- Preheat oven to 400°. Cut bacon crosswise into thirds. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-4 minutes or until partially cooked but not crisp., Place chicken in a small bowl; sprinkle with steak seasoning and toss to coat. Wrap a bacon piece around each chicken cube; secure with a toothpick. Place on a parchment-lined baking sheet., Bake 10 minutes. If desired, add horseradish to barbecue sauce; brush over wrapped chicken. Bake until chicken is no longer pink and bacon is crisp, 5-10 minutes longer.

BBQ CHICKEN PIZZA
Steps:
- For the chicken and rub: Butterfly the chicken breast halves. Combine the paprika, brown gsugar, granulated garlic, granulated onion, cumin, salt, chili powder and pepper in a resealable plastic bag and shake well to mix everything together. Add the chicken breasts and shake again to coat them evenly. Set aside in the fridge for at least 30 minutes to marinate while you prepare everything else.
- Preheat a grill to high heat.
- For the BBQ sauce: Take the dried chiles, tear them up, discard the stems and seeds and place in a small bowl. Pour boiling water over them and let sit for 5 to 10 minutes to re-hydrate. Drain and discard the water.
- In a medium saucepan, add the canola oil, onions and garlic. Sweat over medium heat until the onions are very soft and fragrant, about 8 minutes. Season with salt and pepper. Add the chiles and bourbon and simmer for 1 minute to let some of the alcohol burn off. Add the ketchup, preserves, brown sugar and molasses and simmer for 10 minutes to let the flavors come together. Puree and set aside.
- Remove the chicken from the marinade and cook on the hot grill, 5 to 7 minutes per side to get some color. Remove and allow to cool. Slice on the bias into pieces.
- For the pizza. Dust a bench (or pizza peel if you have one) liberally with flour. Take the ball of pizza dough and press out into a disk, working it gently from the inside out. Continue to work and stretch the dough out until you have about a 12-inch circle. The crust should be nice and thin, about 1/8-inch thick. Set on a floured surface and press gently to flatten. Spread the BBQ sauce on the pizza in a very even, thin layer. Leave a border as desired around the edges. Top with the shaved red onion, slices of BBQ chicken and slices of cheese. Dot the top with extra patches of BBQ sauce. Slide the pizza into a hot pizza oven and bake until the crust is bubbly and charred around the edges, 12 to 14 minutes. (If baking at home, set a pizza stone in an oven at 500 degrees F to warm up for 1 hour).
- When done, remove from the oven and scatter the top with fresh cilantro leaves.

This is a recipe for classic BBQ chicken pizza with tangy BBQ sauce, chicken, and red onion. - Prepare pizza dough through step 5, including preheating the oven to 475°F (246°C). Cover the shaped dough lightly with plastic wrap and allow it to rest as the oven preheats.
- To prevent the pizza toppings from making your pizza crust soggy, brush the shaped dough lightly with olive oil. Using your fingers, push dents into the surface of the dough to prevent bubbling. Top the dough evenly with 1/3 cup BBQ sauce. Toss the cooked chicken with the remaining BBQ sauce, then scatter all around the pizza. Add the cheeses and red onion.
- Bake pizza for 12-15 minutes. Remove from the oven and top with fresh cilantro, if desired. Slice hot pizza and serve immediately.

- Preheat oven to 400 degrees. Coat a (12-cup) regular muffin pan with cooking spray.

- Preheat the oven to 425˚F.
- Spread the pizza crust into a thin even circle. Use cooking spray and corn meal under crust on a pizza pan to make sure it doesn't stick.

- First, let the Whole Foods pizza dough rise by setting it out on the counter for 30 minutes up a few hours before working with it. If you don’t have time to let it rise this long, that’s okay - but you want it to basically be bursting through the bag of dough so it’s easy to stretch.
- Preheat the oven to 450 degrees F. Add parchment paper to a large rimmed sheet pan. Add 2 tsp of olive oil to the pan, and brush it with a pastry brush to spread the olive oil on the bottom and sides of the pan. Set aside.
- Stretch the dough from Whole Foods by adding 1 tbsp flour to a large cutting board. Add the raw Whole Foods pre-made dough on top of the flour, then flip to coat each side with flour. Stretch the dough by pinching the outside in a circular motion to spread it out. Then stretch the inside of the pizza dough by pushing it against the cutting board from the center to the edges of the dough. Another method I often use is with my knuckles. To do this, put your knuckles under the half-stretched pizza dough and pull your hands outwards from the center. Use whatever methods to stretch the dough that work best. One other tip I have is to add a light dusting to the dough as you stretch it out, which will help it keep the larger stretched out shape. If dough tears, don’t pull it so much and cover the holes. When dough has stretched to about the size of the pizza tray, transfer it to the sheet pan. If the dough will stretch further, push it to the outside of the tray.
- Bake the naked pizza dough without toppings in the oven at 450 F for 7 minutes. During this time, prep toppings.
