Steps:
- In a skillet, heat the olive oil over medium heat.
- Add the garlic, and fry it, stirring with a wooden spoon, for 2 to 3 minutes, until it is golden.
- Take care the garlic does not burn.
- Add the bread, and turn it several times so that it absorbs the oil.
- Sprinkle it with the paprika, and toss well.
- Add the water or broth, and cook for 10 to 15 minutes, stirring, until the soup is heated through and well blended and the bread has absorbed much of the liquid.
- Season to taste with salt and, if you like, the pepper flakes.
- Just before serving the soup, crack the eggs, and slide them onto the surface of the soup, taking care not to break the yolks.
- Let the eggs cook for 1 to 2 minutes, until they are set.
- Serve the soup by spooning it gently into shallow bowls, allowing 1 egg per serving.

- In Dutch oven, slowly bring chicken and water to a boil; skim foam. Reduce heat; cover and simmer for 45-60 minutes or until tender. Remove chicken; set aside until cool enough to handle., Strain broth and skim fat. Return broth to Dutch oven. Add the leeks, carrots, turnip, onion, potato, garlic, salt, pepper, parsley and thyme. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Meanwhile, remove chicken from bones; discard bones and skin. Cut chicken into bite-size pieces; add to the Dutch oven. Add the sausage, beans and cabbage. Simmer, uncovered, for 30 minutes or until vegetables are tender. Stir in tomato sauce; heat through.

- Preheat oven to 450°F. Place baguette on a baking sheet, and toast in preheated oven until very browned and almost burnt, 20 to 25 minutes. Remove from oven, and let cool. Break or slice bread into 2-inch pieces.
- Heat 7 tablespoons oil in a large pot over medium-high. Add bread pieces, and reduce heat to medium. Cook, turning often to allow bread to toast and soak up oil, until golden brown, about 2 minutes. Remove bread, and set aside. Wipe pot clean.
- Add garlic and remaining 1 tablespoon oil to pot. Cook over medium-high, stirring constantly, until garlic is golden brown, 30 seconds to 1 minute. Stir in paprika. Add broth and salt; bring to a boil.
- Add bread to pot. Reduce heat to medium-low, and maintain a simmer. Add vinegar. Cook, stirring occasionally to break up bread, until flavors meld, about 25 minutes. Taste and add more salt, if needed.

- Preheat the oven to 400 degrees. In a small glass baking dish, place 30 unpeeled cloves of garlic. Drizzle over with 2 tablespoons olive oil and salt and pepper to taste, mixing to ensure that the garlic is evenly coated. Cover the dish with aluminum foil and roast the garlic for approximately 30 minutes, until it is soft and golden-hued.
- While the garlic is roasting, peel and mince the remaining 10 cloves of garlic. Heat the remaining two tablespoons of olive oil in a medium saucepan; once hot, add the garlic and onion and sauté over medium heat for around 5 minutes, until the onion is soft and translucent and the garlic is fragrant (but not browned). Remove the saucepan from the heat.
- Once the garlic has finished roasting, remove from the oven and let cool for 10 minutes. Gently unpeel the cloves and set aside (the peels should come off very easily). Discard the garlic peels.
- In a crock pot, add the sautéed garlic and onion mixture, the roasted garlic, and all of the remaining ingredients, except for the eggs, and adding more salt and pepper to taste at this stage. Stir to ensure the ingredients are evenly combined. Cook in the crockpot on low heat for 6-8 hours, stirring very occasionally if possible, until the potatoes are falling apart. Break up any remaining large potato pieces with a wooden spoon or a fork.
