BUTTER FRAGRANCED FROG LEGS

This is a very popular dish in most Asian seafood restaurants. The crispy breaded frog legs blend very well with the melted garlic butter sauce. I serve mine on a platter garnished with lettuce leaves, sliced tomatoes, and lime wedges. Enjoy!

1 pound frog legs, rinsed and patted dry
2 teaspoons white sugar
2 teaspoons garlic salt
½ teaspoon black pepper
Oil for deep frying
1 egg, beaten
¾ cup cornstarch or tapioca starch
2 tablespoons butter
2 teaspoons garlic, minced
Salt to taste
¼ cup soy sauce
1 tablespoon lime juice
2 teaspoons chili paste or sauce
1 teaspoon white sugar
1 teaspoon minced garlic
½ teaspoon sesame oil

Steps:

  • Place the frog legs into a bowl and sprinkle with a mixture of 2 teaspoons sugar, garlic salt, and black pepper. Toss until evenly coated, then set aside to marinate for 30 minutes.
  • Heat at least 2 inches of oil in a large, heavy pot to 350 degrees F (175 degrees C).
  • Mix the frog legs in the beaten egg to coat, then drain off excess. Toss in cornstarch, and shake off excess. Fry in hot oil until golden brown and cooked through; 4 to 5 minutes. Turn once to insure they cook evenly.
  • While the frog legs are cooking, melt butter in a small skillet over medium heat; stir in 2 teaspoons of minced garlic. Cook gently for about 3 minutes until the garlic softens, season with salt to taste.
  • When the frog legs have finished cooking, drain well on paper towels, then place onto a serving dish. Pour garlic-butter sauce overtop; serve with dipping sauce.
  • To make the dipping sauce, stir together the soy sauce, lime juice, chili paste, 1 teaspoon of sugar, and 1 teaspoon of minced garlic in a small bowl. Season to taste with sesame oil if desired.

5 -6 tablespoons butter

Steps:

  • Soak frog legs in milk for 1 hour, turning every 15 minutes.
  • Remove from milk and salt and pepper them lightly, and coat them in flour.
  • In a skillet bring the butter to a sizzle and add frog legs.
  • Sauté legs uncovered until they're golden brown on both sides (turning as needed).

24 frog's legs, skin removed
1 (4 ounce) packet saltine crackers, crushed
1 cup all-purpose flour
½ cup cornmeal
1 teaspoon minced onion
2 teaspoons salt
1 tablespoon ground black pepper
2 eggs
½ cup milk
2 cups vegetable oil for frying
1 cup peanut oil for frying

Steps:

  • Rinse the frog's legs and pat dry; set aside. In a large resealable bag, combine the saltine cracker crumbs, flour, cornmeal, onion, salt and pepper. Shake to mix. In a shallow bowl, whisk together eggs and milk.
  • Heat the vegetable oil and peanut oil in a large skillet over medium-high heat. The oil should be about 1/2 inch deep.
  • Dip the frog's legs into the milk and egg, then dip into the cracker mixture until evenly coated. Carefully place them in the hot oil. Cook until golden brown on each side, about 5 minutes per side. If the legs start to brown too quickly, reduce the heat to medium. Drain on paper towels before serving.

2 to 2 1/2 pounds small frog legs
1/3 cup lemon juice
1 tray of crushed ice
2 cups vegetable oil or shortening (for deep frying)
1/3 cup milk
2 eggs, separated
2 teaspoons vegetable oil
Dash of salt and freshly ground black pepper
Optional: dash cayenne pepper
2 cups all-purpose flour
1 teaspoon garlic powder

Steps:

  • Wash frog legs thoroughly. Place in a large bowl; sprinkle with lemon juice, and cover with crushed ice. Refrigerate the frog's legs for 30 minutes to 1 hour.
  • Heat the oven to 200 F or warm setting.
  • In a deep saucepan or skillet or deep fryer, heat about 2 inches of vegetable oil or melted shortening to 375 F.
  • Line a large rimmed baking pan with paper towels.
  • In a medium bowl, whisk together milk, egg yolks, and 2 teaspoons oil.
  • Beat the egg whites until stiff; fold into milk and egg yolk mixture.
  • In another bowl, combine the flour and garlic powder; blend well.
  • Sprinkle the frog legs with salt and freshly ground black pepper, and a little cayenne pepper, if using; dip each frog's leg in milk-egg mixture, then dredge in the flour and garlic powder mixture to coat thoroughly.
  • Working in batches, fry the coated frog legs in the hot fat until golden brown, about 2 minutes. With a slotted spoon, transfer to the paper towel-lined pan to drain. Put them in the preheated oven to keep warm while frying subsequent batches.

2 cups buttermilk (or milk)
1 teaspoon Old Bay Seasoning ((for milk mixture))
1 teaspoon Garlic Powder ((for milk mixture))
2 cups yellow cornmeal
1 cup all-purpose flour
2 tablespoons Old Bay Seasoning

Steps:

  • Place the frog legs into a large bowl, add the milk or the buttermilk to the bowl. Then add the Old Bay Seasoning and Garlic Powder. Cover and place into the refrigerator for about an hour.
  • In another bowl, mix the cornmeal, flour, and another 1 teaspoon of Old Bay Seasoning. Mix well.
  • As you remove the frog legs from the milk/buttermilk marinate, let the milk drip off, and then place the frog legs into the cornmeal batter, repeat with the milk marinade and again in the cornmeal mixture.
  • As you double coat them, place them into a greased air fryer basket, sprayed with cooking spray. Set the temperature to 400 degrees F, air fryer setting for 5 minutes, flip and air fry for another 3-5 minutes. Until fully cooked.
  • If you really want them to crisp up, I would suggest spraying them generously with cooking spray.
  • Plate, serve, and enjoy!

8 frog's legs
1 teaspoon active dry yeast
1 cup lukewarm water
1 cup all-purpose flour
1/2 teaspoon salt, to taste
1/2 teaspoon white pepper, to taste
1/2 cup vegetable oil or 1/2 cup shortening, for frying

Steps:

  • In a small bowl, dissolve the yeast in the lukewarm water and allow to stand for 3 or 4 minutes.
  • Add the flour, salt and pepper and beat until thoroughly blended.
  • Let the batter stand at room temperature for about 1 1/2 hours.
  • Wash the frog legs well in cold water, then use a sharp knife to peel the skin from the legs (it should strip off easily, like a glove).
  • Place the skinned legs in a medium saucepan, pour enough boiling water into the pan to cover the legs, then drain at once and pat dry with paper towels.
  • In a large, heavy skillet, heat the shortening or oil over medium high heat until hot but not smoking.
  • Dip the frog legs in the batter, turning to coat well, and fry until golden bown and cooked through, about 4 to 6 minutes.
  • Drain on paper towels and serve immediately.
