BASMATI RICE - INDIAN STYLE
Great authentic basmati rice to be served with chicken tikka masala or chicken tandoori. Don't be intimidated by the spice mix, they blend very well. If you like indian food, you'll appreciate this dish.

Steps:
- Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes. DO NOT skip this step, its very important.
- Heat the oil in a large pot or saucepan over medium heat.
- Add the cinnamon stick, cardamom pods, cloves, and cumin seed.
- Cook and stir for about a minute, then add the onion to the pot.
- Saute the onion until a rich golden brown, about 10 minutes.
- Drain the water from the rice, and stir into the pot.
- Cook and stir the rice for a few minutes, until lightly toasted.
- Add salt and water to the pot, and bring to a boil.
- Cover, and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed.
- Let stand for 5 minutes, then fluff with a fork before serving.
- Remove the pods, cloves, cinnamon stick before serving.

BASMATI RICE
Steps:
- Cook the butter and onions over medium heat until translucent, about 3 minutes. Add the rice and toss until all of the grains are coated with the butter. Add the water and salt, cover and cook until the water is absorbed and the rice is tender, about 15 to 20 minutes. Turn off the heat and allow to sit covered for 5 to 10 minutes. Add the scallions and parsley, fluff with a fork, and serve.

- Rinse rice in several changes of cold water until water runs clear. Drain well in a fine-mesh sieve. Melt butter in a 4-quart heavy pot over moderate heat, then add rice and cook, stirring, 2 minutes. Stir in water and salt and bring to a boil over high heat. - In a wide pan with a lid (like this one, this one, or this one), melt butter over medium-high heat. Add onion and cook, stirring occasionally, until translucent and just starting to brown, about five minutes. While onion cooks, rinse rice in a fine-mesh sieve until the water runs clear and shake out any excess water.
- Add garlic to pan and cook, stirring, until very fragrant, about a minute. Add rice and stir to coat with butter, then cook, stirring once or twice, for two minutes. Pour in stock and give it all a good stir. Bring to a boil over high heat. Then cover pan, lower heat to maintain a gentle simmer, and cook until broth is absorbed, 15 to 20 minutes.
- Off the heat, place a clean kitchen towel between the pan and the lid to absorb excess steam and let pilaf rest for 5 to 10 minutes. Sprinkle with chives and almonds if using and serve.

MEDITERRANEAN BASMATI RICE

- Rinse the rice with water a few times to remove the surface starch from the rice grains.
- Pour 1 tbsp of olive oil into a medium pan and heat on medium. Chop 1/2 of an onion and sauté the onions for 3-5 minutes until they start to appear transparent.
- Add 3 cloves of minced garlic, 1 tsp turmeric, 1 tsp cumin, 1 tsp salt, 1/2 tsp cinnamon and 1/4 tsp black pepper. Mix until well combined.
- Add two cups of rinsed basmati rice and stir until it is well mixed. All of the rice should be yellow.
- Add 3 cups of chicken broth to the rice.
- Bring the rice to a boil and then lower the temperature to a simmer and cook with the lid on for 15-20 minutes until all of the liquid is absorbed.
- Top with dried fruit, almonds and fresh herbs. Fluff the rice with a fork before serving.

- In a large bowl, soak the rice in 4 cups water for for 25-30 minutes. Drain the rice and reserve the soaking water.
- In a large sauté pan over medium heat, melt 2 tablespoons of butter. Add the shallots and cook until soft, 3-5 minutes. Add the drained rice to the sauté pan and cook and stir until the rice crackles, about 2 minutes.
- Add the reserved cooking water, along with the salt and pepper, and stir gently to combine. Bring to a simmer, then turn the heat to low and simmer, uncovered, for 12-15 minutes, or until rice is tender. Do not stir.
- Remove the pan from the heat and spoon the rice into a large bowl.
