BBQ BAKED BEANS
BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

- Add pinto beans to a large pot and cover with cool water (at least a few inches above the beans as they will expand). Soak for at least 6 hours or overnight* uncovered at room temperature. Once beans are soaked, drain and set aside.
- Heat your large pot over medium heat. Once hot, add oil (or water), diced onion, and bell pepper. Sauté for 3-4 minutes, stirring frequently, or until onion is soft and translucent.
- Next, add drained beans and vegetable broth and cover with water about 1 inch over the top, as the beans will expand while cooking. Bring to a low boil. Then reduce heat to low or medium-low so it simmers but doesn’t boil. Cook uncovered for 1 hour or until beans are tender.
- Once the beans are tender and cooked through, add remaining seasonings: Mustard, tomato paste, coconut sugar, salt, pepper, chili powder, liquid smoke, and hot sauce (optional). Stir to coat and cook on low for 10-15 more minutes to let the flavors meld.

- Cook. You can cook on a stovetop, in your indoor oven, in your smoker under the meat, or on your grill for 2-zone cooking.
- On the smoker or grill. Over the hot part of the grill, on the sideburner, or indoors on your stovetop, warm a 9 x 13" pan and add the bacon. Cook the bacon until brown on both sides, but remove it before it is hard and crunchy. Pour off all but 1 tablespoon of the fat and save it in the fridge for another day.
- Add the onion and cook until it is limp, but not brown. The bacon residue on the bottom of the pan may get really dark. If this happens, add a few tablespoons of water to deglaze the bottom, and scrape off this flavorful fond with a wooden spoon. As the water evaporates, the onions will fry and sizzle.
