How to make pesto with fresh oregano and walnut.

Ingredients

2 cups fresh oregano leaves
2 cloves garlic
¾ cup olive oil
½ cup grated Parmesan
½ tsp salt
¼ cup lightly toasted walnuts Note 1

Steps:

Carefully wash the oregano and pat dry.
Place all ingredients in a food processor bowl.
Pulse until they are well combined and the desired consistency.
Store in the refrigerator for up to two weeks (or freeze in small batches for later use).

2 cups packed fresh Genovese basil leaves
1 - 2 Tablespoons chopped fresh oregano leaves
1 cup freshly grated Parmesan
1/4 cup olive oil
3 - 4 garlic cloves
2 1/2 Tablespoons pine nuts
Juice from 1/2 lime or lemon
Salt
Freshly cracked black pepper

Steps:

In a blender or food processor, blend all ingredients until a paste is formed, stopping to scrape down the sides occasionally.
Season to taste with salt and pepper.
Keep up to one week in the refrigerator, covering with a thin layer of olive oil. Pour the oil from the pesto before using.
Pesto may also be frozen up to 4 months.

1 cup fresh spinach leaves
½ cup chopped fresh oregano

1 pinch salt and freshly ground black pepper to taste
¾ cup olive oil

Steps:

Blend the garlic, basil, parsley, spinach, oregano, pine nuts, Parmesan cheese, salt, pepper, and olive oil in a blender or food processor until smooth.
