1/2 cup sugar
4 tablespoons unsalted butter, at room temperature
2 eggs
1 tablespoon orange zest
1/2 teaspoon dried basil
1 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup sliced almonds, toasted

Steps:

  • Preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Combine the sugar and butter in the bowl of a standing mixer fitted with a paddle. Cream the mixture until pale and fluffy. Add the eggs, one at a time, making sure to mix well before each addition. Add the orange zest and basil and blend on low speed, about 30 seconds.
  • Combine the flour, baking powder and salt in a separate bowl. Add the flour mixture to the standing mixer and beat until combined. Fold in the almonds.
  • Transfer the dough to a lightly floured surface. Divide the dough in half. Using floured hands, shape the dough into logs. Brush off the excess flour. Place the logs on the baking sheet, spaced 5 inches apart.
  • Flatten each log into a 2-inch-wide strip. Bake the logs, rotating the baking sheet halfway through, until browned and set, about 30 minutes. Transfer the logs to a cooling rack and cool, about 15 minutes.
  • Reduce the oven to 300 degrees F.
  • Transfer the logs to a work surface. Cut each log diagonally into 1/3-inch-thick slices using a serrated knife. Arrange the slices, cut-side down, on the baking sheet. Bake the slices, rotating the baking sheet halfway through, until crisp, about 20 minutes. Transfer the slices to the cooling racks and let cool.
  • The biscotti can be made 3 days ahead and stored in an airtight container at room temperature.

1 1/2 cups granulated sugar
1 1/2 cups vegetable shortening
2 large eggs
1 cup milk
5 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2/3 cup orange juice
3 tablespoons grated orange rind
1 teaspoon vanilla extract
1/4 cup dried basil
2 cups powdered sugar
1 tablespoon butter, melted
2 -3 tablespoons milk
1 pinch salt
1/2 teaspoon orange extract
chopped pistachio nut, for garnish

Steps:

  • Preheat oven to 350*.
  • in a large mixing bowl, cream the granulated sugar and the shortening for 3 minutes.
  • add the eggs and continue beting until blended.
  • add the milk, mixing thoroughly.
  • sift together the flour, baking soda, and salt.
  • add to the mixture.
  • add the juice, rind and vanilla.
  • then stir in the basil by hand.
  • drop by heaping tspfuls onto greased cookie sheet, approximately 2" apart.
  • bake for 10-12 minutes or until the top springs back when touched with your finger.
  • remove to wire rack to cool.
  • to make the frosting, combine all the ingredients except the pistachio nuts in a mixing bowl.and beat until smooth --
  • the frosting should be rather thick, add more sugar as needed.
  • spread a generous smear of frosting on each cookie and sprinkle on some pistachio nuts.
  • pack the cookies in tins or plastic containers, using wax paper to serperate layers -- .

225 g honey (16 ounces)
150 g sugar (10.5 ounces)
3/4 tablespoon cinnamon
1 pinch clove powder
1/4 teaspoon nutmeg
50 g ground candied orange peel
50 g ground candied lemon peel
100 g ground almonds
1 lemon, zest of, grind
50 ml kirsch (0.2 cup)
300 g flour
3/4 teaspoon baking powder
75 g confectioners' sugar
1 1/2-2 1/2 tablespoons kirsch or 1 1/2-2 1/2 tablespoons water

Steps:

  • Put honey, sugar, cinnamon, clove powder and nut meg in a pan, heat up slowly, then remove from stove.
  • Add candied orange peel, candied lemon peel, almonds and grind skin of lemon, stir until mixed evenly.
  • Add kirsch, flour and baking powder, knead on a table to form a soft dough.
  • While the dough is still warm, roll it out on the back of a greased baking sheet approximately 5 mm (0.2 inches) thick.
  • Let it rest for about 5 to 6 hours or over night in a dry place.
  • Bake for about 15 to 20 minutes in the center of the pre-heated oven at 430°F(220°C).
  • Mix confectioner's sugar and kirsch or water, frost dough immediately.
  • Cut off stale edges.
  • Cut dough in small pieces (5 x 3 cm, 2 x 1.5 inches), take them off the baking sheets and let them cool.

⅔ cup shortening
¾ cup white sugar
1 egg
½ cup orange juice
1 teaspoon orange zest
2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 cups confectioners' sugar
2 tablespoons butter
2 tablespoons orange juice
1 teaspoon orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Mix together flour, baking powder, baking soda and salt. Stir 1/2 cup orange juice and 1 teaspoon rind into the flour mixture.
  • Cream shortening and white sugar together. Mix egg into the sugar mixture thoroughly. Slowly blend flour mixture into the egg and sugar mixture. Drop by teaspoonful onto greased cookie sheet.
  • Bake for 8 to 10 minutes.
  • Make the icing: Mix confectioner's sugar and 2 tablespoons butter together until smooth. Pour 2 tablespoons orange juice and 1 teaspoon orange rind into the sugar and butter mixture, mix well. When the cookies have cooled spread the icing generously over the tops of the cookies.
