EASY GRILLED OCTOPUS RECIPE
Easy Grilled Octopus Recipe - tender, lightly seasoned and charred octopus that tastes amazing! A must try for seafood lovers!

Steps:
- Place octopus in a pot and cover with enough water. Bring to a boil. Boil for 40 minutes.
- Remove octopus from hot water, rinse and place in a bowl. Drizzle with olive oil and add chopped garlic. Let is cool and rest at room temperature, for 30 minutes to 1 hour.
- Preheat a gas grill to medium-high heat.
- Slice octopus tentacles. Grill for 3-4 minutes per side, until charred.
- Remove from heat and place in a bowl.
- Drizzle with olive oil and add lemon juice. Season with salt and pepper. Sprinkle some oregano (optional) and parsley on top. You can also add some chopped garlic, too (optional).
- Serve.

GRILLED OCTOPUS

- Fill a large pot 1/2 full with water. Add 2 tablespoons kosher salt, peppercorns, and the wine cork; bring to a boil over high heat.
- Meanwhile, place octopus on a cutting board. Using a wooden spoon or meat mallet, pound the octopus multiple times, starting in the middle and moving down each tentacle to tenderize the meat.
- Dip tentacles into the boiling water 3 times, holding them in the boiling water 2 to 3 seconds each time, until the tentacles curl up. Submerge entire octopus in the boiling water. Bring water back to a boil, reduce heat to low, cover, and simmer until octopus is fork-tender, 45 to 60 minutes. Remove from heat and cool for 30 minutes.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Grill octopus until charred on all sides, 3 to 4 minutes per side.
- Remove from heat, slice into pieces, and place on a serving platter. Drizzle with extra virgin olive oil, squeeze lemon over top, sprinkle with parsley, and season with salt and pepper to taste. Serve immediately.

GRILLED OCTOPUS ON A FOREMAN GRILL RECIPE
Grilling delicious octopus is a 2 step process. First, you need to pre-cook the octopus by simmering it so that it becomes tender.

Steps:
- In a large pot, place the octopus, celery, bay leaf, garlic, peppercorns, 1 teaspoon of salt, and 1 lemon cut in half. Pour in enough water to cover. Turn the heat to medium-high and bring to a boil. Lower the heat to simmer, cover the pot, and allow the octopus to cook until tender. This will take approximately 60 minutes. You can check for tenderness with the tip of a sharp knife.
- Remove the octopus from the water to a baking dish, discarding the aromatics and liquid. Coat the octopus with 1 tablespoon of olive oil. Cover with plastic wrap and place in the refrigerator for up to 24 hours.
- Remove the octopus from the refrigerator to bring it to room temperature. Remove as much of any outer skin still attached as you can by rubbing your hands over the octopus. Don't worry if it doesn't come off. It will char when grilled.
- Heat your Foreman Grill to high. Meanwhile, cut the octopus into serving sizes, approximately 4". Coat with 1 tablespoon of olive oil and sprinkle with salt and pepper. Grill the octopus with the top closed just until the outside chars. This will happen quickly - approximately 3 to 5 minutes. Depending on your grill size, you will likely do this in batches.
- Remove the octopus to a serving platter and brush with olive oil. Cut 2 lemons in half. Grill the lemon halves to lightly char. Serve the octopus with the grilled lemon. You can garnish with chopped parsley or oregano if desired.
BBQ GARLIC OCTOPUS
I felt like some baby octopus but didn't find a recipe that appealed to me tonight so thought I'd post this original one that came out well. I've listed ingredients for a single generous serve which is all I was making but you can obviously scale it up easily.

Steps:
- Bring water to boil in a small covered saucepan.
- Place octopus in saucepan, cover and reduce heat to medium-high and cook for 10 minutes. This is a lazy way to steam / boil them.
- Remove from heat and drain remaining water using the lid.
- Add olive oil, garlic, parsley, oregano and squeeze the lemon over the top and mix together.
- Place on preheated medium BBQ grill plate and cook around 2 minutes with the head facing down and around 5 minutes with the tentacles facing down.

- Combine octopus, bay leaf, thyme, peppercorns, 1 teaspoon salt, garlic and 1 lemon, cut in half, in saucepan along with water to cover. Turn heat to medium, cover, and bring to boil. Adjust heat so that liquid simmers slowly, and cook until octopus is tender, for 30 to 90 minutes, depending on whether you're using two smaller octopuses or 1 larger one (check for doneness with point of sharp knife). Drain, discarding everything but octopus. (You can prepare this 24 hours in advance up to this point; cover, and refrigerate octopus.) Set aside.
- Start charcoal or wood fire, or preheat gas grill; fire should be quite hot. Grill rack about 4 inches from heat source. Cut octopus into large serving pieces, brush it with half the olive oil, and sprinkle it with salt and pepper. Grill it quickly until outside browns but inside is not dried out. Cut remaining lemon into wedges.
- Brush octopus with remaining olive oil. Serve with lemon wedges, hot or at room temperature, garnished with parsley.

Steps:
- If using fresh octopus, rinse it well and place in a heavy, nonreactive pot. Cook over medium heat, covered, for 10 minutes. Reduce the heat to low and simmer for 20 minutes, or until the octopus is fork-tender, adding a few tablespoons of water as needed. If using frozen octopus, place it in the pot still frozen and cook over medium-low heat, turning frequently, until thawed. Remove from heat.
- Drain the octopus, reserving the cooking liquid, and cut it into bite-size pieces. Place in a serving bowl. Stir in a few tablespoons of the cooking liquid to thin the dip to sauce consistency. Pour over the octopus and cool to room temperature. Garnish with reserved capers and serve.

- For confit octopus, bring a large saucepan of salted water to a boil (the water needs to be salty: 80gm salt to 4 litres water). Blanch octopus, including head, until water comes back to the boil (2-3 minutes). Transfer octopus to a bowl of iced water to cool (10 minutes). Drain and cut in half.
- Preheat oven to 100°C. Place octopus, garlic, chilli and enough oil to cover in a deep roasting pan. Cover with a lid or foil and braise in oven until octopus is tender (2¾-3 hours). Remove from oven and cool in oil, then strain (reserve oil). Cut off head, separate tentacles and trim tentacles at thick end (reserve trimmings). Finely chop head and trimmings, then set aside. Set aside whole tentacles.
- Heat 30ml reserved confit oil in a cast-iron frying pan over medium heat, add onion and sauté until tender (4-5 minutes), then add garlic and sauté until golden and caramelised (4-5 minutes). Remove from pan. Add reserved chopped octopus and sauté until starting to get a light crust (4-5 minutes). Cool completely. Whisk in piripiri paste, oil, lemon juice, parsley and salt to taste.
- Preheat a woodfire or charcoal barbecue to mediumhigh until coals are white. Brush octopus tentacles and cos with confit oil, then barbecue, turning once, until lightly charred (1-2 minutes each side). Halve cos lengthways. Place on a serving dish with tentacles, scatter parsley, onion and chilli, pour over dressing and serve.
