BLEND OF THE BAYOU
This recipe is slightly different that the other recipe that is posted for Blend of the Bayou. Here in Louisiana there are several versions of this dish. This is the one that is served at a local restaurant in their plate lunches on Friday. This dish freezes well and everyone I've served it to really enjoys it.

Steps:
- Preheat oven: 350°F.
- Melt cream cheese and butter in a double boiler or microwave.
- In a large skiller, saute onion, bell pepper, celery and shrimp in 2 tablespoons butter.
- In a large mixing bowl add all other ingredients.
- Pour into a 13 x 9 inch glass casserole dish.
- Top with sharp grated cheese and then cracker crumbs (if you would like, you can freeze the dish at this point to serve at a later date).
- Bake at 350F for 15 to 20 minutes (or until bubbly).
- Serve warm.

- Preheat oven to 350°. In a small saucepan, cook and stir cream cheese and 2 tablespoons butter over low heat until melted and smooth. , In a large cast-iron or other ovenproof skillet, saute onion, celery and green pepper in remaining butter until tender. Stir in shrimp, crab, soup, rice, mushrooms, garlic salt, pepper sauce, cayenne and cream cheese mixture., Combine cheddar cheese and cracker crumbs; sprinkle over top. Bake, uncovered, until bubbly, 25-30 minutes.

BRUNCH ON THE BAYOU
This is an absolutely FANTASTIC brunch recipe. I typically serve it when family is visiting for the holidays as the majority is prepared the night before. Everyone loves it and ALWAYS wants the recipe!

Steps:
- Place sausage in a skillet over medium-high heat. Cook, stirring constantly until evenly browned. Drain grease, and set aside.
- Spread bread pieces in the bottom of a 9x13 inch baking dish. Drizzle melted butter over the bread pieces, then sprinkle in the cooked sausage. Cover with shredded cheese. In a medium bowl, whisk together the eggs, milk, white wine, Dijon mustard, and green onions. Season with black and red pepper. Pour the egg mixture over everything in the baking dish. Cover, and refrigerate 8 hours to overnight.
- Remove the dish from the refrigerator 30 minutes prior to baking to allow it to come to room temperature. Preheat the oven to 325 degrees F (165 degrees C).
- Cover the dish with aluminum foil, and bake for 30 minutes in the preheated oven. Then uncover, and bake for an additional 30 minutes. Remove from the oven, and spread sour cream over the top. Sprinkle with Parmesan cheese. Return to the oven for an additional 10 minutes, or until cheese is starting to brown slightly.

BLEND OF THE BAYOU
This is a popular casserole in Monroe, Louisiana. Thurman's is quite famous for it. The first time I ate it, a nurse that I worked with brought it to work. This is my take on the recipe.

Steps:
- 1. Melt cream cheese and 1 stick butter in microwave. Whisk together until smooth. Set aside.
- 2. Saute onion, green pepper, and celery in 2 tablespoons melted butter until soft.
- 3. Add shrimp and saute until pink.
- 4. Whisk soup and seasonings into cream cheese mixture.
- 5. Add mushroom pieces, crabmeat and rice. Mix well.
- 6. Prepare 9x13 inch casserole dish by spraying with nonstick spray.
- 7. Pour mixture into prepared casserole dish.
- 8. Combine cheese and cracker crumbs. Top the casserole with this mixture.
- 9. Bake in a preheated 350 degree oven for about 20 minutes or until bubbly.
- 10. This casserole freezes well before it is cooked and can be baked at a later date.
BLEND OF THE BAYOU
This is a delicious recipe we found in a "Taste of Home" magazine. We recommend you use smaller shrimp, or slice the bigger ones in half to make them more manageable for eating. If you left out the shrimp, it would make an excellent hot party dip or spread.

HAWAIIAN SWEET BREAD IN MACHINE (SALLYE)

- 1. IMPORTANT: PLACE INGREDIENTS IN BREAD PAN IN THE EXACT ORDER LISTED
- 2. Measure flour and salt and set aside. For a lighter textured bread, sift flour mixture
- 3. Pineapple juice and milk should be lukewarm. you can warm in microwave for 20 to 30 seconds. Slightly beat egg and mix with pineapple juice and milk. Add honey and stir to blend Pour mixture gently into bread pan, do not splash.
- 4. Add flour mixture carefully over top of liquid, making certain to cover all the liquid with flour
- 5. Cut butter into 4 equal pieces and place one piece in each corner of pan on top of flour
- 6. Make a well in the middle of the flour mixture and pour the yeast into it.
- 7. Set cooking cycle for basic or rapid with light or medium crust (depending on your preference). Press start and smell the wonderful odors permeating your house.
- 8. Allow to completely cool after removing from pan before you wrap or bread will get soggy and/or rubbery.

This is a traditional North Italian bread that is served during the holidays. If you don't like the dense and dry taste of traditional fruit cakes, try this one.

- 1. Place ingredients in bread machine in exact order as listed in ingredients.
- 2. Set bread machine to basic/white cycle and medium crust. •••Do not use delay cycle.
- 3. Check dough after it has mixed well. If it is too dry, add liquid 1 teaspoon at a time until a soft, smooth ball forms around the blade. If it is sticky, add 1 teaspoon flour at a time until smooth ball forms around the blade.
- 4. Start bread machine and cook until cycle is complete.
- 5. Remove from bread machine onto serving platter and drizzle your choice of glaze over it (optional).
