3 tablespoons Worcestershire sauce
1 ½ tablespoons dried basil, or to taste
¼ teaspoon garlic salt
¼ teaspoon ground black pepper
4 hamburger buns, split

Steps:

  • Preheat an outdoor grill for high heat.
  • In a bowl, mix the ground beef, Worcestershire sauce, basil, garlic salt, and pepper. Form the mixture into 4 burger patties.
  • Lightly oil the grill grate, and cook burgers about 6 minutes, turning once, to an internal temperature of 160 degrees F (70 degrees C), or to desired doneness. Serve on hamburger buns.

1 1/4 pounds ground beef (80-percent lean)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
1/4 cup shredded mozzarella
4 English muffins, halved horizontally and toasted
1 tomato, sliced and lightly salted
Perfect Basil Sauce, recipe follows
2 tablespoons grated Parmesan
1 green onion, chopped
3 tablespoons roughly chopped fresh basil
1 large clove garlic, minced
1/2 cup prepared mayonnaise
3 tablespoons sour cream
1/2 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper

Steps:

  • Quarter the beef into even portions. Form into burgers, indenting the middle slightly with your thumb. Season with salt and pepper, and brush lightly with vegetable oil. Cook on a hot grill until charred on the outside and pink on the inside, about 4 minutes per side. Two minutes before removing the burgers, top the burgers with the mozzarella cheese.
  • Place the toasted muffins on a serving platter. Place the tomato slices on the bottom, and top each with cooked patties. Spread a tablespoon or two of the basil sauce on each bun top and sprinkle with a little Parmesan cheese. Serve extra basil sauce on the side for dipping.
  • Blend the green onion, basil, garlic, mayonnaise, sour cream, and Worcestershire sauce in a blender until creamy and pale green. Taste the sauce and season with salt and pepper, if needed.

1 red onion
400 g buffalo or beef mince
80 g buffalo mozzarella
2 tablespoons balsamic vinegar
2 slices of mortadella
2 brioche buns
1 large ripe tomato
2 handfuls of rocket
MAYO
1 large free-range egg
125 ml olive oil
125 ml vegetable oil
1 lemon
1 bunch of fresh basil, (30g)

Steps:

  • Preheat the oven to 180°C/350°F/gas 4 or get your barbecue nice and hot!
  • Wrap the red onion in kitchen foil and cook in the oven, or directly in the coals, for 2 hours until soft.
  • When your onions have 30 minutes cooking time left, make your mayo: separate and whisk the egg yolk until fluffy, then gradually whisk in both the oils - a tiny bit at a time - until thick and emulsified (loosen with a little squeeze of lemon if it gets too thick).
  • Season to perfection with a pinch of sea salt and a little more lemon juice. Pick the basil leaves into a pestle and mortar, bash until they make a paste and stir through the mayo.
  • Season the mince to perfection and mix together well. Divide into 4 even-sized pieces and shape into flat patties. Cut the mozzarella in half and place on top of 2 of the patties. Place the remaining 2 patties on top and seal the edges firmly with your fingertips, so the mozzarella is encased inside, then gently shape into a neat burger.
  • When the onions are cool enough to handle, peel off the skin and mash with a fork, discarding the root. Drizzle over the balsamic vinegar, season to perfection and mix well.
  • Get your BBQ or grill nice and hot. Add the burgers and cook for 8 to 10 minutes, turning regularly.
  • Crisp up the mortadella on the grill bars, and shape into a circle with your tongs. Slice the buns and toast on the BBQ. Thickly slice the tomato.
  • Spoon 1 tablespoon of the basil mayo over the bottom of the bun, add a slice of tomato, then a slice of mortadella and then some rocket. Top with the burger and a dollop of sticky balsamic onions. Pop the lid on and tuck in!

1/2 cup purchased roasted red pepper, strips
1 tablespoon finely chopped pitted olive
2 teaspoons olive oil
1/2 teaspoon dried thyme
1/4 teaspoon black pepper

Steps:

  • To make relish: add the relish ingredients to the container of a food processor; cover and pulse until coarsely chopped; cover and chill for 2-3 hours.
  • To make burgers: stir together the onion, bread crumbs, and bell pepper in a mixing bowl.
  • Add the ketchup, horseradish, mustard, salt and pepper to taste; stir to mix.
  • Add the ground beef; stir to mix.
  • Shape mixture into 4 patties.
  • Grill patties over medium heat for 7 minutes; turn and grill 7-11 more minutes or until done.
  • Top patties with a slice of cheese during the last 2 minutes or grilling time.
  • Serve patties on toasted whole wheat buns with red sweet pepper relish and fresh basil leaves.

400g lean mince beef
2 handfuls of fresh picked basil leaves
4 spring onions, white parts only, finely chopped
Salt and freshly ground pepper to season
2 burger buns
2 slices firm mozzarella cheese

Steps:

  • Chop ¾ of the basil and all the spring onions then, in a bowl, combine with the mince. Season with salt and pepper.
  • Flatten out into 2.5cm-3.5cm thick burger patties.
  • Add a little oil to a frying pan and cook the burgers to the way you like them (medium-rare takes about 4 mins each side; 6 mins per side for well done).
  • Toward the end of cooking, place a slice of mozzarella on top of each burger and allow to melt a little.
  • Place on lightly toasted burger buns garnish and with more basil leaves.

Think Italian-seasoned beef patties stuffed with melty mozz, then topped with griddled tomato slices and a creamy basil sauce. Everything is tucked into toasty garlic butter buns (read: garlic bread) and served with a heap of crispy Parmesan potato wedges on the side. Buon appetito!

1 unit Roma Tomato
1 teaspoon Garlic Powder
2 tablespoon Sour Cream
½ cup Mozzarella Cheese
2 unit Brioche Buns

2 tablespoon Mayonnaise
10 ounce Ground Beef
¼ cup Parmesan Cheese
8 teaspoon Olive Oil

  • • Adjust racks to top and middle positions and preheat oven to 450 degrees. Wash and dry all produce. • Slice potatoes into ¼-inch-thick rounds (no need to peel); toss on a baking sheet with 2 TBSP olive oil, half the Italian Seasoning (you'll use the rest later), and a few big pinches of salt and pepper. Arrange in a single overlapping layer. • Roast on top rack for 18-20 minutes. Remove from oven (they'll finish cooking in step 6). • 4 SERVINGS: Use 4 TBSP olive oil.
  • • Meanwhile, slice tomato into ½-inchthick rounds. Pick basil leaves from stems; mince leaves. • Place 1 TBSP butter and half the garlic powder (use the rest as you like) in a small bowl; microwave until butter is softened, 10-20 seconds. Season with salt and pepper and stir to combine. • 4 SERVINGS: Use 2 TBSP butter and all the garlic powder.

  • • In a medium bowl, combine beef*, remaining Italian Seasoning, and remaining basil; season generously with salt and pepper. Form mixture into two ½-inch-thick patties. • Divide mozzarella between the centers of each patty. Gently fold meat around mozzarella, shaping and sealing to create cheese-stuffed patties. • 4 SERVINGS: Form beef mixture into four patties.
  • • Season tomato with salt and pepper. Heat a drizzle of olive oil in a large, preferably nonstick, pan over mediumhigh heat. Add tomato and cook until lightly browned, 1-2 minutes per side. Transfer to a plate. • Add another drizzle of olive oil to same pan; add patties and cook to desired doneness, 3-5 minutes per side.
  • • Sprinkle roasted potatoes with Parmesan. Return to oven until cheese is melted and slightly crispy, 5-7 minutes more. • Meanwhile, halve buns; spread cut sides with garlic butter. Place on a second baking sheet and toast on middle rack until lightly browned, 3-5 minutes. • Spread top buns with basil sauce; fill buns with patties and griddled tomato. Serve with potatoes and any remaining basil sauce on the side.
