I came up with this one night trying to "figure out" what dinner was going to be. Grabbed some things from the pantry and what turned out was a keeper.

cooking spray
1 (16 ounce) package elbow macaroni
1 tablespoon olive oil
½ cup diced onion
1 tablespoon minced garlic
1 ½ pounds ground turkey
1 ½ cups barbeque sauce (such as KC Masterpiece® Original)
1 (8 ounce) bag frozen corn
1 tablespoon crushed red pepper flakes
2 (7.5 ounce) packages cornbread mix (such as Jiffy®)
⅔ cup milk
2 eggs
1 (12 ounce) package shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
  • While pasta boils, heat oil in a 3-quart pot over medium-high heat. Add onion and garlic and cook and stir until onion is translucent, 5 to 7 minutes. Add ground turkey and cook and stir until browned and crumbly, 5 to 7 minutes. Stir in barbeque sauce, corn, and red pepper flakes. Mix well, reduce heat, and let simmer for 5 minutes.
  • Meanwhile, mix cornbread mix, milk, and eggs together in a bowl. Set aside.
  • Combine macaroni, meat mixture, Cheddar cheese, salt, and pepper in a large bowl. Pour mixture into the prepared dish. Spoon cornbread batter on top.
  • Bake in the preheated oven until cornbread is light golden brown, 15 to 20 minutes. Remove from the oven and let cool slightly before serving.

It may not sound like much, but this is full of flavor and the cornbread topping gives it a nice density. You can use ground beef instead of the turkey, I just wanted it to be as healthy as possible.

1 large onion, diced
1 - green bell pepper, diced
1 cup(s) drained whole corn kernels, from a frozen pkg or can
1/2 cup(s) favorite bbq sauce
1 cup(s) drained diced tomatoes
2 - 8.9 oz pkgs jiffy cornbread mix

Steps:

  • Heat oven to 400. Spray a 9" x 13" baking dish w/ cooking spray. Cook ground turkey in lg skillet over med-high heat until browned.
  • Add onion, green bell pepper and tomatoes. Cook until veggies are tender. Stir in BBQ sauce.Spread mix into bottom of baking dish.
  • Prepare cornbread as directed on pkg. Spread batter evenly over turkey mix. Bake 20-25 min, or until a knife inserted in center comes out clean.

Steps:

  • Heat oven to 400. Spray a lg baking dish w/ cooking spra. Crumble the ground turkey into a lg skillet over med-high heat. Cook until browned.
  • Add onion, bell pepper, corn and tomatoes to skillet. Cook, stirring until veggies are tender. Stir in BBQ sauce. Spread the turkey mix into baking dish.
  • Prepare jiffy mix as directed. Spread batter evenly over turkey mix. Bake 25 min, or until a knife inserted in center comes out clean.

1/2 teaspoon salt
1/2 teaspoon chili powder
1 cup reduced-fat cheddar cheese, shredded
1/2 cup barbecue sauce
1 1/2 cups canned mexicorn whole kernel corn, drained
8 ounces tomato sauce
1 cup flour
1/2 cup yellow cornmeal
1 tablespoon sugar
1 teaspoon salt
1 teaspoon baking powder
1/4 cup light butter
1/2 cup reduced-fat cheddar cheese, shredded
1/2 cup skim milk
1 egg, beaten

Steps:

  • Brown ground turkey breast; drain.
  • Stir in salt through tomato sauce and set aside.
  • To make the crust, stir together flour, cornmeal, sugar, tsp salt, and baking powder; cut in butter.
  • Blend in 1/2 cup of cheese, milk, and egg.
  • Spread crust mixture over the bottom & sides of nonstick 9-inch square baking pan or glass pie plate.
  • Pour filling into crust.
  • Bake at 400 degrees for 25-30 minutes.
