Obatzda (German Cheese Dip) image

Obatzda, otherwise known as German beer cheese dip, is so delicious and creamy. It's the perfect dip to make the night before a get-together. -Beate Trinkl, Einsbach, Germany

Number Of Ingredients 7

2 rounds (8 ounces each) Camembert cheese, rind on, sliced
1 package (8 ounces) cream cheese, softened
1 medium onion, finely chopped
1 teaspoon paprika
1/2 teaspoon caraway seeds
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small bowl, mash Camembert cheese with a fork to desired consistency. Beat in cream cheese, onion and seasonings. If desired, sprinkle with additional caraway seeds.

Steps:

  • Blend the liverwurst and sour cream until smooth and creamy. Add all the other ingredients, blending well. May be served at room temperature or chilled. Makes about 1 ¾ cups of dip. SUGGESTED DIPPERS: Cucumbers, Cherry Tomatoes, Radishes, Asparagus, Cocktail Rye Bread, Lavasch Crackers

This is a spread I have been making for many years. It goes great with crackers (Saltines are my favorite) or with thinly sliced cocktail breads. (I'm not really sure why it was ever called a "dip"... it is definitely a "spread"). It is a very quick recipe and super easy to make. Can be made a day ahead and refrigerated for ease of serving at a party, just let sit out of the fridge for about 20 minutes before serving to soften a bit. Enjoy!

1/2 cup minced onion
4 ounces cream cheese (softened)
1 lb braunschweiger sausage (I like Dubuque, but your favorite brand will work)
1/4 teaspoon black pepper
1 tablespoon vegetable oil
crackers (your favorite) or cocktail bread, for serving (your favorite)

Steps:

  • Heat oil in small fry pan and saute the minced onions 8-10 minutes over medium-low heat, stirring frequently until softened. Remove from heat and drain. Set aside.
  • Remove Braunschweiger from its wrapper and mix it in a bowl with the softened cream cheese. Once combined well, add in sauteed onion and black pepper.
  • Serve along side your choice of crackers or cocktail bread (or even try some raw veggies with it).
  • Enjoy!
