- Preheat oven to 375°. In a Dutch oven, bring a small amount of water to a boil. Peel onions; using a slotted spoon, place onions in boiling water. Cook for 4-6 minutes more until softened; remove and let stand until cool enough to handle. Cut a 1/4-in. slice off the top of each onion. Remove center, leaving a 1/2-in shell. Chop centers and tops of onions; set aside. In a skillet, cook bacon until crisp; remove to paper towel to drain. In the drippings, saute chopped onion until tender. Stir in bread crumbs and parsley. Add the butter and mushrooms; cook until mushrooms are tender. Add bacon, salt, pepper and nutmeg. Stuff onion shells; place in an ungreased shallow 1-qt. baking dish. Pour broth around onions. Bake, uncovered, until tender, 45 minutes, basting frequently during the first 15 minutes. If desired, sprinkle with parsley.

STUFFED ONIONS WRAPPED IN BACON RECIPE
These bacon-wrapped stuffed onions are insanely good, a perfect beef meatball stuffed inside an onion, then wrapped in bacon.

Steps:
- Top and tail each onion and then remove the skin.
- Core each onion. I prefer the method of using a sharp knife as a 'drill', poke into the centre and twist. Repeat from the other cut side, then push with your thumb, the center should pop out.
- Then use your fingers to work around the remaining onion until you leave a shell just 2-3 onions layers deep.
- Coarsely chop a third of the removed onion and discard the rest. (Don't throw it away though, freeze it for stocks, stews or soups).
- Mix the chopped onion with the minced beef.
- Dice the chilli pepper as finely as you can and add it to the beef.
- Throw in the Worcestershire sauce, thyme, fennel seeds, salt and pepper, then mix well.
- Stuff the onions with the minced beef mixture.
- Wrap each onion with 2 strips of streaky bacon.
- Take half of the BBQ sauce and brush it over the bacon wrapped onions.
- Add the onions to a hot grill and cook for an hour in an indirect heat 'zone' at around 160°C-170°C or 320°F-340°F.
- Brush with the remaining BBQ sauce and move to the direct heat section of the BBQ for a final 5 minutes.
- Place the onions on a baking tray and place in a preheated oven at 170°C or 340°F and cook for an hour.
- Remove the onions from the oven and then turn it up as hot as it will go, flip it to fan mode if you have that option.
- Brush the onions with the remaining BBQ sauce and cook for a final 7-10 minutes or until nicely coloured.

BBQ BACON ONION-WRAPPED MEATBALLS RECIPE BY TASTY

- Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
- In a large bowl, mix the ground beef, garlic powder, onion powder, pepper, salt, bread crumbs, garlic, diced onion, parsley, egg, ketchup, mustard, Worcestershire sauce, and honey until evenly combined. Set aside in the refrigerator.
- Cut the 4 onions vertically on cutting board. Remove the stem and root from each piece. The layers of each onion will act as "shells" to wrap around each meatball.
- Remove the meatball mixture from the refrigerator and pinch off golf ball-sized pieces of meat. Press a small cube of cheddar cheese into the middle of each meat portion, then form into a meatball shape with your hands.
- Wrap each meatball in 2 onion "shells", then with 2 strips of bacon, and transfer to the prepared baking sheet.
- Brush the meatballs with barbecue sauce, covering them completely.
- Bake for 45 minutes, brushing again with BBQ sauce halfway through, until deep brown with a nice crust on the outside.

BACON, ONION AND CHEESE STUFFED BURGER
Steps:
- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

- Cook and stir bacon in medium skillet on medium heat until crisp. Meanwhile, cut thin slice off top of each onion; discard top. Use small spoon to scoop out centers of onions, leaving 1/2-inch-thick shells. Finely chop removed onions.

- Instructions First start out by cutting 4-5 onions in half (top to bottom). Depending on the number of balls you want, you can use the smaller layers, but the larger layers you will be packing more meat with. But I used a variety of the small, medium and large layers of the onions. (Refer to image below) Once you have the layers of onions ready, begin by prepping your ground beef mixture in a large bowl. Add in 3 cups of bread crumbs, 1/4 cup of OO or EVOO (doesn't matter which), your minced garlic or garlic powder/salt, 1 large egg, and the BBQ sauce. Mix very well with your hands or mixer. (Refer to image below) Take your onion layer and stuff it with a palm amount of meat into a ball, then using another onion layer the same size to cover the meat. (Refer to image below) Wrap each onion ball with a strip of bacon. Be sure you get bacon with less sodium, because the salt is actually what makes the bacon shrink, and I have the best luck doing these with less sodium bacon. Take a strip of bacon and start by wrapping the onion (you can use more than one strip if needed), but as long as you end with the onion able to sit on the end then that is better luck for the bacon to stick together. (Refer to image below) Baste your bacon onion balls with more BBQ sauce. Preheat the oven to 375F and begin by baking the balls for 35 minutes. Baste more BBQ sauce when needed in between. Turn up the heat to 400F for roughly 10-15 more minutes to caramelize the bacon. Allow to cool for about 10 minutes before serving. Serve with pasta or alone for a great meal!

- Preheat an outdoor grill for medium indirect heat and lightly oil the grate.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
- Meanwhile, cut a thin slice from the top of each onion; discard tops. Use a small spoon to scoop out the centers of the onions, leaving 1/2-inch-thick shells. Finely chop and reserve removed onions.
- Remove cooked bacon from the skillet using a slotted spoon, reserving 1 tablespoon drippings in skillet. Drain bacon on a plate lined with a paper towel. Add 1 cup reserved chopped onions to the skillet. Cook over medium heat until onions are crisp-tender, about 5 minutes. Add serrano chiles and garlic to the skillet and cook 2 minutes. - Cut onions in half crosswise, peel and remove centers leaving 2 or 3 layers of onion. Set aside.
- Finely chop enough onion centers to make 1 cup.
- Combine chopped onion, ground beef, egg, salt, 1/4 cup bbq sauce and bacon.
- Mix well and make 6 large meatballs.
- Fit meat mixture into 6 onion halves, mounding it up so that the second half of onion fits over it.
- Place stuffed onions in a shallow baking pan.
- Bake in a 350° oven for 45 to 60 minutes. Baste with remaining bbq sauce during the last 25 minutes of cooking time.
- Onions may be cooked on grill. Wrap in foil and cook over hot coals for 30 minutes. Carefully open foil packets and baste onions with bbq sauce. Grill for another 25 minutes or until onions are tender and meat is done. Makes 6 servings.
- *You can also bake the halves and not put them together. Top them with a slice of cheddar at the end if desired.

This is my version of Steve Raichlen's onion dish that he grills directly on the rack of a Weber® grill. I do mine in the oven. This is a great side or main dish. Add as a side dish to steak or serve with a summer salad and enjoy as the main dish.

- Preheat the oven to 425 degrees F (220 degrees C). Coat an oven-proof glass baking dish with cooking spray.
- Peel outer skin from onions and discard. Cut off the bottom of each onion so they will stand upright. Cut off the top of each onion and scoop out the inside, leaving a thick shell and bottom intact, and reserving the extra pieces of onion. Set onion shells in the prepared baking dish.
- Chop reserved onion pieces and set aside. Combine 4 teaspoon chopped onion, 8 teaspoons chopped bacon, and 4 teaspoons BBQ sauce in a small bowl. Scoop 1/4 the mixture into 1 of the onion shells and return it to the baking dish. Repeat to fill remaining 3 onion shells. Use your finger tip to loosen each layer of the onion and then peel them away so that you’re left with onion shells. Continue until you get to the center of the onion that’s about 1-inch in diameter. Repeat for the remaining 2 onions.
- To prepare the ground beef, mix in 1/4 cup of the BBQ sauce, sea salt, and pepper until it’s evenly combined. Spoon and press the filling into each of your onion skins, until all are filled.
- Wrap each onion bomb with one piece of bacon (or 1/2 piece of bacon for the smaller bombs) and secure with a toothpick. Place the prepared bombs on a rimmed baking sheet. Note: for extra crisp, place the bombs on a wire rack that’s elevated off the baking sheet.
