SWEET BASIL RUB FOR CHICKEN



Sweet Basil Rub for Chicken image

This recipe came from my sister in law--the best baked chicken I have ever eaten! You can use a whole chicken or a cut up chicken.

1 tablespoon salt
2 teaspoons sugar
1/4 teaspoon garlic
1/4 teaspoon onion
1/4 teaspoon paprika
1/2 teaspoon lemon juice
1/2 teaspoon pepper
1 tablespoon basil
2 tablespoons extra virgin olive oil

Steps:

  • add all ingredients together in bowl; mix well.
  • Cover chicken with rub.
  • Bake at 350°F uncovered for about 1-2 hours.

I used to be La Madeleine's DFW catering chef, and the production kitchen cooked all the rotisserie chicken, and I did really like the rub they used. This is an approximation of their rub, with a few ingredients of my own thrown in. This is enough rub for one roasting chicken.

1 tablespoon lemon pepper seasoning
1 teaspoon lemon, zest of
1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 teaspoons dry mixed Italian herbs, including basil, oregano, rosemary and thyme
1 teaspoon dried parsley

Steps:

  • Mix the rub ingredients together in a bowl.
  • Massage the rub into the chicken and cook until done.

A perfectly baked salmon topped with a mouthwatering crust and served with asparagus. The crispiness and the lemony flavors of the crust are delicious. If desired, you can squeeze some fresh lemon juice on top of the asparagus. This recipe was made in a Panasonic CIO.

¼ cup olive oil, divided
1 ⅓ pounds salmon fillet
salt and ground black pepper to taste
1 pound fresh asparagus, trimmed
2 cloves garlic
⅓ cup grated Parmesan cheese
⅓ cup chopped fresh basil
1 tablespoon lemon juice
1 tablespoon fresh lemon thyme
1 lemon, zested
½ teaspoon salt
½ teaspoon ground black pepper
1 cup fresh bread crumbs

Steps:

  • Rub 1/2 teaspoon olive oil over the salmon and season lightly with salt and pepper. Transfer salmon to the center of the grill pan.
  • Place asparagus in a bowl. Drizzle 1 1/2 teaspoon olive oil over asparagus; season with salt and pepper. Mix well and arrange around salmon.
  • Place garlic cloves in a food processor or blender; process until crushed. Add Parmesan cheese, basil, lemon juice, lemon thyme, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon black pepper; blend well. Add remaining 3 tablespoons oil and bread crumbs; pulse until well mixed.
  • Top salmon with herb mixture, forming a crust.
  • Set Panasonic Countertop Induction Oven to "Auto Cook". Select Fish with Vegetables setting. Place the grill pan in the oven and cook until salmon flakes easily with a fork and asparagus is tender, about 18 minutes.

This is a great dry rub for seasoning pork and chicken for the barbeque.

2 cups white sugar
½ cup kosher salt
1 tablespoon monosodium glutamate (MSG)
1 tablespoon ground oregano
1 tablespoon ground basil
3 tablespoons lemon pepper
2 teaspoons garlic powder
5 tablespoons onion powder
1 tablespoon paprika
1 tablespoon chili powder
2 teaspoons ground mustard
1 ½ teaspoons white pepper
1 ½ teaspoons cayenne pepper

Steps:

  • Stir together the sugar, salt, monosodium glutamate, oregano, basil, lemon pepper, garlic powder, onion powder, paprika, chili powder, mustard, white pepper, and cayenne pepper in a bowl until evenly combined. Store in an airtight container.
  • To use, apply generously (about 1 tablespoon per serving), and rub into chicken or pork. Allow to stand for 30 minutes prior to cooking.
