Classic Fish and Chips image

Good tasting, simple recipe for New England's favorite dish fish and chips. Serve with malt vinegar, lemon, or tartar sauce.

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

4 cups frozen steak fries
4 salmon fillets (6 ounces each)
1 to 2 tablespoons prepared horseradish
1 tablespoon grated Parmesan cheese
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/2 cup panko bread crumbs
Cooking spray

Steps:

  • Preheat oven to 450°. Arrange steak fries in a single layer on a baking sheet. Bake on lowest oven rack 18-20 minutes or until light golden brown., Meanwhile, place salmon on a foil-lined baking sheet coated with cooking spray. In a small bowl, mix horseradish, cheese, Worcestershire sauce, mustard and salt; stir in panko. Press mixture onto fillets. Spritz tops with cooking spray., Bake salmon on middle oven rack 8-10 minutes or until fish just begins to flake easily with a fork. Serve with fries.

2 lbs flour
6 ounces flour
2 tablespoons baking soda
1 tablespoon salt
2 tablespoons paprika
4 ounces granulated sugar, by weight
2 thick salmon steaks
cooking oil (can use canola, or other)

Steps:

  • Preheat oil to 350 degrees.
  • Combine beer and water in mixing bowl.
  • Slowly incorporate other ingredients until smooth. Be sure to keep the batter as cool as possible.
  • When ready, cut salmon into individual thumb-sized pieces.
  • Coat fish pieces entirely in batter and let some excess drain.
  • Immerse in preheated 350 degree F oil until golden brown. Serve with caution, very hot!

Air Fryer Beer Battered Fish and Chips are a tasty twist on the classic dish from across the pond. White fish is fried and served with homemade fries.

12 ounces white fish
1/2 cup beer
2 cups all-purpose flour, divided
2 tablespoons cornstarch
1 teaspoon baking soda
1 egg, beaten
1 teaspoon salt
1 teaspoon pepper
1 teaspoon old bay
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2-3 large russet potatoes, peeled
1 Tablespoon olive oil
1 teaspoon salt
1/2 teaspoon pepper
Malt Vinegar
Tartar Sauce
Lemon Wedges

Steps:

  • Preheat the air fryer to 400 degrees.
  • Peel and then cut the potatoes lengthwise into thick slices that are about 1/2 inch thick. Pat them dry.
  • Place the potato slices into a large bowl and drizzle with the olive oil, salt, and pepper. Toss to combine.
  • Cook the potatoes in a single layer in the air fryer for 7-10 minutes, toss the fries and cook for an additional 5-7 minutes (or until the fries have reached your desired crispness). [Note: You will likely need to do multiple batches in order to cook all the fries. Do not overcrowd your air fryer or they will not get crispy.]
  • Cut the white fish into filets that are about 4 inches each.
  • In a medium bowl, combine 1 cup of the all-purpose flour with the cornstarch, baking soda, egg, and beer. You should have a thick batter.
  • In another bowl, combine the remaining flour with the salt, pepper, old bay, garlic powder, and onion powder.
  • Dip each filet of white fish first into the flour mixture so that they are all coated.
  • Then use tongs to dip each filet into the beer batter, gently shaking off any excess batter, and then into the flour mix again, making sure to evenly coat each side.
  • Finally, recoat the filet in the batter and place it on a piece of greased aluminum foil cut to fit your air fryer basket.
  • Cook the fish in a single layer in the air fryer for 5-7 minutes before flipping and cooking an additional 5-7 minutes, or until golden brown.
  • Depending on the size of your air fryer, you may need to cook the fish in two batches so that it can cook and brown evenly. Do not overcrowd your fryer.
  • Serve immediately.

This recipe for battered salmon and chips will soon be a family favourite. We've given the timeless dish a makeover, using fresh salmon.

150g plain flour
1tsp baking powder
1tsp sea salt
200ml beer or lager
750g Maris Piper potatoes, skin on, cut into batons
Sunflower oil for deep frying (about 1 litre)
4 salmon fillets, skin on

Steps:

  • Mix together the flour, baking powder and sea salt. Whisk in the beer or lager until you have a smooth thick batter. Place in the fridge until needed.
  • Bring a pan of water to the boil and cook the potato batons for 10 mins. Drain and leave to dry off.
  • In a saucepan or deep fat fryer, heat the oil. Drop in a little batter to test if it's ready. Fry the chips until golden and crispy, then remove using a slotted spoon if you don't have a frying basket. You may need to do this in batches.
  • Dip the salmon into the batter, ensuring it's all coated, and then place carefully into the hot oil. Fry until the batter is golden and cooked- the salmon should be cooked through too. You can test with a meat thermometer, but it doesn't matter if the salmon is a little translucent inside.
  • Serve with the salt and vinegar, a wedge of lemon and some garden peas, if liked.
