BASIL PESTO GOAT CHEESE BALL



Basil Pesto Goat Cheese Ball image

A light, fresh cheese ball recipe that can be made well in advance to serve a crowd at your next party.

8 oz goat cheese
4 oz cream cheese
1/3 cup basil pesto
1 cup pine nuts (toasted if you feel like it, untoasted if you don't.)
plastic wrap

Steps:

  • Mix the cheese and pesto in a bowl until well combined.
  • Scrape the contents of the bowl onto a sheet of plastic wrap, gather into a rough ball and twist at the top to seal.
  • Freeze for one hour, or put in the fridge for about four hours ( or until the cheese ball firms up ).
  • Place the pine nuts in a bowl. Drop the cheese ball directly from the plastic wrap into the bowl and discard the plastic wrap. Roll the cheese in the pine nuts until the entire ball is covered in nuts.
  • Serve with crackers or a sliced baguette and a few sprigs of fresh basil.

This easy pesto recipe is even more flavorful (& economical) with the addition of walnuts instead of pine nuts and creamy, tangy goat cheese. The perfect sauce, spread, or dip for any of your favorite foods.

2 cups fresh basil, packed
1/2 cup extra virgin olive oil
1/2 cup walnuts
2 ounces goat cheese, crumbled
1/4 cup parmesan cheese, grated
3 cloves garlic
1/4 tsp. salt, more to taste
1/8 tsp. pepper

Steps:

  • In a food processor or high speed blender, add basil leaves, walnuts, and olive oil. Pulse until walnuts are broken into small pieces.
  • Add cheeses, garlic, and spices and continue to pulse until pesto is somewhat smooth but still has a bit of texture. Scrape down the sides of the food processor or blender periodically.
  • Use as a dip, pasta sauce, or spread on any of your favorite foods.
  • Store in the fridge for up to 10 days, or in the freezer up to 6 months.

This recipe comes from a neighbor. Haven't tried it yet but it sounds great for a holiday party. Off to buy some pesto and some whole wheat crackers! =)

2 (8 ounce) packages cream cheese, softened
1/4 cup prepared pesto sauce
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
3/4 cup pine nuts, lightly toasted
cracker, for serving
fresh basil leaf (to garnish)

Steps:

  • Mix together pesto, and two cheeses.
  • Place mixture on a sheet of plastic wrap and form into a ball Chill for 3+hours.
  • Remove plastic wrap from the cheese ball and place in plate Press the pine nuts firmly over the outside of the ball and refrigerate.
  • Bring to room temperature one hour before serving.
