BAVARIAN APPLE TORTE

Bavarian Apple Torte image

This rich, creamy torte has always been one of my favorite autumn desserts. Mom uses the freshest apples from a local orchard and bakes this treat until the apples are crisp-tender. It tastes as good as it looks. -Alyson Armstrong, Parkersburg, West Virginia

AUTHENTIC GERMAN CHEESECAKE

Authentic German Cheesecake image

Looking for a new cheesecake recipe? Hungry for a taste of Germany? Try this authentic German cheesecake!

Provided by Cate, International Desserts Blog

Time 2h41m

Number Of Ingredients 17

1 1/2 Cups 180g flour
1 tsp baking powder
pinch of salt
2 tsp vanilla sugar (or 1 tsp of vanilla extract)
1 tbsp finely grated lemon rind
1/4 cup 50g granulated sugar
6 TBSP 85g butter
1 egg (beaten)
3 egg yolks
3/4 Cup 150g granulated sugar
2 tsp vanilla sugar (or 1 tsp extract)
6 TBSP 85g butter (room temp)
3/4 cup 170ml heavy cream
2 Cups 450g plain Quark (or Greek yogurt)
1 1/2 tsp cornstarch
3 egg whites
pinch of salt

Steps:

  • Combine sifted flour, baking powder, salt, lemon zest, sugar, and vanilla sugar or extract.
  • Cut in the cold butter. Add the beaten egg and then use your hands to form into a dough.
  • Wrap dough in plastic and chill in the fridge for an hour.
  • After the dough has chilled, form it into a disc and then roll it out on a floured surface. Shape dough into a disc again, and roll it out once or twice more. I found the dough very crumbly and hard to work with at first, but after I rolled it out twice, it became much easier to work with.
  • Roll dough out once more and then transfer to a prepared 9-inch springform pan. (See photos above for how to fold and transfer the dough to the springform pan.) Use your fingers to press the dough so that it evenly covers the bottom and all the way up the sides of the pan.
  • Beat the egg yolks, sugar, and vanilla sugar until pale. Add softened butter and continue beating until well combined. Add the heavy cream and beat again. Add quark (or Greek yogurt or pureed cottage cheese) and beat one more time until everything is thoroughly combined.
  • Beat egg whites and salt to stiff peaks in a separate bowl. Fold egg whites and sifted cornstarch into cheesecake batter.
  • Pour cheesecake batter into a 9-inch springform pan and bake on 300F for about 60 minutes. (My cheesecake needed 70 minutes.) The cheesecake is done when the edges are browned and a toothpick comes out clean. The center of the cheesecake will be a bit wiggly and it will fall as it cools - that's normal.
  • Let the cheesecake cool on the counter for an hour and then several hours in the fridge. It's best to make this cheesecake the day before you want to serve it. Enjoy!

BAVARIAN APPLE TART

Bavarian apple tart image

If our two classic favourites of applie pie and cheesecake had a baby together, then this would be their delicious creation.

Provided by stephie_kay

Time 45m

Yield Serves 8

Number Of Ingredients 15

CRUST
110g unsalted butter
70g sugar
1tsp almond extract
130g plain flour
FILLING
5 cooking apples (peeled, cored and sliced)
70gr brown sugar
1tsp cinnamon
250g cream cheese
1tbsp flour
1 egg
50g sugar
1tsp vanilla extract
crushed almonds (optional)

Steps:

  • Preheat over to 230C. Make your crust by creaming together the butter, sugar and then flour and extract. Press this as evenly as possible onto the base of a springform tin and slightly up the sides.
  • Prepare your apples by microwaving the slices on a high heat for about 3-5 minutes until softer. Toss the slices with the sugar and cinnamon and set aside to cool slightly
  • Beat the cream cheese with the sugar. Then beat in the egg, vanilla and then the flour. Pour this mixture on the crust base.
  • Place the sliced apples as decoratively (or as messy) as desired over the top (some will sink in) and place in the oven for 10 minutes.
  • Reduce the heat to 190 and leave in for 25 minutes more. Sprinkle some crushed almonds on top and leave to cool before serving.

  • In another medium bowl, beat the cream cheese and sugar together until well blended. Add the eggs and vanilla; mix well. Pour over crust and smooth the creamy layer to the edges.
  • Combine the topping ingredients and mix well. Spoon the coated apples over the cream cheese layer, taking care to even out the apple layer as much as possible. Place the springform pan on a larger baking sheet and bake the torte for 60-70 minutes, until the center is set. I gently pressed on the middle of the torte (on top of the apples) to check for doneness. When there is not a lot of “give” and the center seems mostly firm, it is finished baking. Keep in mind it will continue to set up a bit as it cools. Cool completely, cut into slices and serve.

  • 1. Preheat the oven to 350°F (175°C). Lightly grease a 9 inches (24cm) springform tin and set aside. Add the cookies to a freezer bag and crush with a rolling pin until you get fine crumbs. Add the melted and cooled butter, and salt to the bag and mix until well combined. Pour into the springform tin and press to the bottom to get one even layer. Bake for about 10 minutes. Take out of the oven and let cool down a bit. Do not turn off the oven.
  • 2. For the apple filling peel the apples, quarter and core, then cut into dices. Add the butter, brown sugar, ground cinnamon, and cardamom to a large pot and eat up until the butter has halted. Add the diced apples and mix until everything is well combined. Let simmer for about 5 minutes. Take off the heat and let cool down.
  • 3. Add the soft butter and sugar to a large bowl and mix on high speed until light and fluffy. Add the eggs one after another and mix well after each addition. Add the curd (quark) and vanilla extract to the bowl and mix in. Sift the cornstarch into the bowl and mix in. Add about 1/3 of the mixture on top of the pre-baked crust and spread evenly. Add about half of the apples on top and cover with another third of the quark filling, then add another layer of apples and finish with the remaining quark filling. Sprinkle the sliced almonds and brown sugar on top and bake for about 60 minutes. Turn off the oven and leave the cake inside for another 30 minutes, then open the oven a bit and let the cake in there 20-30 minutes more.
