SLOW-COOKER BACON CHILI
Bacon makes everything better. This easy chili combines beef, bacon and beans for a hearty slow-cooker dinner that's sure to fill you up!

Steps:
- Spray 5-quart slow cooker with cooking spray.
- In 12-inch skillet, cook bacon 12 to 14 minutes over medium heat, stirring occasionally, until crispy. Drain on paper towels. Reserve 1/4 cup; cover and refrigerate until ready to serve. Add remaining bacon to slow cooker.
- Reserve 1 tablespoon drippings in skillet. Add beef, bell pepper, onion and garlic. Increase heat to medium-high. Cook 6 to 9 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Add beef mixture to slow cooker; stir in remaining chili ingredients. Cover; cook on High heat setting 3 to 4 hours or on Low heat setting 6 to 8 hours. Serve with reserved bacon and Toppings.

Steps:
- Preheat an outdoor grill for high heat.
- Sprinkle each ear of corn with Cajun seasoning, salt, and pepper, and wrap each ear with 2 slices of bacon, covering the ear as completely as possible. (A big ear might need 3 pieces of bacon.) Wrap the ears in aluminum foil, twisting the ends tightly to seal.
- Place the wrapped corn on the preheated grill, and grill on high heat until the corn is hot, about 10 minutes per side. Turn the heat to Low, and grill the corn until the bacon is cooked and the corn is tender, about 45 minutes.

- Mash together the butter, honey, ketchup, garlic and some seasoning, beating until quite smooth. At this point, if you are also cooking for children, split the mix into two serving bowls, before stirring the harissa into just one bowl. Add a pastry brush to each butter mix.
- Wrap each corn cob in a double layer of foil. Barbecue, turning, for 30-35 mins until tender and a little charred. If you want them more blackened, simply unwrap and throw directly on the barbecue for a few more mins.
- Pile onto plates and let everyone butter their own.

- Preheat grill for medium-high heat.
- In a medium bowl, mix together the chili powder, oregano, onion powder, cayenne pepper, garlic powder, salt, and pepper. Blend in the softened butter. Apply this mixture to each ear of corn, and place each ear onto a piece of aluminum foil big enough to wrap the corn. Wrap like a burrito, and twist the ends to close.
- Place wrapped corn on the preheated grill, and cook 20 to 30 minutes, until tender when poked with a fork. Turn corn occasionally during cooking.

Steps:
- Heat a grill to medium-high heat. Grill the corn in their husks until the husks start to blacken, about 3 minutes per side.
- Mix together the butter, chili powder, cayenne pepper, lime juice and some salt and black pepper in a bowl until incorporated.
- Peel back the corn husks, leaving on to use as handles while eating. Rub the chili-lime butter all over the corn. Garnish with the cotija cheese.

- Set a pressure cooker to sauté, add 1 Tbl oil and sear the beef on all sides til browned. Shut the pressure cooker off. Add in 1/2 cup of Coke, 1 tsp salt and 1/2 cup bbq sauce to the beef. Pressure cook on meat (High) for 40 minutes. Allow a natural release for 15 minutes. Remove the meat from the pan, shred. Separate the fat from the liquid in the pot. Return the liquid back to the pot. Add in the remaining 1/2 cup of bbq sauce and set to sauté. Reduce until thickened (about 15 minutes). While the sauce is reducing, use a wooden spoon to lightly break up the chunks of beef.
- In a heavy-bottomed pot add 1 Tbl of oil. Place the pot on the stove, put the heat to medium, and add the olive oil to the pan. When the olive oil shimmers add the onion sautéing for 5 minutes or until the onions soften and start to turn translucent.
