NEW POTATOES WITH BASIL CREAM SAUCE
This is sooo tasty! Great way to use summers yield of fresh basil. I know I have trouble coming up with ways to use it other than the obvious and this recipe is a good way to do so. You can also just use sliced regular potatoes. This recipe originally came from a southern living cookbook

Steps:
- Cook potatoes in boiling salted water to cover until they can be easily pierced with a fork.
- Drain, cover and put aside to keep warm while you make the sauce.
- Combine wine and shallots in a large saucepan; bring to a boil and cook for one minute.
- Add whipping cream; return to a boil; reduce heat and simmer 20 minutes, stirring frequently.
- Stir in basil, salt and pepper; spoon sauce over potatoes and serve immediately.

Steps:
- Wash the potatoes, place in large kettle, cover with water.
- Bring to a slow boil and then simmer until potatoes are fork tender.
- Cool completely.
- After potatoes are cold, quarter them.
- Place the margarine or clarified butter and minced garlic in a large fry pan.
- Heat until margarine is melted.
- Add the cold potato quarters and heat over medium burner, tossing to cover with margarine.
- Heat through, stirring gently but frequently.
- Do not brown.
- Toss with shredded basil.
- Serve hot.

LEMON AND GARLIC NEW POTATOES
This is a simplified version of a new potato dish my Costa Rican host sister used to make when I was in the Peace Corps. It has become a favorite side dish at my house.

- Scrub potatoes and cut into wedges. Place in a large saucepan and cover with water; bring to a boil. Cover and cook until tender, 10 to 15 minutes. Drain and set potatoes aside.
- Heat olive oil in the same pan over medium-high heat. Add potatoes and cook until browned, 4 to 6 minutes. Add garlic; cook for 1 minutes. Remove from the heat.
- Stir in Parmesan cheese, lemon juice, salt, and pepper.

- Preheat oven to 375 degrees F.
- Fill a large pot with salted water and bring to a boil; add potatoes and garlic and bring back to a boil.
- Reduce heat and cook for 10 minutes; drain well.
- Arrange the potatoes and garlic on a baking pan and toss with the olive oil (have the potatoes cut side down so they brown nicely).
- Sprinkle with the thyme, salt, and pepper.

- Pierce potatoes in several places with fork. Melt butter in heavy large skillet over medium heat. Add potatoes and season with salt and pepper. Cover and cook until potatoes are almost tender, shaking skillet occasionally, about 25 minutes. Add 2 tablespoons basil, shallots and garlic. Reduce heat to medium-low; cover and cook until potatoes are golden brown and very tender, shaking skillet occasionally, about 10 minutes longer. Season with additional salt and pepper. Steps:
- Scrub the potatoes well.
- Pare a 3/4" strip around the middle of each potato (this is just to give you a little contrast in color).
- Place potatoes in a saucepan, cover with water and bring to a boil.
- Simmer covered for about 20 minutes or until tender.
- Drain potatoes and place them in a bowl add two teaspoons of oil& toss.
- In a non stick frypan add the remaining oil over medium heat.
- Add garlic,cook approximately 1 minute.
- Add parsley, salt& pepper, mix well.
- Add potatoes, reduce heat to low and cook stirring constantly for 1 or 2 minutes.
- Serve.
GARLIC BUTTER NEW POTATOES
I love this recipe. It is so simple, and yet, so delicious. I serve these potatoes with my Tarragon Cream Chicken. However, they are a delicious accompaniment to any meal. I took this recipe from Southern Living. It can be found in their Ultimate Quick and Easy cookbook. I generally do make a couple of changes- I add 1/4-1/2 tsp. salt to the garlic butter. I also often add minced fresh dill when I have it. Enjoy!

- Add potato to salted water in a large saucepan. Cook, covered, 10 minutes or until tender. Drain. (Do NOT overcook the potatoes- they will be mushy!).
- Meanwhile, melt the butter in a small skillet over medium-high heat.
- Add garlic and salt (optional). Cook, stirring constantly, for 3 minutes or until garlic is tender.
- Add parsley, pepper, and dill (optional). Pour over potatoes, tossing gently to coat.
