Creamy Crawfish Spread with pickled okra. Serve it on toasted baguette slices for a fabulous southern appetizer.

2 tablespoons butter
3/4 cup finely chopped red bell pepper
1/2 cup finely chopped sweet onion
1 clove garlic (minced)
2 teaspoons cajun seasoning
4-5 dashes tabasco sauce
1/2 pound frozen crawfish tails (defrosted and drained of liquid)
1 8-ounce package cream cheese (softened)
1/4 cup grated Parmesan cheese
3 green onions (sliced)
4 pickled okra (thinly sliced)

Steps:

  • Heat butter in a large nonstick skillet over medium-high heat. Add bell pepper and onion and saute until softened, 3 to 4 minutes.
  • Add garlic and cajun seasoning and saute for 1 minute. Stir in tabasco and crawfish tails. Cook 2-3 minutes to thoroughly warm the crawfish.
  • Turn heat down to medium-low and add cream cheese and Parmesan cheese. Stir until cheeses are melted and everything is combined well.
  • Remove from heat and stir in green onions and pickled okra.

1 package (8 ounces) cream cheese, cubed
4 tablespoons butter, divided
1 large onion, chopped
2 celery ribs, chopped
1 large green pepper, chopped
1 pound cooked medium shrimp, peeled and deveined
2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup cooked rice
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon garlic salt
3/4 teaspoon hot pepper sauce
1/2 teaspoon cayenne pepper
3/4 cup shredded cheddar cheese
1/2 cup crushed butter-flavored crackers (about 12 crackers)

Steps:

  • Preheat oven to 350°. In a small saucepan, cook and stir cream cheese and 2 tablespoons butter over low heat until melted and smooth. , In a large cast-iron or other ovenproof skillet, saute onion, celery and green pepper in remaining butter until tender. Stir in shrimp, crab, soup, rice, mushrooms, garlic salt, pepper sauce, cayenne and cream cheese mixture., Combine cheddar cheese and cracker crumbs; sprinkle over top. Bake, uncovered, until bubbly, 25-30 minutes.

1 lb cod fish fillet
salt & freshly ground black pepper, to taste
1 tablespoon butter
1 teaspoon garlic, chopped
1 tablespoon creole seasoning
3/4 cup half-and-half
1/2 cup crawfish, cooked
1/2 cup shrimp, cooked
fresh parsley leaves, chopped (optional)
green onion, chopped (optional)

Steps:

  • Preheat a grill or grill pan and spray with cooking spray.
  • Season fish with salt and pepper and place fish on grill; cook for 5 to 6 minutes on each side or until flakey.
  • Sauce:.
  • Melt butter in a large skillet over medium heat.
  • Stir in garlic and Creole seasoning.
  • Add 1/2 & 1/2.
  • Stir until mixture is reduced by half, about 5 minutes.
  • Add crawfish and shrimp stirring until just heated through.
  • Season with salt and pepper, to taste.
  • To serve, spoon Crawfish Bayou Sauce over center of fish and garnish with parsley and green onions.

1 cup finely chopped crawfish tails
1/2 teaspoon garlic salt
1/2 teaspoon cayenne pepper
1 (8-ounce) package cream cheese, softened

Steps:

  • Melt butter in skillet over medium-high heat. Add seasoning blend and crawfish; sauté 2-3 minutes while stirring. Add garlic salt and pepper. Turn off heat and add cream cheese, stirring till mixed. Serve warm or chilled with dry toasted bread squares or hearty crackers. Editor's Extra: Crawfish tails are available frozen in most supermarkets. Fun Fact: Frozen seasoning blend is a mixture of chopped onions, celery, and bell pepper. 4 (7 to 9-ounce) fresh Pacific cod fillets (ling, rock, true cod)
Salt and freshly ground pepper
1 tablespoon butter
1/3 cup chopped green onions
1 teaspoon chopped garlic
1 tablespoon Creole seasoning
3/4 cup heavy cream
3/4 cup crawfish, cooked (can substitute cooked shrimp)
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat a grill or grill pan and spray with cooking spray. Season fish with salt and pepper and place fish on grill; cook for 5 to 6 minutes on each side or until flakey.
  • Meanwhile, make sauce: melt butter in a large skillet over medium-high heat. Stir in green onions, garlic, and Creole seasoning. Add cream and lower heat to medium. Stir until mixture is reduced by half, about 5 minutes. Add crawfish and stir for about 30 seconds or until just heated through. Season with salt and pepper, to taste.

1 lb cooked crayfish tail
1/2 cup butter or 1/2 cup margarine, divided
1 (8 ounce) package cream cheese
1 large onion, chopped
2 stalks celery, sliced
1 medium green bell pepper, chopped
1 lb imitation crabmeat, chunks chopped
1 can cream of mushroom soup
1 (4 ounce) can mushroom stems and pieces, drained
1 tablespoon minced garlic
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon hot pepper sauce
3 cups hot cooked rice
1 cup shredded sharp cheddar cheese
1/2 cup fine dry breadcrumb

Steps:

  • In a saucepan, add 6 tablespoons butter and cream cheese.
  • Heat on low until the butter is melted and cream cheese is softened, stirring frequently to combine mixture; set aside.
  • In a big pot, melt 2 tablespoons butter.
  • Add the onion, celery, and bell pepper; cook, stirring frequently, for 5 minutes.
  • Add the shrimp and cook/stir for 4-5 minutes or until shrimp are pink.
  • Add in cream cheese mixture, crawfish, imitation crabmeat, mushroom soup, mushrooms, garlic, thyme, oregano, basil, and hot sauce; stir to combine.
  • Add in the rice; stir to combine.
