BBQ Chicken Stuffed Baked Sweet Potatoes are a healthy recipe filled with flavor. A soft, sweet potato baked in the oven and topped with barbecue chicken, red onion, mozzarella cheese and cilantro.

6 sweet potatoes
3 boneless, skinless chicken breasts
2 cups BBQ Sauce
1 cup shredded Mozzarella cheese
½ red onion (diced)
4 Tablespoons cilantro (chopped)

Steps:

  • Scrub the outside of each potato and remove any blemishes.
  • Poke the outside of each sweet potato multiple times with a fork then place on a baking sheet and place on the middle oven rack.
  • Heat oven to 425 degrees and bake for 45 minutes, or until a fork easily presses into the center.
  • Meanwhile, spray a 9 x 13 inch baking dish with nonstick cooking spray.
  • Place chicken breasts in prepared pan and cover with BBQ sauce.
  • Bake at 375 degrees for 25-30 minutes, or place in the oven with the sweet potatoes for the last 20 minutes of cooking. Make sure chicken is cooked all the way through.
  • Remove chicken and sweet potatoes from the oven.
  • Shred cooked BBQ chicken.
  • Cut each sweet potato down the middle and fill with shredded chicken.
  • Divide mozzarella cheese, red onion and chopped cilantro evenly between each potato and put on top of each baked potato.
  • Broil on high for 2-3 minutes, or until cheese is completely melted.
  • Serve hot.

This creamy sweet potato recipe is a huge hit with everyone. A friend served a version of these at a luncheon, and I absolutely loved it. I found some sweet potatoes in my fridge that I hadn't used and decided to try it. Everyone at work flipped over them! They're great with pork chops or steak, too!

6 sweet potatoes
2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
⅓ cup brown sugar
2 tablespoons margarine
1 tablespoon vanilla extract
¾ teaspoon salt
½ teaspoon pepper
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.
  • Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.
  • Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts. Spoon mixture into potato skins.
  • Bake for 5 minutes, or until heated through.

Sweet Potatoes
4 small sweet potatoes, scrubbed clean
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup low sodium chicken broth or milk
1/2 cup shredded smoked gouda cheese, divided
BBQ Chicken
2 cups cooked chicken breast, shredded
1/3 cup BBQ sauce
Caramelized Onions
2 teaspoons olive oil
1 red onion, thinly sliced
1/4 teaspoon kosher salt

Steps:

  • Preheat oven to 400 degrees and line a baking sheet with foil. Prick the washed sweet potatoes with a fork and place them on the prepared baking sheet. Bake the sweet potatoes for 45 minutes. While the sweet potatoes are baking heat a large skillet over medium heat. Once the skillet is hot add the olive oil, thinly sliced and separated red onion, and 1/4 teaspoon of salt. Saute the onions, stirring them occasionally for about 10-15 minutes or until soft and golden brown in color. When the sweet potatoes are done baking, cool them for a few minutes before cutting them in half lengthwise. Scoop out the flesh, leaving a 1/4 inch border all around the potato. Discard 2 of the potato skins and place the remaining skins back on the foil lined baking sheet. In a large bowl add the sweet potato filling, salt, pepper, chicken broth, and a 1/4 cup of the shredded smoked gouda cheese. Mash everything together with a potato masher until it is mostly smooth. In a medium sized bowl combine the shredded chicken and BBQ sauce, stirring together until it is completely coated. Spoon the sweet potato filling evenly back into the skins. Top with the shredded chicken, caramelized onions, and remaining cheese. Place the potatoes back in the oven and bake for another 10 minutes until the filling is hot and the cheese is melted. Remove the potatoes from the oven and top with more BBQ sauce and cilantro if desired.

½ medium sweet onion, chopped
1 medium apple - peeled, cored, and chopped

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a baking dish.
  • Pierce the sweet potato several times with a fork and cut in half. Place in a microwave-safe dish; pour water to about 1/2-inch deep. Cook in microwave 10 minutes.
  • Arrange the onion, apple, and carrots into the bottom of the prepared baking dish. Brush the barbecue sauce on both sides of the chicken breasts and lay atop the vegetables. Peel the sweet potato and cut into large chunks; scatter into the baking dish. Sprinkle the cranberries over the dish.

1 large sweet potato
1 tablespoon olive oil
1 pinch salt
1 rotisserie chicken breast
1 cup red cabbage, shredded
⅓ cup barbecue sauce, plus more for serving
2 tablespoons green onions, thinly sliced

Steps:

  • Preheat the oven to 425°F (220°C). Line a small baking sheet with parchment paper.
  • Using a sharp knife, carve out one of the breasts from the rotisserie chicken. If the chicken is particularly small, use both breasts. Chop the chicken breast into very small pieces and set aside.
  • Use a fork to poke holes all over the sweet potato. Transfer the sweet potato to the prepared baking sheet.
  • Bake for 40-50 minutes, until the sweet potato is tender when pierced with a paring knife or skewer.
