German Pancakes Recipe image

Here is a tasty recipe that is great for busy school days, leisurely weekends, or special holiday brunches -- German Pancakes! Make them a tradition in your family.

Provided by Life With Lorelai

Categories     Breakfast

Time 7m

Number Of Ingredients 8

1-1/4 Cup - Milk
4 - Eggs
1 Cup - Flour
1/4 Teaspoon Salt
Butter
Fillings of Choice: Cinnamon and Sugar; Jams; Jellies, Fruit, etc.
Powdered Sugar (Optional)
Syrup (optional).

Steps:

  • Crack open the Eggs into a bowl.
  • Add Milk to eggs, beat well.
  • Mix Flour and Salt in a separate bowl.
  • Stir flour and salt mixture into the milk and eggs gradually, until smooth.
  • The batter will be thin.
  • Heat a heavy 8-inch to 10-inch skillet and grease lightly with butter or oil.
  • Pour only enough batter to make a very thin pancake. Tip the skillet from side to side and around to help spread the pancake batter as needed.
  • Cook on one side (without flipping) until the pancake begins to blister or bubble. Flip the pancake and cook the other side until a light golden color. Do not over cook. You do not want them to get hard or crispy. NOTE: Pancakes cook very quickly, pay attention.
  • Remove from skillet and place on a board.
  • Once you have several pancakes stacked on the board, you can begin filling one at a time.
  • Brush one side only with butter.
  • Add about 1 to 2 Tablespoon(s) of your desired filling: Cinnamon and Sugar; Jam; Jelly; Fruit; etc. to the buttered side.
  • Roll pancake from one edge all the way across to the other side.
  • Place rolled pancake (or two) on a plate and dust with Powdered Sugar

GERMAN PANCAKES RECIPE

Children love to watch this grow in the oven! And it is a fantastic recipe for breakfast.

Provided by Penny Hall

Categories     Pancakes

Time 45m

Number Of Ingredients 8

6 eggs
1 c milk, room temperature
1 c sifted bread flour or all-purpose flour*
1/4 tsp pure vanilla extract
1/4 tsp ground cinnamon
5 Tbsp butter
freshly-squeezed lemon juice
powdered (confectioners') sugar

Steps:

  • 1. Makes 4 to 6 servings: *Bread flour is a high-protein flour. The high protein helps the pancake rise. All-purpose flour may be substituted but the results won't be as spectacular.
  • 2. 1. Preheat oven to 450 degrees F. NOTE: It is very important that you preheat your oven. Place oven rack on the middle rack of your oven. Place a large, heavy ovenproof frying pan or a cast iron skillet (I like to use my 10-inch cast-iron skillet), in the oven until hot and sizzling. While pan is heating, prepare your batter. NOTE: Use a shallow pan, not more than 3 inches deep (pie pans, cast iron skillets, oven-proof fry pans, baking dishes, paella pans). Like I said before, I prefer using a cast iron skillet or pan because it acts as a heat reservoir, retaining the heat and distributing it evenly. 2. In a large bowl, beat the eggs until light and frothy; add milk, flour, vanilla extract, and cinnamon; beat for 5 minutes more. The batter will be thin, but very smooth and creamy. Using a pot holder, remove the hot skillet from the oven; add the butter; tilting the pan to melt the butter and coat the skillet. . Pour the prepared batter into the hot skillet, all at once, and immediately return the skillet to the oven. 4. Bake approximately 20 to 25 minutes or until puffed and golden brown (bake until the pancake puffs up around the edges - it may puff irregularly in the center). 5. Remove from oven and serve immediately. Either bring the pancake to the table in its pan or slide it onto a serving plate. Once out of the oven, the pancake will begin to deflate. 6. To serve, cut into serving-size wedges and transfer to individual serving plates. Top with your favorite topping and serve immediately. For a classic German Pancake/Dutch Baby, sprinkle with freshly squeezed lemon juice, and dust the top with powdered sugar. Topping Ideas: Sifted powdered (confectioners) sugar Fresh applesauce with a dash of cinnamon Crushed pineapple, drained Whipped cream and sliced fresh strawberries Syrups (maple, your favorite fruit syrup, or honey) Canned pie filling, cold or warm SMALLER RECIPE: Makes 2 to 4 servings: 3 eggs, room temperature 1/2 cup milk, room temperature 1/2 cup sifted bread flour or all-purpose flour* 1/8 teaspoon pure vanilla extract 1/8 teaspoon ground cinnamon 7 teaspoons butter Freshly-squeezed lemon juice Powdered (confectioners') sugar *Bread flour is a high-protein flour. The high protein helps the pancake rise. All-purpose flour may be substituted but the results won't be as spectacular.

BAVARIAN CREAM

Bavarian Cream image

Bavarian Cream taken from my Great-Grandmother's recipe book.

Time 2h5m

Yield 8

Number Of Ingredients 8

2 tablespoons unflavored gelatin
½ cup cold water
4 egg yolks
½ cup white sugar
1 pinch salt
2 cups milk
1 teaspoon vanilla extract
2 cups heavy cream

Steps:

  • In a small bowl, stir together the gelatin and cold water. Set aside to soften. In a medium bowl, whisk together the egg yolks, sugar, and salt until smooth.
  • In a medium saucepan, bring the milk to a boil. Pour the hot milk in a steady stream into the yolk mixture, whisking constantly. Return the mixture to the saucepan and cook and stir over medium heat until the mixture coats the back of a spoon. Remove from heat and pour the custard through a strainer.
  • Stir in the softened gelatin and vanilla and stir to melt the gelatin. Allow to cool.
  • When the mixture has cooled almost to room temperature, whip the heavy cream to medium stiffness and fold it into the custard. Immediately transfer the Bavarian cream to parfait glasses, molds, or on prepared cake layers, as it will firm up quickly as the gelatin sets. Refrigerate at least one hour before serving.

AUTHENTIC GERMAN PANCAKES

Authentic German Pancakes image

Real German pancakes take only a few minutes in a non-stick pan or on a griddle. These pancakes are thin and egg-y. I find it helps to use two spatulas to help turn the pancake to prevent breakage.

Provided by Good Dinner Mom

Categories     Breakfast

Time 10m

Number Of Ingredients 6

Real butter for frying
4 eggs
1 Tablespoon sugar
1 cup all-purpose flour
1 cup whole milk
1 cup buttermilk

Steps:

  • Set aside a 12-inch non-stick skillet or electric griddle.
  • In a medium bowl, crack 4 eggs and combine well with a fork. Add the sugar and stir again.
  • Add the flour and stir just lightly until streaks of flour still visible. Slowly add the milk and buttermilk, stirring to help prevent clumps. If clumps won't go away, don't worry, this is fine.
  • Heat the pan or griddle to medium heat (or 350F degrees for electric). Make sure it's plenty hot before pouring the batter.
  • Melt enough butter to prevent sticking and to add flavor. Slowly pour batter onto pan until it reaches the size you want.
  • The egg-y batter will cook up and bubble quickly along the edges, continue cooking until just the middle is shiny, then carefully flip the pancake over. I use two spatulas to do this if the pancake is large. Alternately, you could just cook the pancake on the first side and when the middle of the pancake is no longer shiny, it's done and you can flip it onto your plate. I like both sides browned a bit so I flip them. If you flip, just cook an additional 30 seconds until the second side starts to brown lightly.
  • Serve either flat, rolled, or folded into fours. If you're wanting to serve rolled German pancakes (as crepes), keep the batter quite thin in the pan, tilting the pan to spread batter out from center.
  • These pancakes are tasty with just real syrup poured over them, or with fruit of choice and powdered sugar.

Grated zest of 1/2 orange
1 cup water
2 tablespoons freshly squeezed orange juice
1 tablespoon freshly squeezed lemon juice
1/2 pint raspberries
1/2 pint blueberries, rinsed
1/2 pint strawberries, rinsed, tops trimmed, halved or quartered, if large
3 small Granny Smith apples or other tart baking apple (about 1 1/4 pounds)
3 Bosc pears (about 1 1/4 pounds)
Juice of 1 lemon

Grated zest of 2 oranges, plus their juice
Two 3-inch-long cinnamon sticks
2 tablespoons Calvados, Apple Jack, or brandy (optional)

  • In a medium bowl, whisk together the eggs, salt, sugar, milk, vanilla, and butter. Whisk in the flour to make a smooth batter. Set aside.

  • Lower the oven to 350 degrees F. and continue baking until puffed and golden brown, about 13 to 15 minutes more. Run a knife around the edge of the skillet. Sift the confectioners' sugar over the pancake. Serve immediately in the skillet with maple syrup, marinated berries, or glazed apples and pears.
  • In a small saucepan, combine the sugar, vanilla bean and seeds, citrus zests, and water. Bring to a boil and then reduce the heat to low. Simmer very gently until syrupy, about 25 minutes. • Melt the butter in a medium skillet over medium heat. Add the sugar, orange zest, and cinnamon sticks and stir until sugar is dissolved. Add the fruit, increase the heat to medium-high, and cook, shaking the pan frequently, until glazed, about 10 minutes. Raise the heat to high, add the orange juice, and cook until the fruit is easily pierced with a paring knife, about 1 minute more. If desired, add the Calvados. If cooking on a gas burner, carefully tip the pan toward the flame to flambe the alcohol; if cooking over an electric element, hold a long match near the mixture. Swirl the pan over the heat until the flame subsides. Serve warm.

GERMAN PANCAKES RECIPE

German Pancakes Recipe image

Simple & Sweet German Pancakes are so quick and easy to prepare. They're sure to become a new favorite in your home!

Provided by Life Made Simple Team

Categories     Breakfast

Time 40m

Number Of Ingredients 8

2 whole eggs
3 egg whites (or can use 6 Tbsp of liquid egg whites)
1 cup milk
1 cup flour
1 tsp vanilla extract
1/4 tsp salt (rounded)
1 Tbsp brown sugar (packed)
3 Tbsp butter (salted and cubed)

Steps:

  • Preheat oven to 425°
  • Add the whole eggs, egg whites, milk, flour, vanilla, salt and brown sugar to a blender. Blend the batter on low for 1 minute and then scrape down the sides in case any flour is sticking to the sides. Continue to blend on low for another 2 minutes.
  • Put the butter into a 9x13 baking dish (I used glass) and place into the preheated oven while the batter rests for 5 minutes. The butter should start to boil but watch that it doesn't burn.
  • When the rest time is done, take the dish out of the oven and swirl the butter to make sure it spreads all over.
  • Give the batter a quick stir or pulse then carefully pour the batter into the dish and bake for 20 minutes. Turn the oven down to 300° and cook for an additional 5 minutes. While cooking, the pancake edges will puff up about 2 inches above the rim and then deflate when it is taken out of the oven.
  • As soon as it comes out of the oven, swirl the dish once more to distribute any melted butter left on top evenly over the pancake.
  • Serve with strawberries and powdered sugar or syrup.

CORNBREAD PANCAKES WITH FRESH STRAWBERRY SYRUP

Cornbread Pancakes with Fresh Strawberry Syrup image

These are for sure the lightest, fluffiest cornbread pancakes of all time! By partially cooking the cornmeal before cooking the pancakes, there's no gritty or bitter aftertaste that you sometimes get with uncooked cornmeal. Serve with a dollop of homemade crème fraîche or sour cream.

Provided by Chef John

Categories     Pancakes

Time 1h35m

Yield 3

Number Of Ingredients 13

1 pound fresh strawberries, hulled
½ cup white sugar
½ cup cold water
2 teaspoons fresh lemon juice
¾ cup all-purpose flour
2 tablespoons white sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
1 ¾ cups buttermilk
1 ¼ cups cornmeal
3 tablespoons unsalted butter, divided, or more as needed
2 large eggs

Steps:

  • Place strawberries in a saucepan over medium-high heat. Stir in sugar, water, and lemon juice and bring to a simmer. Lower heat to medium and cook, stirring occasionally, until strawberries are very soft, and the syrup starts to thicken, 15 to 20 minutes.
  • Remove from the stove and carefully pass through a mesh sieve into a bowl. Discard any seeds and fibrous bits that are left in the sieve. Let syrup cool for 15 minutes, then cover and store in the refrigerator until needed.
  • Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl until all ingredients are well incorporated; set aside.
  • Place buttermilk, cornmeal, and 2 tablespoons butter in a saucepan over medium heat. Stir with a whisk until butter melts and mixture starts to simmer. Once simmering, cook and stir until very thick, about 2 minutes. Remove from the heat and cool for 10 minutes.
  • Whisk eggs into the cooled cornmeal mixture until incorporated. Add the reserved flour mixture and stir with a spatula until well combined and no flour remains in the saucepan; batter will be thick but still scoopable.
  • Melt 1 tablespoon butter in a skillet over medium heat. Working in batches, scoop 1/3 cup batter for each pancake into the hot skillet and press them down with the back of a spatula to flatten out. Cook until the outside edges start to look a little dry, about 3 to 4 minutes. Flip and repeat on the other side until pancakes are cooked through, another 3 to 4 minutes. Repeat to cook remaining pancakes, adding more butter to the skillet as necessary.
  • Top warm pancakes with strawberry syrup.
