½ teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon pepper
½ teaspoon salt
1 lb chicken wing
1 mango
3 habanero peppers, optional, seeded or unseeded
2 cloves garlic
½ teaspoon paprika
¼ cup apple cider vinegar
2 tablespoons lime juice
¼ cup honey

Steps:

  • Preheat oven to 425ºF (220ºC).
  • In a small mixing bowl, combine flour, chili powder, garlic powder, pepper, and salt.
  • Pat the chicken wings dry using a paper towel.
  • Batter them in the flour mixture and place chicken wings on a wired baking sheet.
  • Bake at 425ºF (220ºC) for 45 minutes, flipping halfway for even cooking.
  • In a food processor or blender, mix together the mango, habanero peppers, garlic, paprika, apple cider vinegar, and lime juice. Blend until fully combined. The mixture should be a bright orange vibrant color.
  • In a saucepan, combine honey with your mango habanero mixture at medium heat. Stir occasionally to prevent sticking and simmer for 5-10 minutes or until your sauce reaches a prefered consistency.
  • Fully coat your cooked wings in the sauce then place on a parchment-lined baking sheet.

1/4 teaspoon garlic salt
1 1/2 cups cornstarch
3 eggs
3 tablespoons hot sauce
3 tablespoons water
cooking oil

Steps:

  • Cut wings at first joint and discard the tips.
  • Cut remaining wings in half.
  • Wash and dry on paper towels and sprinkle lightly with garlic salt.
  • Mix cornstarch, eggs, hot sauce and water, stirring to form a smooth batter.
  • Dip wings in batter and deep fry in 1 1/2" of oil heated to 350° for about 15 minutes, turning once or twice.
  • Serve with small bowl of mild, medium or hot wing sauce for dipping.

1 1/2 cups pitted and peeled mango
1 to 2 tablespoons water
1 cup pomegranate juice
1/4 cup tomato paste
2 teaspoons yellow mustard
1/2 cup brown sugar
1 teaspoon liquid smoke
1 1/2 teaspoons salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 cup water
1/4 cup apple cider vinegar
6 to 10 cups vegetable oil
2 dozen chicken drumettes
3 teaspoons salt
2 teaspoons black pepper
2 cups all-purpose flour
2 teaspoons paprika
2 eggs
1 cup evaporated milk

Steps:

  • Puree the mango flesh in a food processor or blender (water may be needed to puree). Transfer puree to a large saucepan, and add remaining ingredients for the barbecue sauce. Mix together until all ingredients are combined, and bring to a boil. Reduce heat to medium and simmer, covered, for about 30 to 45 minutes or until the sauce has thickened.
  • Heat oil to 350 degrees F in a large Dutch oven or electric fryer. Rinse the chicken drumettes and pat dry with paper towels. Season chicken with 1 teaspoon salt and 1 teaspoon pepper; Set aside.
  • In a shallow bowl or resealable bag, combine remaining salt and pepper with the flour and paprika. In a separate dish, mix together the eggs and evaporated milk until well combined. Roll the seasoned chicken pieces in the flour, a few at a time, until well coated. Then, dip chicken in the milk and egg mixture, followed by another coat of seasoned flour. Allow the chicken to sit in the flour and dry out for about 5 minutes, ensuring that the coating will stay on better. Carefully add the chicken pieces to the fryer as will fit without touching. Do not crowd the pan or the temperature will lower, making the chicken greasy. Fry for 5 minutes, then turn the pieces over and fry the other side 5 minutes. Cook for about 10 minutes total, or until the pieces begin to float. Remove chicken to a plate lined with paper towels to drain, about 5 minutes.
  • To serve, place the fried wings in a large bowl and toss with the barbecue sauce (or less, to taste). Refrigerate any leftover barbecue sauce.

1 onion, diced (about 1 cup)
1 red pepper, diced (about 1 cup)
3 cloves garlic, coarsely chopped
1 teaspoon salt
Freshly ground black pepper
1/2 teaspoon ground allspice
1/3 cup red wine vinegar
3 tablespoons molasses
2 tablespoons Worcestershire sauce
2 tablespoons lime juice
1/4 cup low-sodium tomato sauce
1 mango, diced (about 1 1/2 cups)
2 to 3 jalapenos, minced
2 boneless, skinless chicken breasts (about 3/4 pound each)

Steps:

  • Heat the oil in a medium-sized skillet over medium-high. Add the onions and cook until translucent, about 2 minutes. Add the red peppers, garlic, salt and pepper, and allspice and cook for 2 minutes more. Stir in the vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce and cook for 1 minute more. Transfer the mixture into a bender and add the mango and jalapeno. Blend until smooth.
  • Put 1 cup of the barbeque sauce into a resealable plastic bag with the chicken and marinate for 1 hour.
  • Preheat the broiler. Put the chicken on a broiler pan and discard the marinade. Broil the chicken on high for about 12 minutes, turning once. Let the meat rest for 10 minutes before slicing. Spoon about 1/2 cup of barbeque sauce over the meat slices and serve.

Make sure to use a non stick pan or cover pan with foil, when baking these delicious and spicy wings, otherwise you'll have a very sticky mess. I have added a recipe for making your own pomegranate molasses, as it may be difficult for some people to find. The molasses is very versatile and can be used in many different dishes. If refrigerated, this quick and easy to make molasses will keep for 6 months.If you would like a sweeter molasses add more sugar to taste, when you first start cooking it. Preparation time includes making the molasses.

4 cups pomegranate juice (I use Poms)
1/2 cup sugar, white (or to taste)
1 lemon, large, juiced
1/8 teaspoon coriander seed
2 green cardamom seeds, whole
3 allspice, whole, small
1/2 teaspoon red pepper flakes (use more or less as desired)
1/2 tablespoon lemon zest, finely grated
1 rosemary sprig, small, chopped
1/2 teaspoon salt
1/4 teaspoon pepper, black freshly ground
24 chicken wings (cut off wing tips if desired)
2 teaspoons sesame oil
4 garlic, cloves, minced
1 teaspoon minced ginger
1/2 tablespoon lemon zest, grated fine
1/2 teaspoon red pepper flakes (use more or less as desired)
2/3 cup molasses, pomegranate (you may use more or less as desired)
2 green onions, thinly sliced (garnish)

Steps:

  • Pomegranate Molasses:.
  • Place all the ingredients in an uncovered saucepan and simmer over medium heat until the sugar has dissolved and the juice is simmering.
  • Reduce the heat just enough to maintain the simmer. It will take 1 ½ hours for the liquid to reduce by half and thicken, stir occasionally during this process to prevent burning.
  • When ready you should have 1 to 1 1/4 cups of syrup. Allow the syrup to cool completely, then pour into a clean jar and store in the refrigerator.
  • Rub:.
  • Place a small cast iron pan over medium heat and when hot add the coriander seeds, the un-husked cardamom seeds and the allspice nuts, toast for 1 minute. Shake pan often to keep the seeds from burning.
  • Remove pan from heat and husk the cardamom, place coriander and cardamom seeds and allspice nuts into a mortar and pestle and grind to a fine powder. Set powdered spices aside until needed.
  • In a large bowl mix the ground spices, add the1/2 tsp red pepper flakes, the ½ tbsp finely grated lemon zest, rosemary sprig, salt, black pepper and mix well.
  • With a paper towel dry the chicken wings, it will help the rub to adhere better and will also produce a crispier skin.
  • Add the dried chicken wings to a large bowl containing the rub mixture and coat well and let sit for one hour.
  • Preheat the oven to 375 degrees F and line a baking sheet with foil. Put a wire rack over the baking sheet and grease with cooking spray.
  • Put the wings on the rack and bake in the preheated oven for 45 minutes or until done to your preference. Flip the wings over, halfway through the cooking time and rotate the pan to ensure even baking.
  • Pomegranate Sauce:.
  • Using a small pan over medium heat warm the sesame oil, then add the garlic and ginger and lightly fry for 1 minute.
  • Next add the ½ tbsp lemon zest, ½ tsp red pepper flakes and the pomegranate molasses to the garlic mixture, stir and cook for 5 more minutes, adjusting salt if necessary.
  • Toss the wings in the sauce and put the remaining sauce in a small bowl for dipping.
  • When ready to serve, garnish with green onions and enjoy.

1 cup Juicy Juice® 100% juice, mango
2 tablespoons brown sugar
2 tablespoons smoked paprika
1 tablespoon kosher salt
1 tablespoon dried onion
1 teaspoon ground cumin
¼ cup tomato paste
1 tablespoon garlic, minced
3 tablespoons apple cider vinegar
3 lb chicken wings

Steps:

  • Preheat the grill to 400°F (200°C).
  • In a blender, combine the mango, Juicy Juice® 100% juice, mango, brown sugar, paprika, salt, dried onion, cumin, tomato paste, garlic, and apple cider vinegar. Blend until smooth.
  • Pour the mango BBQ sauce into a small saucepan and cook over medium-high heat, stirring frequently so the mixture doesn't burn, for 10 minutes or until darkened slightly. Divide the sauce between 2 small bowls.
  • Place the chicken wings on the grill and close the lid. Grill for 5 minutes or until grill marks appear, then flip the chicken, cover again, and grill for 5 minutes more on the other side.
  • Using one bowl of mango BBQ sauce to avoid cross-contamination, brush the exposed side of the chicken with the mango BBQ sauce. Flip again and cook, uncovered, for 5 minutes, making sure the chicken doesn't burn. Brush the other side of the chicken, flip, and cook for another 5 minutes. Brush the remaining sauce over the wings, cover, and cook for another 5 minutes, or until an instant-read thermometer registers at least 165°F (75°C) when inserted into the thickest part of the chicken.
  • Serve the wings with the remaining bowl of mango BBQ sauce for dipping.
