BBQ-FLAVORED WHITE BEANS WITH SAUSAGE AND SPINACH
I fully admit that this recipe screams "emergency dinner!" But it's spicy, hearty, high in protein, and best of all, ready for the table in about twenty minutes. Some nights, you need a main dish like that, and this one never disappoints.

Steps:
- Heat the oil in a wide skillet or stir-fry pan. Add the onion and sauté over medium heat until translucent.
- Add the garlic and sausage; continue to sauté, stirring frequently, until everything is golden, about 5 minutes.
- Stir in the beans and barbecue sauce. Cook until piping hot, about 4 minutes.
- Add the spinach and cover. When it wilts down a bit, stir it in. Continue to cook for just a minute or so longer. Serve at once.
- A salad with a hint of sweetness balances the hearty, bold flavors in this dish. Choose Fruitful Red Slaw (page 177) or Creole Coleslaw (page 178). To make the meal even heartier, add some cooked quinoa or microwaved sweet potatoes.
- If this is truly an emergency meal, stick with the basics-microwaved Yukon gold or sweet potatoes and a simple green salad.

Steps:
- Heat the oil in a large saucepan over medium heat. Add the sausage and cook, stirring occasionally, until browned, 4 to 5 minutes. Using a slotted spoon, transfer the sausage to a plate.
- Add the garlic to the pan and cook, stirring, for 1 minute (do not let it brown). Add the wine and simmer, scraping up any brown bits, for 1 minute.
- Add the broth and pasta and bring to a boil. Reduce heat and simmer until the pasta is just tender, 8 to 10 minutes.
- Add the beans, sausage and 1/4 tsp pepper and cook until heated through, about 2 minutes. Remove from heat and add the spinach, stirring gently until it begins to wilt. Serve with the Parmesan.

- Cook the sausage in a cast iron skillet or non-stick pan on medium high. If using sausage links, sear them well on the sides then slice as desired. Add cooked sausage to the beans along with what's left in the pan. Pour chicken broth and garlic into a large pot. Place on medium high heat and bring to a simmer. Add in the oil, oregano, and beans mixture. Stir together before adding in tomatoes. Heat through until beans are tender. Add spinach and cook just until the leaves are wilted. Stir to combine and sprinkle cracked pepper on top.
HEALTHY/SPICY BARBECUE BAKED BEANS AND SPINACH
I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

Steps:
- Heat olive oil on medium high heat in a deep skillet or large sauce pan.
- Add spinach, garlic and jalapeno and cook until spinach is wilted (3-4 minutes).
- Meanwhile, whisk together sauce, water, paste, molasses, salt and pepper.
