BBQ MEATLOAF RECIPE
An easy, no-fail BBQ Meatloaf Recipe made simple and delicious! Loaded with smoky spices and tons of flavor, and topped with a sweet and sticky BBQ Sauce glaze

Steps:
- Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
- In a large bowl, use a fork to mix together breadcrumbs, salt, chili powder, pepper, cumin, garlic powder, and onion powder. Add the milk, egg, Worcestershire, and liquid smoke and mix once more.
- Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
- Pour half of the BBQ sauce over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce and bake an additional 25 minutes.
- Allow the meatloaf to rest about 15 minutes before slicing into. Serve and enjoy!

- Place bread in a food processor, and pulse 10 times or until crumbs measure 1 1/3 cups. Combine the crumbs, beef, and next 7 ingredients (beef through garlic) in a large bowl, and shape meat mixture into a 9 x 6-inch loaf. Place loaf in an electric slow cooker.
- Combine ketchup, mustard, and pepper in a small bowl, stirring with a fork. Spread ketchup mixture evenly over top of loaf. Cover with lid; cook on LOW for 5 hours.

Very easy quick meatloaf recipe. I make many varieties of meatloaf... sometimes the Italian with breadcrumbs, garlic, eggs, etc... This version is a tasty quick BBQ recipe that is great for busy nights or dinner in a rush. Sometimes I put the remaining BBQ sauce right on the loaf prior to putting it in oven if you like it a little hardened. For easy clean-up, I use a baking sheet lined with parchment paper that I spray lightly with Pam Olive Oil spray.

- Shape into loaf in 12x8-inch baking dish.

- Remove and discard the tough stems from the mushrooms and then generously brush the caps with oil. Brush the cooking grates clean. Grill the mushrooms over direct heat, with the lid closed, until barely tender, 6 to 7 minutes, turning once or twice. Remove from the grill and, when cool enough to handle, cut the mushrooms into ¼-inch pieces.
- In a medium bowl mix the bread crumbs and milk, and let stand for 5 minutes. In a large bowl combine the meat loaf ingredients, including the mushrooms and soaked bread crumbs. Using your hands, mix the ingredients thoroughly but do not overwork. Form into a loaf about 9 inches long and 5 inches wide. Place the loaf in the middle of a large disposable foil pan. Grill over indirect medium heat, with the lid closed, for 45 minutes.
- After 45 minutes of grilling time, brush the barbecue sauce over the top and sides of the meat loaf and continue to grill over indirect medium heat, with the lid closed, until the internal temperature reaches 160°F, 40 to 45 minutes more. Remove from the grill and let rest 10 to 15 minutes. Once removed from the grill, the meat loaf will continue to cook, reaching the recommended 165°F for ground beef. Cut into slices and serve warm.
