1 teaspoon ground mustard
3/4 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 eggs, lightly beaten
2-1/2 cups coarsely crushed barbecue potato chips
1-1/2 pounds chicken tenderloins
Cooking spray

Steps:

  • Preheat oven to 400°., In a small bowl, mix sour cream, chives, garlic and salt. Refrigerate until serving. In a shallow bowl, mix flour, brown sugar and seasonings. Place eggs and potato chips in separate shallow bowls. Dip chicken in flour mixture to coat both sides; shake off excess. Dip in eggs, then in potato chips, patting to help coating adhere., Place on a rack in a 15x10x1-in. baking pan; spritz with cooking spray., Bake until coating is golden brown and chicken is no longer pink, 12-15 minutes. Steps:

  • Preheat oven to 350°F (176°C). Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes.
  • Add the barbecue sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
  • In a large skillet, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients.
  • Bake for 15 minutes.

1 onion, 1/2 roughly chopped and 1/2 thinly sliced
3 cloves garlic cloves
½ pear, peeled and roughly chopped
3 spring onions, 1 cut into pieces and 2 sliced into 1/4-inch rounds
3 tablespoons brown sugar
1 teaspoon black pepper
⅓ cup soy sauce
3 tablespoons sesame oil
1 tablespoon canola oil
1 teaspoon sesame seed, for serving
2 cups cooked rice, for serving
Banchan (Korean side dishes), for serving (optional)

Steps:

  • Slice the beef as thinly as you can, then set aside in a large bowl. Using frozen or cold beef will make the slicing easier.
  • In a blender or food processor, blend the onion chunks, garlic, pear, green onion pieces, brown sugar, pepper, soy sauce, and sesame oil until smooth.
  • Pour the marinade over the beef, add the thinly sliced onion, then mix to coat evenly. Cover with plastic wrap and marinate in the fridge for at least 30 minutes, or overnight.

2 teaspoons paprika
2 teaspoons confectioners' sugar
3/4 teaspoon fine salt
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
2 medium russet potatoes
About 2 quarts vegetable oil, for frying

Steps:

  • Mix the paprika, sugar, salt, onion powder, smoked paprika, chili powder and garlic powder together in a small bowl.
  • Slice the potatoes about 1/16 inch thick on a mandoline. Put the potatoes in a large bowl of cold water and agitate to separate the slices and release the starch. Drain the water and repeat with fresh cold water about 3 more times, until the water runs clear. Lay out a couple of layers of paper towels and spread the potatoes out in a slightly overlapping layer (stack with more layers of paper towels to save space if necessary) and let stand to dry, about 5 minutes.
  • Fill a large, wide pot with 2 inches of oil and heat over medium-high heat until a deep-fry thermometer registers 300 degrees F. Line a large mixing bowl with paper towels for draining. Add about 1/4 of the potato slices to the hot oil and fry, mixing constantly with a spider or large slotted metal spoon, until golden brown all over, about 4 minutes. Transfer the chips to the prepared mixing bowl. Fry the remaining potatoes in 3 more batches, making sure to return the oil to 300 degrees F between batches. When all of the chips are in the bowl, remove the paper towels.
  • Put the seasoning mix in a sieve and dust it over the chips, gently tossing them so that they coat evenly. Cool completely and eat immediately or keep in an airtight bag or container up to 1 day.

2 large sweet potatoes, (ends chopped off)
canola oil for frying
1 tablespoon smoked paprika
1 tablespoon onion powder
1/2 tablespoon brown sugar
1/2 tablespoon garlic salt
1/2 teaspoon chili powder
1/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Add about 4 inches of canola oil to a large pot and heat over medium high heat, fitting the pot with a candy thermometer. You want the oil to be at 350 degrees F, so if it continues to rise, turn down the heat a bit underneath.
  • Cover a large cutting board with paper towels. In a bowl, combine paprika, onion powder, brown sugar, garlic salt, chili powder, salt and pepper.
  • Scrub sweet potatoes and pat dry with paper towels. Slice as thin as possible using a mandolin or a very sharp knife. Add chips in batches to the hot oil, frying for 4-5 minutes at a time, using a large slotted spoon to turn the chips over while frying. Once chips are golden and crispy, remove with a large slotted spoon (or a kitchen spider) and place chips on the paper towels to drain. After about 30 seconds, sprinkle with the homemade bbq seasoning and toss well to coat. Let cool completely. Make sure chips aren't piled on top of each other so they can cool and crisp up. Serve immediately!
