BBQ BACON WRAPPED CHICKEN BITES
Sweet smoky bacon wrapped around tender chicken bites is the perfect appetizer.

Steps:
- Preheat oven to 375 degrees F.
- Cut chicken into 1 inch or bite sized cubes. Cut the bacon package in thirds.
- Take one cut strip of bacon and lay a cube of chicken on top. Roll the bacon/chicken up and secure with a toothpick.
- Combine the BBQ sauce with the brown sugar. Brush the roll ups with the mixture (see note below).
- Place the chicken/bacon rolls on a parchment lined baking sheet and bake for 10 minutes.
- Turn them over, baste with remaining BBQ sauce and place in oven for another 10-15 minutes or until cooked through.
- If you'd like a crispier finish you can broil for a few minutes before serving.

- Line a large baking sheet with aluminum foil and lightly spray with cooking spray.
- Wrap each piece of cubed chicken with a small strip of bacon. Secure with a toothpick and place on your baking sheet. Brush with desired amount of BBQ sauce.
- Bake at 350 for 45 minutes - 1 hour. Remove from oven and add more BBQ sauce as desired. Serve warm.

- Mix Seasoning, vinegar and oil in large resealable bag. Add chicken; turn to coat well. Refrigerate 30 minutes.
- Meanwhile, place 2 layers of paper towels on a microwavable plate. Place 12 pieces of bacon in single layer on paper towels. Cover with 1 layer of paper towel. Microwave on HIGH 4 minutes or until bacon halfway cooked. Repeat with remaining bacon. Remove chicken from marinade. Wrap a piece of bacon around each piece of chicken. Thread 1 piece onto each skewer. Discard any remaining marinade.
- Grill skewers over medium-high heat 8 to 10 minutes or until chicken is cooked through, turning occasionally.

- Preheat oven to 400°. Cut bacon crosswise into thirds. Place bacon on a microwave-safe plate lined with paper towels. Cover with additional paper towels; microwave on high 3-4 minutes or until partially cooked but not crisp., Place chicken in a small bowl; sprinkle with steak seasoning and toss to coat. Wrap a bacon piece around each chicken cube; secure with a toothpick. Place on a parchment-lined baking sheet., Bake 10 minutes. If desired, add horseradish to barbecue sauce; brush over wrapped chicken. Bake until chicken is no longer pink and bacon is crisp, 5-10 minutes longer.

- Cook bacon to crisp according to package instructions Crumble the bacon into small pieces and set aside.
- Pre-heat the oven to 400. Line a baking sheet with parchment paper and set aside. Use a pastry brush to brush the outsides of both sides of the chicken breasts with the olive oil and place them on the prepared baking sheet. Sprinkle lightly with salt and pepper and place in the oven. Bake for 15 minutes. Remove from the oven and flip each breast over. Split the barbecue sauce equally into two small dishes. Using the pastry brush again (wash it in between!), paint the chicken breasts using half of one dish of the barbecue sauce. Flip the breasts back over and paint the top side with the remaining barbecue sauce from that dish. Place back in the oven for another 5 minutes. Wash the brush thoroughly again before step three.
- Remove the baking sheet from the oven and lift the parchment paper holding the breasts off of the sheet and set aside. Re-line the sheet with aluminum foil or more parchment and transfer the chicken breasts back onto the freshly lined pan. Discard the parchment paper holding any remaining oil/liquid. You may want to check now to make sure the chicken is cooked through (or almost). Use the remaining dish of barbecue sauce to slather the tops of each chicken breast one last time. Sprinkle the cheese over top of each breast and follow with the bacon pieces. Place back into the oven and bake for another 3-5 minutes until cheese is melted.
