2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups low-fat milk
6 tablespoons vegetable oil
2 large eggs

Steps:

  • Add dry ingredients to mixing bowl and stir to mix well.
  • Add remaining ingredients and blend until smooth.
  • Let batter sit for 5 minutes before using.
  • Use less than you think on your 1st waffle, spreading batter with a non-stick spatula. Batter spreads and rises, so you don't want to overfill your waffle iron.
  • Cook until done--varies depending on temperature of your waffle iron.

  • Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, salt and sugar. In another bowl, beat together milk and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. Steps:

  • Preheat waffle iron according to manufacturer's directions.
  • In a medium bowl whisk together the flours, soda, baking powder, salt, and sugar. In another bowl beat together eggs and melted butter, and then add the buttermilk. Add the wet ingredients to the dry and stir until combined. Allow to rest for 5 minutes.
  • Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close iron top and cook until the waffle is golden on both sides and is easily removed from iron. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
