1 medium red onion, sliced
1 tube (13.8 ounces) refrigerated pizza crust
3/4 cup barbecue sauce
2 cups shredded cooked chicken breast

2 jalapeno peppers, seeded and minced
1 teaspoon paprika
1 teaspoon garlic powder

Steps:

  • Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until softened. 3 slices thick cut applewood smoked bacon
1 1/2 pounds chicken breast, cut into bite sized chunks
1/2 c onions, chopped
1 package McCormick Smoky Applewood BBQ Chicken with Bacon Skillet Sauce
1 1-pound package pizza dough
8 oz of fresh mozzarella OR 1 1/2 c of shredded
1 stalk green onion, thinly sliced on diagonal

Steps:

  • Preheat oven to 425 F. Remove pizza dough from the refrigerator to get to room temperature while you prepare the toppings. Cut bacon into ½ inch pieces. Cook over medium high heat in a skillet until crispy. Drain onto paper towels and set aside. Drain bacon fat from skillet except for 1 Tablespoon (or enough to coat bottom of the pan). Cook chicken over medium high heat until cooked through, turning as needed. This will take about 10-15 minutes, depending on how big your chicken pieces are. Once chicken is cooked through, add McCormick Smoky Applewood BBQ Chicken with Bacon Skillet Sauce. Heat until sauce is warmed, about 2-3 minutes. On a greased cookie sheet, gently stretch the dough out until it's about ½" thick. The key is to be patient and use the dough's weight to stretch it out. If you try to work it too quickly, it won't keep its shape. It'll just snap back. You can make the pizza rectangular or round. It's up to you. Once you're happy with your dough, start adding the toppings. Start with the BBQ chicken and its sauce. Make sure to spread the sauce around as evenly as you can. Top with cheese, then the bacon. Bake pizza for 10-15 minutes until the cheese has started to brown. Garnish with sliced green onions before slicing and serving.

1 tablespoon sesame oil
1 skinless, boneless chicken breast half
¼ cup barbeque sauce, divided
½ cup marinara sauce
1 (16 ounce) package pre-baked pizza crust
1 cup shredded mozzarella cheese
⅓ cup thinly sliced red onion
2 tablespoons chopped fresh cilantro

Steps:

  • Heat the sesame oil in a skillet over medium heat. Place the chicken breast in the skillet, and top with 1 tablespoon barbeque sauce. Cook 10 minutes, turn, and top with 1 tablespoon barbeque sauce. Continue cooking 10 minutes, until juices run clear. Cool slightly, and cut into chunks.
  • Preheat oven to 425 degrees F (220 degrees C).

18-20 ounces pizza dough
1 8 ounce chicken breast cut into bite-sized chunks (fully cooked)
6-7 1/4 inch slices fresh mozzarella (8-ounce ball)
3-4 slices thick-cut bacon, chopped
1/2 cup BBQ sauce (I like Sweet Baby Ray's)
1/2 yellow onion, thinly sliced
1/3 cup shredded parmesan cheese
1/3 cup flour (for crust)
2 tablespoons butter
pinch of salt

Steps:

  • Preheat the oven to 500°F and place the pizza stone in the oven and let preheat for one hour.
  • Add the onion slices and butter to a saucepan on low heat. Cook until onions are tender and golden brown, about 20-30 minutes. Remove from pan and set aside.
  • Meanwhile, cut the chicken into small, bite-sized pieces. Cook with a little oil on medium heat in the same saucepan used for the onions. Cook until golden and fully cooked through, remove from the heat, and toss with some BBQ sauce until lightly coated. Set aside.
  • Roll out the dough into a 12-inch crust. Sprinkle evenly with a little salt.
  • Place a small handful of flour onto the pizza peel and spread evenly to prevent the dough from sticking to the pizza peel. Make sure the dough is well floured and doesn't feel 'sticky' to the touch.
  • Transfer the dough onto the peel. Evenly coat the top with BBQ sauce, leaving a 1-inch crust. Add the chicken, onions, bacon, and fresh mozzarella in that order. Finish with a sprinkle of parmesan cheese.
  • Slide the finished pizza onto the pizza stone and bake for 10-15 minutes or until the crust is golden brown. Be sure to carefully watch the oven because all ovens will cook at different rates. Sometimes it will only take 10 minutes to fully cook. Remove from the oven, let cool, and serve.

My new favourite pizza recipe - soft, yet crispy pizza dough topped with tomato sauce with a hint of barbecue flavour, chicken, smoked bacon and melted cheese.

A double batch of pizza dough - enough for 2 x 10" pizzas
1 tbsp olive oil
½ onion
400 g can chopped tomatoes
1 clove garlic
2 tbsp worcestershire sauce
1½ tbsp white wine vinegar
1 tbsp soft brown sugar
Salt and pepper
1 chicken breast (roughly 200g - can be already cooked)
4 rashers smoked streaky bacon - can be already cooked
50 g cheddar cheese
50 g mozzarella - I prefer to use ready-grated for simplicity

Steps:

  • Make the pizza dough.
  • finely chop the onion (½ onion) and crush the garlic (1 clove).
  • Heat half of the olive oil (½ tbsp) in a saucepan and add the chopped onion. Cook on a low heat for 5 minutes, stirring occasionally to prevent it burning.
  • After 5 minutes, add the garlic, chopped tomatoes (400g can), Worcestershire sauce (2 tbsp), white wine vinegar (1½ tbsp) and soft brown sugar (1 tbsp) and cook on a low heat for about 20 minutes until all of the liquid has reduced, stirring occasionally to prevent burning. Season with salt and pepper.
  • While the sauce is reducing, pre-heat the oven to 220°C/200°C fan. Place two baking trays to heat in the oven.
  • While the sauce is reducing you'll also need to cook the chicken and bacon (unless already cooked). Cut the chicken (1 breast) and bacon (4 rashers) into bitesized pieces.
  • Heat the remaining olive oil (½ tbsp) in a frying pan and add the chicken. Brown for a minute and then add the bacon. Cook the chicken and bacon for a further 5 minutes until cooked through.
  • Grate your cheese (50g cheddar, 50g mozzarella) unless using ready-grated.
  • Knock the air out of your pizza dough and roll it out onto two sheets of greaseproof paper or silicon baking sheet.
  • Thinly spread the tomato sauce over the two pizzas.
  • Sprinkle over the cooked chicken and bacon.
  • Sprinkle over the grated cheese.
  • Remove the baking trays from the oven and carefully transfer the pizzas (on the greaseproof paper) onto the hot trays.
  • Put the pizzas into the oven and cook for 12 minutes until golden brown (you may need to swap the pizzas around during cooking to ensure they cook evenly, and you may find that they take a little longer than 12 minutes depending on where they are in the oven).

¼ cup thinly sliced red onion
⅔ cup shredded cooked chicken
⅔ cup halved pear or small cherry tomatoes
⅔ cup chopped, cooked bacon
1 cup shredded smoked Gouda cheese

Steps:

  • Preheat the oven to 450 degrees F.
  • Sprinkle the cornmeal on a baking sheet.
  • Roll out your pizza dough on a lightly floured mat- into a circle or a rectangle. Move it to the baking sheet. Brush it with oil, then bake 8 to 10 minutes on the bottom rack, just until golden brown. Remove the pan from the oven.
  • Spread the sauce on the partially baked crust. Sprinkle toppings, as desired, ending with the cheese.
  • Bake on the middle rack for an additional 7 to 8 minutes, just until the cheese is melted and hot and bubbly. Remove from the oven and let sit for a few minutes before slicing.

1 1/4 c KC Masterpiece® Kansas City Classic barbecue sauce (divided)
3 pieces cooked bacon (chopped)
1/3 c cilantro (chopped)
3 c Mozzarella Cheese
garlic salt (with parsley flakes)

Steps:

  • Begin by cubing your chicken and tossing it 1/2 cup barbecue sauce.
  • Bake Pizza Dough for 5 minutes at whatever temperature the instructions say on the pizza dough packaging.
  • While Pizza Dough is still warm, add 1/2 cup pizza sauce for the sauce (add more or less if desired).
  • Add cheese, barbecue chicken, cilantro and bacon to your pizza. Sprinkle with garlic salt.
  • Bake pizza an additional 8-10 minutes or until cheese is melted and dough is golden brown.

1 tablespoon vegetable oil
Salt and pepper
One 13.8-ounce can refrigerated pizza dough (recommended: Pillsbury)
1 cup BBQ sauce
2 cups shredded mozzarella cheese
1 cup green apple, sliced
1/4 cup real bacon bits
2 green onions, sliced

Steps:

  • Set up grill for direct cooking over medium-high heat. Oil grate when ready to start cooking.
  • Brush chicken with vegetable oil, season with salt and pepper. Place chicken on the grill and cook until done, about 2 minutes per side. When done, slice into 1-inch pieces, reserve.
  • Spray a perforated disposable cookie sheet with nonstick cooking spray. Carefully remove pizza dough from can. Unroll dough and place on cookie sheet on the grill. Let cook 2 minutes and turn pizza over.
