Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • When rice is cooked, stir in peas and cumin. Cover and let stand for 5 minutes.

Growing up, I remember my dad making these for me every time we had leftover rice in the fridge. I generally make these for breakfast but occasionally enjoy them for dinner when my husband is out of town and I want to make something quick and easy. This recipe is a great base. Have fun changing it up and making it your own! Great topped with salsa!

1 tablespoon unsalted butter or olive oil
1 yellow onion, chopped
1 cup long grain basmati rice
1 3/4 cups water
1 1/2 teaspoons kosher salt
1/4 cup sliced scallions
1 tablespoon minced fresh parsley

Steps:

  • Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter. Add the water and salt, cover and cook until the water is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and allow to sit covered for 5 to 10 minutes. Add the scallions and parsley, fluff with a fork, and serve.

1 mug of basmati rice, (300g)
4 cloves of garlic
1 fresh red chilli
4 cm piece of ginger
1 bunch of spring onions
olive oil
2 tablespoons mango chutney
320 g raw peeled king prawns, from sustainable sources
150 g natural yoghurt

Steps:

  • Put 1 mug of rice and 2 mugs of boiling kettle water (600ml) into a medium nonstick pan with a pinch of sea salt. Boil for 10 minutes, then reduce to a low heat for 5 minutes, after which you'll be able to turn it out as a rice cake.
  • Meanwhile, peel the garlic and finely slice with the chilli. Peel and matchstick the ginger. Trim the spring onions and slice into 2cm lengths. Put it all into a large non-stick frying pan on a high heat with 1 tablespoon of olive oil, and stir-fry for 3 minutes, then stir in the mango chutney. Carefully pour half the mixture into a blender, returning the pan to the heat and adding the prawns to stir-fry. Add ½ a mug of water (150ml) to the blender, blitz until smooth, then pour straight back into the prawn pan. Let it bubble and thicken slightly for 3 minutes, then, off the heat, ripple through the yoghurt. Serve the curry on top of your fluffy rice cake.

1 1/2 cup basmati rice
2 tbsp vegetable oil
8 oz chicken livers (trimmed)
1 lb bulk pork sausage
1 onion (finely chopped)
1 green bell pepper (diced)
1 red bell pepper (diced)
1 tbsp minced garlic
1 tbsp chopped jalapeno chile
1/4 cup worchestershire sauce
2 bay leaves
1 tbsp chopped fresh thyme
2 tsp freshly ground black pepper
1 tsp kosher salt
1/2 tsp paprika
pinch of cayenne pepper
4 green onions (white and green parts, chopped)

Steps:

  • In a large bowl, cover the rice with 2 to 3 inches of cold water. Stir the rice with your hand and drain. Repeat five or six times, until the water runs clear.
  • Transfer the washed rice to a medium heavy bottomed pot. Add enough fresh cold water to cover the rice by about 1 inch. Bring to a boil, reduce to a simmer, cover and cook until the rice is tender, about 20 minutes. Do not overcook.
  • In a large saute pan, heat the oil over medium high heat until shimmering. Add the livers and sausage and cook, stirring occasionally and breaking up the sausage with the back of a spoon, until the meat is no longer pink, 7 to 8 minutes.
  • With a slotted spoon, transfer the livers and sausage to a small bowl. Add the onion, green and red bell peppers, garlic and jalapeno to the pan, and cook over medium high heat until the vegetables are soft, Stirring occasionally until 10 minutes.
  • Meanwhile chop the chicken livers into small dice. Return them to a saute pan, along with the sausage, worcestershire sauce, and the cooked rice. Stir until the rice is fully incorporated. Stir in the bay leaves, thyme, black pepper, salt, paprika, cayenne and green onions. Partially cover the pan, reduce the heat to low and cook until the flavors are well blended, about 15 minutes. S Remove bay leaves, discard and serve immediately.

Steps:

  • Add the rice and cold water to a medium-sized pot over high heat. Bring the pot to a boil then immediately cover the pot and reduce the heat to low.
  • Simmer the rice (no peeking!) for 12 minutes.
  • Remove the rice from the heat and let it rest, covered, for 10 minutes.
  • Use a fork or spoon to gently fluff the rice before serving.

2/3 cup basmati rice
250 g smoked chicken breasts, diced
2/3 cup sun-dried tomato, roughly chopped
1 1/3 cups mozzarella cheese, grated
3 green onions, thinly sliced
1/4 cup fresh basil, shredded
3 eggs, lightly beaten
salt, to taste
pepper, to taste

Steps:

  • Preheat oven to 200°C Grease a 6 X 3/4 cup texas muffin pan. Line holes with baking paper.
  • Cook rice, your prefered method will be fine, or follow instructions on packet. Set aside to cool.
  • Place rice, smoked chicken, semi-dried tomatoes, 1 Cup cheese, onions, basil and eggs. Add salt and pepper if desired.
  • Mix well to combine all ingredients.
  • Spoon mixture into muffin pan. Sprinkle remaining cheese over the top.
  • Bake for 15 to 20 minutes or until cakes are firm to the touch, and light golden in colour.
  • Remove from oven and let stand for 5 minutes. Run a flat edged knife around cakes to losen.
  • Turn onto a wire rack to cool.

  • Place the rice in medium bowl and add enough water to cover by 2 inches. Using your hands, gently swish the grains to release any excess starch. Carefully pour off the water, leaving the rice in the bowl. Repeat four times, or until the water runs almost clear. Using a fine mesh strainer, drain the rice.
  • In a medium pot, bring the water, butter, salt, and rice to a boil. Cover the pot with a tight fitting lid, then turn the heat down to a simmer and cook for 15 to 20 minutes, until all of the water is absorbed and the rice is tender. If the rice is still too firm, add a few more tablespoons of water and continue cooking for a few minutes more. Remove the pan from the heat and allow it to sit covered for 5 minutes. Fluff the rice with a fork and serve.
