½ head green cabbage, finely shredded
½ medium red onion, small diced
2 roma tomatoes, diced
¼ cup fresh cilantro, chopped
1 small jalapeño, diced
2 tablespoons lime juice
salt, to taste
1 cup all-purpose flour
1 tablespoon old bay seasoning
½ teaspoon baking powder
1 cup lager beer
vegetable oil, for frying
1 lb fresh cod, cut into 1-inch (2-cm) thick strips
2 medium avocados
1 cup sour cream
¼ cup lime juice
salt, to taste
corn tortilla, warmed
radish, thinly sliced, for serving, optional

Steps:

  • Make the cabbage slaw: Combine the cabbage, onion, tomato, cilantro, jalapeño, lime juice, and salt in a large bowl. Toss well, then set aside.
  • Make the crispy fish: In a large bowl, combine the flour, Old Bay, and baking powder. Add the beer and whisk until smooth. Let sit for 15 minutes.
  • Heat the vegetable oil in a large pot until it reaches 350°F (180°C).
  • Coat the fish in the batter, then transfer to the oil and fry until golden on the outside and cooked through, 5-7 minutes. Drain the fish on a wire rack set over a baking sheet lined with paper towels.
  • Make the avocado crema: Add the avocados, sour cream, lime juice, and salt to a blender and blend until smooth.
  • To assemble the tacos, add a bit of the cabbage slaw to a warmed tortilla. Top with a piece of fried fish, avocado crema, and sliced radish.

These beer battered fish tacos are the best crispy fish tacos around! The easy-to-make batter creates a crunchy coating around tasty, tender white fish which is served on warm corn tortillas with a simple slaw and a smoky chipotle sauce. They're irresistible!

¼ cup EACH: mayo and plain yogurt
2 tablespoons minced chipotle peppers in adobo sauce (see note #1)
1 tablespoon lime juice
1 clove garlic (finely minced)
A pinch of salt and pepper
2 cups shredded cabbage
½ cup chopped cilantro
¼ cup thinly sliced red onion
2 tablespoons EACH: oil and lime juice
½ teaspoon EACH: salt and pepper
Oil (for frying (see note #2))
1 ½ cups all-purpose flour (divided)
2 teaspoons EACH: garlic powder and onion powder
1 teaspoon EACH: baking soda, salt, and pepper
1 ½ lb. white fish
1 ½ cups light beer (ice-cold (see note #3))
18 corn tortillas

Steps:

  • Mix the chipotle sauce ingredients together in a small bowl.
  • Mix the slaw ingredients together in a medium-sized bowl.
  • Pour 2-inches of oil into a large, high-sided skillet or medium-sized pot and begin heating it over medium heat. If you have an oil thermometer, attach it to the pot.
  • Mix ½ cup of the flour, garlic powder, and onion powder in a shallow bowl.
  • In a large bowl, mix the remaining 1 cup of flour, baking soda, salt, and pepper.
  • Cut the fish into small pieces no more than 1" wide. Dry them well with paper towels then add them to the shallow bowl and toss them with the flour.
  • When the oil reaches 350 degrees Fahrenheit (see note #4) it's time to fry the fish. Pour the beer into the large bowl of flour and briefly mix it for 4-5 seconds. Dip a piece of fish into the batter and let the excess drip back into the bowl. Carefully put it into the hot oil. Repeat with 5-6 more pieces, making sure not to crowd the pan. Let the fish cook for 3-4 minutes, or until the batter is golden all around and the fish is cooked through.
  • Using tongs, remove the fish from the oil and place it on a cooling rack set up over a baking sheet. Repeat with the remaining fish until all the pieces are cooked.
  • Warm the tortillas (see note #5) then serve them piled with slaw, chipotle sauce, and crispy fish.

4 cups cabbage slaw mix
1 tablespoon chopped fresh jalapeno pepper
1 tablespoon lime juice
1 tablespoon olive oil
1 tablespoon apple cider vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
¼ cup all-purpose flour
¼ cup yellow cornmeal
2 tablespoons taco seasoning mix
1 pound cod fillets, cut into bite-sized pieces
8 (6 inch) corn tortillas

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C). Spray the basket of the air fryer with cooking spray.
  • Combine cabbage slaw, jalapeno pepper, lime juice, olive oil, vinegar, salt, pepper, and cayenne pepper in a large bowl. Mix until evenly combined and set aside.
  • Mix together flour, cornmeal, and taco seasoning in a separate bowl. Add fish pieces and toss until evenly coated, discarding any remaining seasoning mix. Place in the prepared air fryer basket and mist lightly with cooking spray.
  • Cook fish in the preheated air fryer for 5 minutes. Shake the basket, and cook until fish is crispy and flakes easily with a fork, about 5 minutes more. Remove to a paper towel-lined plate.
  • Place cabbage slaw mixture into the air fryer basket.
  • Cook until cabbage is caramelized, about 8 minutes, stirring halfway through the cooking time.
  • Spoon cabbage onto tortillas and top with fish.

1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup dark Mexican beer*
1/3 cup mayonnaise
2/3 cup Mexican crema** or sour cream
1 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 tablespoons water
Salt and freshly ground black pepper
Oil, for frying
1 cup all-purpose flour
1 teaspoon salt, plus more for seasoning
2 pounds skinned halibut cut into 5 by 1/2-inch strips
Freshly ground black pepper
Corn tortillas
2 cups shredded cabbage
2 cups tomatillo salsa (store-bought or homemade) for garnish, optional
Pickled jalapenos, for garnish, optional

Steps:

  • For the Beer Batter:
  • Mix the flour, salt and pepper in a medium bowl. Gradually add in the beer while whisking. Set aside and let the batter rest for 15 minutes before using.
  • For Cream Sauce:
  • Add the mayonnaise and crema to a medium bowl. Whisk in the lemon zest, lemon juice and water. Season, to taste, with salt and pepper (can be made 3 days ahead, covered and refrigerated).
  • For the Fish:
  • In a large skillet, over medium heat, add enough oil to reach a depth of 1-inch. Heat the oil until a deep-fry thermometer registers 350 degrees F or when the end of a wooden spoon sizzles when inserted into the oil.
  • On a large plate, combine the flour and salt. Season the fish pieces all over with salt and pepper and coat with the flour. Working in batches, dip the fillets in the beer batter and coat on both sides. Fry in the hot oil until golden brown and cooked through, about 5 minutes. Transfer to paper towels to drain.
  • Make tacos with the tortillas and fish and top each with cream, shredded cabbage, tomatillo salsa and pickled jalapenos, if desired.
  • *Cook's Note: Crack open a cold Mexican cerveza like a Negra Modelo or a 2 Equis (XX) Amber to make this tasty beer batter, which will change the way you think about fried fish! You can use it for vegetables, too.
  • **Cook's Note: Mexican Crema is Mexico's version of creme fraiche and is found at many supermarkets and can easily be substituted with sour cream.

The fish is fresh and inviting and the ingredients are just perfect. I'm still a novice in Mexican cuisine, but I am hoping that I did this recipe some justice!

FISH TACO INGREDIENTS
12-16 medium yellow, blue or white corn tortillas
1 large egg
1/4 c whole milk
1/4 c water
1/2 c all purpose flour
1/2 tsp baking powder
2 lb haddock filets, cut into 4 x 1 x 1/4
4 c canola or vegetable oil
1/2 medium limes, juiced, plus for serving
1/2 pinch ground cumin
1 c fresh chopped cilantro, for garnish
1 medium lime, sliced in rings, for garnish
1/2 c shredded mexican or feta cheese, for topping
CITRUS VINAIGRETTE
3/4 c orange juice
1/4 c lime juice
1 c fresh basil leaves, chopped
1 c cilantro, fresh
1 tsp kosher salt
1/4 tsp fresh ground black pepper
1 Tbsp honey (heaping)
1/2 c canola or vegetable oil
CABBAGE SLAW
1/4 c rice vinegar
1 Tbsp sugar
2 Tbsp olive oil, extra virgin
1/4 head green cabbage, finely shredded
1 large carrot, sliced julienne
1/4 c fresh cilantro, chopped
pinch salt and freshly ground black pepper
AVOCADO-MANGO SALSA
2 medium ripe, haas avocados, peeled, pitted and diced
1/2 small red onion, finrey chopped
1 medium ripe mango, peeled, pitted and diced
2 medium roma tomatoes, diced
1 to 2 medium limes, juiced
2 Tbsp olive oil, extra virgin
1 to 2 Tbsp honey
3 Tbsp fresh cilantro, chopped
pinch salt and fresh ground black pepper

Steps:

  • 1. CITRUS VINAIGRETTE: Combine all ingredients in a blender and blend for approximately 1 minute. Set aside.
  • 2. CABBAGE SLAW: Combine all ingredients in a bowl. Season with salt and pepper to taste. Set aside.
  • 3. AVOCADO-MANGO SALSA: Gently combine all ingredients in a bowl. Season with salt and pepper to taste. Set aside.
  • 4. BATTER FRIED HADDOCK AND TORTILLAS: Preheat the oven to 350 degrees F.
  • 5. Wrap the tortillas in aluminum foil and place in the oven until soft and pliant, about 12 minutes. Remove and keep wrapped until ready to use.
  • 6. In a large pot or deep fryer, heat the oil to 350 degrees F over high heat.
  • 7. In a large bowl, beat the egg with the milk and water. Add the flour, and baking powder, and whisk to make a thin batter. Dip the fish in the batter, turning to coat, and shake to remove any excess. Fry in batches in the oil until golden and crisp, about 1 1/2 to 2 minutes. Remove, drain on paper towels.
  • 8. To serve, place 1 or 2 pieces of the fish inside each tortilla and top with some of the shredded cabbage, avocado-mango salsa and drizzle citrus vinaigrette. Squeeze with lime juice, and top with salsa to taste. Garnish with cilantro and serve immediately. Yield: serves 8 NOTE: I used blue and yellow corn tortillas for this recipe and made it colorful and I was in a mood. But you can make it your own using whatever you like! Be creative!

2 pounds haddock fillets
2 tablespoons chili powder
2 tablespoons ground black pepper
1 (12 ounce) package flour tortillas
1 (6 ounce) container guacamole
1 (8 ounce) carton sour cream
1 head lettuce, shredded
2 cups shredded Cheddar cheese
1 (8 ounce) jar pico de gallo or fresh salsa

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of the glass baking pan with a thin coat of olive or canola oil.
  • Slice fish into 4- to 6-inch long pieces. Place in the prepared pan. Sprinkle with chili powder and black pepper.
  • Bake in the preheated oven until fish is cooked through and slightly browned on the outside, about 30 minutes.
  • While the fish is cooking, slightly brown the tortillas in a lightly greased frying pan.
  • Once the fish is done, take a tortilla and put one or two pieces of fish in the middle. Spread about 2 teaspoons of guacamole and a thin layer of sour cream on the fish. Cover with shredded lettuce, garnish with Cheddar cheese, and top with pico de gallo. Serve.
