground beef, sausage, onion, carrots, onion soup mix, brown sugar, eggs, and barbeque sauce together in a large mixing bowl until thoroughly combined. Stir in enough oats to make the mixture hold together -- you can use up to 2 cups of oats. Divide the mixture in half, and spoon into 2 9x5-inch loaf pans. Place 3 strips of bacon the long way onto each loaf.
  • Bake in the preheated oven until the meatloaf is no longer pink in the middle and the juices run clear, about 1 hour.
